Objetivou-se avaliar as correlações entre contagem de células somáticas (CCS) e os constituintes do leite e verificar as associações das condições ambientais com a CCS. Os dados utilizados foram de 1.541 unidades produtoras de leite referentes a 15 municípios da bacia leiteira do Vale do Taquari, Rio Grande do Sul. Foram tabulados os dados de CCS, contagem bacteriana total (CBT) e composição centesimal do leite, referentes ao período de junho de 2008 a dezembro de 2011, totalizando 44.089 amostras analisadas. A temperatura ambiente apresentou correlação positiva e significativa com a CCS, enquanto a precipitação pluviométrica e a umidade relativa do ar, ausência de correlação. Os teores de gordura, proteína, minerais e sólidos totais foram diretamente correlacionados com a CCS, enquanto que os sólidos não gordurosos e a lactose apresentaram comportamento inverso. Através da análise de componentes principais (ACP), auxiliada pelo método hierárquico aglomerativo de agrupamento, os sete tratamentos presentes no estudo foram reduzidos a cinco grupos de acordo com a similaridade, permitindo constatar que amostras com CCS superiores a 400.000 até 750.000 céls mL-1, apresentam a mesma qualidade, não justificando a estratificação de intervalos nesta amplitude de variação.
RESUMO: Este trabalho tem por objetivo determinar a prevalência das doenças que causam a morte ou levam à eutanásia de gatos da região central do Rio Grande do Sul. Para isto, foram revisados os arquivos do Laboratório de Patologia Veterinária (LPV) da Universidade Federal de Santa Maria (UFSM) entre 1964 a 2013, e foram encontrados um total de 1.247 protocolos de necropsias de gatos. Em 878 protocolos (70,4%) a causa da morte e/ou razão para eutanásia foi estabelecida e em 369 casos (29,6%) não foi possível estabelecer uma causa definitiva. Os diagnósticos encontrados foram avaliados e distribuídos em diferentes categorias. Os grupos responsáveis pelo maior número de causas de morte ou razão para eutanásia em gatos foram os distúrbios causados por agentes físicos (15,6%), seguidos das doenças infecciosas e parasitárias (13,2%) e dos tumores (10,50%). Intoxicações e toxi-infecções (5,3%), doenças degenerativas (4,8%), distúrbios iatrogênicos (3,8%), doenças metabólicas e endocrinológicas (2,7%) foram categorias comuns. Doenças imunomediadas (2,1%), doenças nutricionais (1,6%), eutanásia por conveniência (1,4%) e distúrbios congênitos (1%) foram categorias incomuns. Outros distúrbios perfizeram 8,34% dos casos, As doenças mais importantes também foram avaliadas com relação à idade e os resultados obtidos demonstram que os adultos são mais acometidos pelo distúrbio do trato urinário inferior dos felinos, por traumas e por distúrbios iatrogênicos. Os gatos idosos são mais afetados por tumores e por doenças degenerativas, como a insuficiência renal crônica. Nos filhotes a principal doença que causa a morte ou eutanásia é a peritonite infecciosa feline.

Foram tabulados os dados de CBT, contagem de células somáticas (CCS) e composição centesimal do leite, referentes ao período de junho de 2008 a dezembro de 2011, totalizando 44.089 amostras analisadas. As variáveis climáticas (médias mensais da temperatura média, da umidade relativa do ar e precipitação pluviométrica) não apresentaram correlação significativa com a CBT. Os teores de gordura, proteína, minerais e sólidos totais foram diretamente correlacionados com a CBT, enquanto os sólidos não gordurosos e a lactose apresentaram comportamento inverso. Através da análise de componentes principais (ACP), auxiliada pelo método hierárquico aglomerativo de agrupamento, os sete tratamentos presentes no estudo foram reduzidos a quatro grupos de acordo com a similaridade. Assim, os leites com CBT superiores a 50.000 até 500.000 UFC mL -1 , e ainda de valores acima de 500.000 até 1.000.000 UFC mL -1 apresentam a mesma qualidade química e contagem de células somáticas, não justificando a estratificação de intervalos nesta amplitude de variação para avaliação do efeito da CBT nestes indicadores de qualidade.Palavras-chave: composição química do leite, mastite, qualidade higiênico-sanitária do leite, variáveis climáticas. AbstractThe study aims to evaluate the effect of total bacterial count (TBC) on the milk constituents and the influence of the environmental conditions has on the TBC. Data were obtained from 1,541 dairy farms located in 15 municipalities in the dairy region of Vale do Taquari, Rio Grande do Sul. It was tabulated the data from TBC, somatic cell count (SCC) and milk composition, from June 2008 to December 2011, totaling 44,089 samples. The climatic variables have no significant correlation to TBC. The fat, protein, minerals and total solids were directly correlated with the TBC. While solids-not-fat and lactose showed an opposite behavior. Through of the principal component analysis (PCA), followed by agglomerative hierarchical clustering method, the seven treatments in the present study were reduced to four groups according to similarity, showing that milk with TBC above 50,000 to 500,000 CFU mL -1 and 500,000 to 1,000,000 CFU mL -1 , have the same chemical quality and SCC, not justifying the stratification intervals in this range of variation for evaluating the milk quality.Keywords: chemical composition of milk, climatic variables, mastitis, milk hygienic-sanitary quality. Resumo -O objetivo deste trabalho foi avaliar o efeito da interação entre sistemas produtivos e estações do ano sobre a qualidade química e microbiológica do leite bovino, além de propor um índice de potencial nutracêutico do perfil de ácidos graxos do leite. Três propriedades foram avaliadas mensalmente, durante as diferentes estações do ano, em quatro graus de especialização dos sistemas de produção: altamente especializado, especializado, semiespecializado e não especializado. Os sistemas de produção e as estações do ano interferem de forma conjunta no perfil de ácidos graxos e, de forma isolada, na qualidade química e microbiológica do leite. As maiores contagens de células somáticas e os menores conteúdos de proteína foram observados no verão, e o grau de especialização das unidades produtivas esteve indiretamente relacionado à contagem bacteriana total no leite. No inverno, sistemas não especializados produziram leite com o melhor índice nutracêutico, que apresentaram os maiores teores de ácidos graxos poli-insaturados, ácido rumênico (CLA, 18:2n7-c9,t11) e ácido t10,c12-octadecadienoico (CLA, 18:2n6-t10,c12).Termos para indexação: ácido linoleico conjugado, alimentos funcionais, perfil de ácidos graxos, qualidade do leite bovino. Quality and nutraceutical potential of bovine milk in different production systems and seasonsAbstract -The objective of this work was to evaluate the effect of the interaction between production systems and seasons on the chemical and microbiological qualities of bovine milk, besides proposing a potential nutraceutical index of milk fatty acid profiles. Three farms were assessed monthly, along the different seasons, for four specialization levels of the production systems: highly specialized, specialized, partially specialized, and nonspecialized. The production systems and the seasons jointly interfere in fatty acid profiles, and singly interfere in the chemical and microbiological quality of milk. The highest somatic cell counts and the lowest protein contents were observed in the summer, and the specialization level of the production units had an inverse relationship with the total bacterial count. During winter, nonspecialized systems produced milk with the best nutraceutical index, with the highest contents of polyunsaturated fatty acids, rumenic acid (CLA, 18:2n7-c9,t11) and t10,c12-octadecadienoic acid (CLA,c12).
The use of brown rice grain as corn grain replacer in dairy cow diets was investigated. The following treatments were evaluated: zero, 33, 63, and 100%. The experimental diets were iso in protein, energy and fiber levels. Eight multiparus Jersey cows were used. A replicated Latin square experimental design was applied. The inclusion of brown rice had no effect (P > 0.05) on dry mater intake and their constituents, apparent digestibility, production and milk composition, feed efficiency and blood chemistry profile. Therefore, the brown rice grain can be used replacing corn grains alternative feedstuff in dairy cow diets.

AbstractThe objective of this work was to evaluate the effect of the interaction between production systems and seasons on physical-chemical and microbiological qualities of bovine milk. Three farms were assessed monthly, along the seasons, for four specialization levels of the production systems: highly specialized, specialized, partially specialized, and non-specialized. In terms of milk quality, the levels of fat, protein, total solids, somatic cell count, total bacterial count, titratable acidity in degrees Dornic, density, cryoscopic index, alizarol stability, potential of hydrogen (pH) and methylene blue reduction test. In addition, due to their importance for the industrial yield of protein-based dairy products, total milk protein fractionation was performed in protein equivalent of non-protein nitrogen, true protein and casein.The milk Dornic acidity was higher in spring and winter, while the highest somatic cell count values were in the summer. Total and true protein levels were lower during the summer and total solids increased in the autumn. With the decrease in the levels of specialization of farms, there was an increase in total bacterial count and decrease in non-protein nitrogen. The density presented an inverse behavior to that of the fat while the hydrogen potential (pH) was expressed in a way antagonistic to the acidity. In the multivariate analysis of the data it was possible to identify the combinations between production strata and stations that presented the best milk protein quality. In this sense, all the arrangements of production systems with autumn, winter highly specialized, summer partially specialized, spring specialized had positive protein quality, being highlighted by the smaller of somatic cells counts in the spring partially specialized combination.
ResumoObjetivou-se avaliar o perfil de ácidos graxos do iogurte produzido com diferentes culturas fermentadoras, seu comportamento durante o processo fermentativo e seu valor nutricional (índices aterogênico e trombogênico). Testaram-se três formulações de culturas fermentadoras: Padrão (Lactobacillus bulgaricus e Streptococcus thermophilus); Padrão + probiótico (Lactobacillus acidophilus e Bifidobacterium sp) e probiótico. Amostras do leite obtidas durante e após a fermentação, foram analisadas quanto ao perfil de ácidos graxos. A gordura foi extraída por Bligh e Dyer, a preparação dos ésteres metílicos por Hartman e Lago, a determinação e quantificação por cromatografia gasosa. As diferentes culturas fermentadoras não tiveram efeito sobre o perfil de ácidos graxos do iogurte produzido. O teor de ácido linoleico conjugado não diferiu entre os tratamentos. Observou-se uma variação nos teores de palmítico, palmitoléico e α-linolênico durante o processo fermentativo. Entretanto, a utilização de diferentes culturas não teve efeito na relação n6/n3 e nos índices aterogênico (IA) e trombogênico (IT) entre os tratamentos e desses com o leite.Palavras-chave: ácido linoleico conjugado, leite fermentado, funcional. AbstractThe objective was to evaluate the fatty acid profile of yogurt produced with different fermenting cultures, their behavior during the fermentation process and its nutritional value (atherogenic and trombogenic indexes). Tree formulations were tested fermenting cultures: Standard (Lactobacillus bulgaricus e Streptococcus thermophilus); Standard + probiotic (Lactobacillus acidophilus and Bifidobacterium sp) and probiotic. Samples of the milk obtained during and after fermentation were analyzed for their fatty acid profile. The fat was extracted by Bligh and Dyer, the preparation of the methyl esters and by Hartman and Lago, determination and quantification by gas chromatography. The different fermenting cultures had no effect on the fatty acid profile of the produced yogurt. The conjugated linoleic acid content did not differ between treatments. There was a variation in the levels palmitic, palmitoleic acid and α-linolenic during the fermentation process. However, the use of different cultures had no effect on the relationship n6/n3 and atherogenic index (IA) and thrombogenic (IT) between these treatments and with the milk.
