Os fatores antinutricionais presentes em alimentos podem provocar efeitos fisiológicos adversos ou diminuir a biodisponibilidade de nutrientes. A maior questão sobre os riscos à saúde provocados por antinutrientes é o desconhecimento dos níveis de tolerância, do grau de variação do risco individual e da influência de fatores ambientais sobre a capacidade de detoxificação do organismo humano. Dentre os fatores antinutricionais os inibidores de proteases e as lectinas são considerados instáveis ao tratamento térmico. A hipertrofia pancreática causada pelos inibidores de tripsina tem sido relatada em alguns estudos com animais. As alterações da função fisiológica em animais causadas por ação de lectinas no intestino parecem estar relacionadas à especificidade destas substâncias com as células da mucosa intestinal. Os possíveis efeitos adversos dos inibidores de proteases e das lectinas na maioria das vezes são inferidos somente de experimentos com animais de laboratório.
Demand for native fruits has been expanding, due to the increasing interest in foods with possible health benefits. The buriti (Mauritia flexuosa L. f.) is a native Brazilian fruit, appreciated by local populations, and its products are already on the market. This study investigated the physical characteristics and nutritional composition of buriti pulp, obtained from typical Cerrado and Amazon regions in Brazil. These regions influenced physical parameters and chemical composition. The fruits originating in the Cerrado were bigger and heavier than the ones from the Amazon. Nevertheless, protein, fatty acid and carbohydrate contents were higher in fruits from the Amazon region. The analyzed buriti fruits presented high monounsaturated fatty acid concentration (73.03 to 79.43 g/100 g), with the predominance of oleic acid (72.21 to 78.57 g/100 g). Buriti fruits may be a promising source of good nutritional quality vegetable oil and dietary fiber.Keywords: Mauritia flexuosa L. f.; nutritional value; fatty acids; minerals.Practical Application: This work showed that the region influenced the physical parameters and chemical composition of buriti grown in Amazon and Cerrado.
O baru (Dipteryx alata Vog.), fruto típico do Cerrado, é utilizado na produção de barras de cereais, biscoitos, licores e outros pratos típicos da gastronomia regional goiana. O presente estudo objetivou avaliar as características físicas, químicas e a aceitabilidade de paçocas elaboradas com amêndoas de baru. A paçoca controle foi processada com amendoim e as paçocas testes com proporções de amendoim e amêndoa de baru de 75:25, 50:50 e 25:75, respectivamente. As paçocas elaboradas foram submetidas a análises sensorial, física e da composição centesimal. A amêndoa de baru torrada apresentou maior teor de fibras e cinzas, quando comparada ao amendoim torrado. O aumento do percentual de amêndoa de baru nas paçocas reduziu o teor de lipídios, o valor energético total e a aceitação global e elevou a concentração de fibras. A massa, diâmetro e espessura das paçocas não se alteraram, com a substituição parcial de amendoim por amêndoa de baru. Paçocas com 25% de amêndoa de baru tiveram o melhor desempenho, com relação à aceitação global, e apresentaram a menor densidade energética e maior concentração de fibra alimentar total, em comparação à paçoca tradicionalmente elaborada com amendoim.
Baru (Dipteryx alata Vog.) is a native fruit of the Brazilian Savannah that can be used in the food industry and may contribute to the economy of the Brazilian Midwest. The proximate composition, the phenolic content and the antioxidant capacity of the peel, pulp and raw and roasted baru almond were examined and compared. Peel showed higher concentrations of dietary fibers (24.1 g/100 g) followed by pulp and roasted almond (18 g/100 g and 16 g/100 g, respectively), and raw almond (12.0 g/100 g). However, the almonds presented the highest lipid and protein concentrations compared to baru peel and pulp. On addition, raw almond showed the highest total phenolic contents (1,107.0 mg GAE/100 g) and antioxidant capacity, but the roasted almond, and baru peel with its pulp, also presented high phenolic contents. The correlation coefficients between phenolic content and antioxidant capacity (via ABTS and FRAP) were strong and significant. The chemical composition of baru peel has not previously been reported. The results showed promising prospects for the consumption of baru pulp with its peel, the fruit component richest in fiber, whose phenolic content and antioxidant capacity are comparable to those of the baru almond.
