To evaluate the effect of organic chromium (Cr) and selenium (Se) supplementation on performance and carcass characteristics of finishing pigs, 300 castrated males were distributed in a randomized block design with three treatments and five replications of 20 pigs each. Treatments consisted of different diets, formulated to reach or exceed Rostagno et al. (2011) nutritional requirements, as follows: 1) controlbasal diet without organic Cr and Se supplementation from 70 to 130 kg of body weight; 2) CrSe70 -basal diet supplemented with 0.8 mg kg -1 of Cr-and 0.6 mg kg -1 of Se-enriched yeast from 70 to 130 kg of body weight; 3) CrSe100 -basal diet without organic Cr and Se supplementation from 70 to 100 kg of body weight followed by basal diet supplemented with 0.8 mg kg -1 of Cr-and 0.6 mg kg -1 of Se-enriched yeast from 100 to 130 kg of body weight. Performance was evaluated by measuring body weight, daily weight gain, daily feed intake and feed conversion ratio. At the end of experimental period, pigs were sacrificed and lean meat percentage, longissimus dorsi muscle depth, back fat thickness, and carcass bonus index were determined using prediction equations generated by the software Hennessy System GP4 after carcass scanning with an electronic probe. Data were submitted to one-way ANOVA and in case of significant differences (P ≤ 0.05), means were compared by SNK multiple-range test. Daily feed intake (P = 0.008) and feed conversion ratio (P = 0.004) decreased for pigs supplemented with Cr-and Se-enriched yeast from 70 to 100 kg of body weight. Otherwise, pigs supplemented between 100 and 130 kg of body weight increased (P = 0.032) daily feed intake in comparison to the control group. Regarding carcass characteristics, Cr-and Se-enriched yeast supplementation increased (P = 0.019) longissimus dorsi muscle depth in both CrSe70 and CrSe100 treatments. In conclusion, dietary supplementation of Cr-and Se-enriched yeast for castrated male pigs between 70 and 130 kg of body weight increases longissimus dorsi muscle depth in carcass without affecting final body weight or daily weight gain of the animals. Foram utilizados 300 suínos machos castrados, distribuídos em um delineamento em blocos casualizados com três tratamentos e cinco repetições de 20 animais. RESUMO Conduziu-se este estudo com o objetivo de avaliar níveis de energia líquida na dieta de suínos machos castrados em terminação. Foram utilizados 100 suínos, com peso inicial de INTRODUÇÃOA alimentação é o fator de maior custo na produção suinícola e a energia é o componente nutricional responsável pela maior parte deste custo (NOBLET, 1996). O conteúdo energético das rações é um dos componentes nutricionais mais relevantes para o desempenho de suínos na fase de terminação. Portanto, é importante caracterizar o conteúdo energético das dietas e buscar a eficiência na nutrição de suínos, aliando ganhos biológicos e econômicos.Existem diferentes sistemas disponíveis para a caracterização da energia dietética, sendo os mais comuns a energia digestível e metabolizável (ROSTAGNO et al., 2007). Contudo são antigos e incompletos, já que descrevem parcialmente o aproveitamento da energia da dieta pelos suínos. Aliado a isso está o fato de que o constante melhoramento genético dos suínos leva ao aumento das exigências proteicas e energéticas dos animais. Com isso, tornase necessário reavaliar constantemente as exigências nutricionais e as necessidades energéticas dos suínos.A energia líquida tem sido proposta como um sistema mais completo e que descreve de forma mais precisa o conteúdo energético real da dieta, quando comparado aos sistemas de energia digestível e metabolizável (NOBLET & VAN MILGEN, 2004). A energia líquida permite uma estimativa mais acurada dos efeitos da dieta no desempenho dos suínos (MOEHN et al., 2005), pois considera as diferenças de metabolização dos nutrientes (NOBLET, 1996).
RESUMO:O Brasil é o quarto maior produtor e exportador mundial de carne suína. Entretanto, a ingestão per capita nacional é baixa quando comparada ao volume anual consumido em outros países. Levando-se em consideração os aspectos nutricionais positivos da ingestão dessa proteína em detrimento daquelas que são mais consumidas, bem como o destaque da eficiência brasileira em todos os elos dessa cadeia produtiva, interessou-se nesta revisão de literatura por identificar as diferentes motivações alegadas pelos consumidores quanto à sua inclusão ou rejeição na dieta. Considerando os aspectos simbólicos ligados à incorporação da "carne de porco", justificados nos artigos pesquisados, concluiu-se necessário que campanhas promocionais sejam pensadas com o objetivo de esclarecer a população quanto às atuais e modernas técnicas de produção, à qualidade nutricional da carne suína, à condição sanitária e à facilidade do seu preparo. Faz-se importante que o comensal perceba a carne suína de modo diferente. Tal percepção será resultado da informação fornecida ao consumidor por meio dos rótulos e campanhas publicitárias. This study evaluated the effects that gradual ractopamine supplementation in diets with nutritional adjustments on pig meat. Were used 80 finishing crossbred barrows in a randomized block design with a 2×5 factorial arrangement (two diets: with and without nutritional adjustment; five levels of ractopamine supplementation: 5-5, 10-10, 20-20, 5-10 and 10-20 ppm) in the 14 initial and 14 final study days, four replicates with two animals by experimental unit. Higher shear force values (P<0.05) were obtained using the 5-5 and 10-20 ppm ractopamine supplementation plans in the diets without nutritional adjustment. With nutritionally adjusted diets, the 5-10 ppm of ractopamine supplementation plan yielded higher shear force values (P<0.05). Water retention capacity was higher (P<0.05) for animals fed adjusted diets and 5-5 and 10-20 ppm of ractopamine plans. In the 10-20 ppm of ractopamine supplementation plan, meat pH was higher (P<0.05) for diets without nutritional adjustment, whereas in the 20-20 ppm of supplementation plan, pH was higher for adjusted diets.
Ractopamina em dietas sem ajustes aminoacídicos para suínos machos castrados em terminação 1 Este estudo teve o objetivo de avaliar planos de suplementação com ractopamina, em dietas sem ajustes aminoacídicos, para suínos machos castrados, em terminação. Foram utilizados 72 suínos machos castrados, com peso inicial de 68,61 ± 3,89 kg, distribuídos em seis planos de suplementação com duração de 30 dias (0 ppm; 5 ppm; 10 ppm; 20 ppm; 5 ppm, durante 15 dias, seguidos por 10 ppm durante 15 dias; e 10 ppm durante 15 dias seguidos por 20 ppm durante 15 dias), com seis repetições e dois animais por unidade experimental. A suplementação com ractopamina melhorou a conversão alimentar. A suplementação com 5 ppm de ractopamina aumentou o ganho de peso diário. Os níveis de 10 e 20 ppm e as suplementações graduais reduziram o consumo de ração diário e de nutrientes. Não houve influência da suplementação sobre o peso de carcaça quente e o comprimento de carcaça. A ractopamina reduziu a espessura de toucinho e aumentou a profundidade de músculo, o percentual de carne magra, a quantidade de carne magra e o índice de bonificação das carcaças. A suplementação de 5 ppm de ractopamina em dietas sem ajustes aminoacídicos melhora o desempenho e as características de carcaça de suínos em terminação, nos 30 dias pré-abate. This study was conducted to evaluate the effect of ractopamine concentrations on swine fat and meat lipid profiles. Ninety finishing barrows, initially weighing 71.9±4.4kg, were distributed in a randomized block design in three ractopamine concentrations (0, 10 and 20ppm) with fifteen replicates of two animals in each. Gas chromatography was used to analyze the lipid profiles of backfat and meat. The inclusion of ractopamine in the diet changed (P<0.05) α-linolenic acid and eicosatrienoic acid concentrations in the backfat but did not affect (P>0.05) any of the other fatty acids or indexes evaluated. In the meat, a significant effect (P<0.05) was observed on nine fatty acids evaluated, with a decrease (P<0.05) in lauric, myristic, and palmitic fatty acids, and an increase (P<0.05) in linoleic, γ-linolenic, dihomo-γ-linolenic, and eicosapentaenoic acid. Ractopamine also affected (P<0.05) the concentration of α-linolenic and arachidonic acid in the meat (P<0.05). The indexes evaluated were also affected (P<0.05). Addition of 10ppm decreased the saturated fatty acid concentration, atherogenic index, thrombogenic index and omega 6: omega 3, while it increased unsaturated and polyunsaturated fatty acids concentrations. Ractopamine addition had less effect on the backfat than on the meat, and the 10ppm level improved the meat lipid profile.
