treatments and twelve repetitions, with the objective to evaluate the behavior, physiological responses and the performance of the animals. The average temperatures of the experimental period were 21.5°C and 31.3°C, respectively, in thermal comfort and heat stress. Swine under heat stress remain significantly little time in the position in foot, more time in the lying position, little time in the feeder, more time in the water through, more time in the lying position in the water through and more time sleeping in relation to those kept in thermal comfort. Swine under heat stress had presented energy, protein, lysine and ration intake, weight gain and feed: gain ratio reduced and had presented minor weight of organs, except of the stomach, and had presented increased respiratory frequency and rectal and surface temperatures. Swine under thermal comfort had presented greater efficiency of use of the protein and energy and greater daily protein and fat depositions in the carcass. Temperatures that provoke heat stress affects negatively the behavior of growing swine. As temperaturas médias do período experimental foram 21,5°C e 31,3°C, respectivamente, nos ambientes de conforto térmico e de estresse por calor. Suínos sob estresse por calor permaneceram significativamente menos tempo na posição em pé, mais tempo na posição deitado, menos tempo no comedouro, mais tempo no bebedouro, mais tempo na posição deitado no bebedouro e mais tempo dormindo em relação àqueles mantidos sob conforto térmico. Suínos sob estresse por calor apresentaram consumos de energia, proteína, lisina e ração, ganho de peso e conversão alimentar reduzidos e apresentaram menores pesos de órgãos, exceto do estômago, e freqüência respiratória e temperaturas retal e de superfície aumentadas. Suínos sob conforto tér-mico apresentaram maior eficiência de utilização da proteína e energia e maiores deposições diárias de proteína e gordura na carcaça. O objetivo do trabalho foi avaliar o desempenho e as características quantitativas de carcaça de suínos machos castrados, mantidos em ambiente de conforto térmico e alimentados com dietas contendo diferentes níveis de ractopamina. Foram utilizados 48 animais, com peso médio inicial de 67,0±2,7kg, distribuídos em delineamento de blocos ao acaso composto por quatro níveis de ractopamina (0, 5, 10 e 20ppm) e seis repetições, com dois animais cada. O período experimental teve duração de 28 dias. A temperatura do ar obtida foi de 20,9±2,9°C, a umidade relativa foi de 86,7±7,3%, e o Índice de Temperatura de Globo e Umidade foi de 69,6±4,0. O peso final dos animais e o consumo de ração não foram influenciados (P>0,05) pelos tratamentos. Os níveis de ractopamina influenciaram (P<0,05) o ganho de peso diário e a conversão alimentar dos suínos. Observou-se redução linear (P<0,05) da espessura de toucinho e aumento da profundidade de músculo e da porcentagem de carne magra na carcaça de acordo com o aumento dos níveis de ractopamina na dieta. O peso e o rendimento de carcaça quente e a área de olho de lombo não foram influenciados (P>0,05) pelos tratamentos. Concluiu-se que o nível ótimo de inclusão de ractopamina na dieta de suínos machos castrados e mantidos em ambiente termoneutro é de 20ppm.
RESUMO: Objetivou-se identificar os padrões de consumo da carne bovina comparada ao consumo de carnes de frango, suíno, pescado e ovina. Os dados foram coletados por meio de questionários, junto à população da cidade de Campo Grande, MS, Brasil. Foram incluídos fatores sociais, educacionais, econômicos e específicos do consumo da carne bovina em relação à ordem de consumo, atributos da carne e preferência para o consumo. A pesquisa foi realizada com 429 consumidores, abordados na entrada de supermercados. Notou-se relevante preocupação dos consumidores com atributos relacionados à higiene, cor, aroma e maciez. Quanto ao teor nutricional, 41,03% dos consumidores acreditam que a carne bovina é a mais nutritiva dentre as carnes. A frequência do consumo de carne pelos indivíduos mostrou que 45,92% tem o hábito de consumir carne bovina diariamente. Em ordem de consumo, a carne bovina foi escolhida como primeira opção com 80,65% das respostas, seguida de frango, suíno, pescado e ovina. Quando desconsiderado o preço das carnes, observou-se mudança nas respostas, havendo aumento na preferência pelo consumo de carne de pescado, porém, ainda assim a carne bovina foi escolhida como primeira opção.Palavras-chave: consumidor, alimentação, hábitos alimentares. STUDY OF THE BEEF CONSUMPTION PATTERN IN THE CITY OF CAMPO GRANDE, MS, BRAZILABSTRACT: The objective of this study was to identify beef consumption patterns compared to the consumption of chicken meat, pork, fish and lamb. The data were collected by questionnaire applied to the population of Campo Grande, Mato Grosso do Sul, Brazil. Social, educational, economic and specific factors of beef consumption in relation to the order of consumption, meat attributes and consumer preference were included. The study was conducted on 429 consumers interviewed at the entrance of supermarkets. Important concern of consumers regarding attributes related to hygiene, color, flavor and tenderness was noted. With respect to nutritional value, 41.03% of consumers believe that beef is more nutritious than other meats. Analysis of the frequency of meat consumption showed that 45.92% of the subjects have the habit to eat beef daily. Regarding the order of consumption, beef was reported as the first option (80.65% of the responses), followed by chicken meat, pork, fish and lamb. A change in the responses was observed when the price of meat was disregarded, with an increase in the preference for fish consumption, although beef was still chosen as the first option.
The objective of this study was to determine the energy values of soybean oil (SBO) and tallow (T) combined in different ratios, and to evaluate their effects on the performance, body composition, and serum lipid levels of starter broilers. In experiment I, a digestibility trial was performed to determine the energy value of the SOB and T mixtures using 100 12 - to 21 -day-old broilers. In experiment II, 930 one-day-old broilers were used. Treatments consisted of the inclusion of 4% SBO and T inclusions at the following ratios: 0:100, 25:75, 50:50, 75:25, 100:0. Each treatment included six replicates. In experiment I, AME and AMEn linearly increased (P<0.01), as SBO participation in the mixture increased. In experiment II, the different lipid ratios quadratically influenced (P<0.01) body weight and weight gain at 21 days of age, increasing up to the ratio of 65.87:34.13. Serum lipids linearly decreased (P<0.05) as SOB inclusion in the diet increased. It was concluded that AME and AMEn of SBO and T at ratios of 0:100, 25:75, 50:50, 75:25, and 100:0 were 7.882 and 7.542, 8.384 and 8.076, 8.701 and 8.385, 8.801 and 8.727, and 9.478 and 9.271 kcal/kg, respectively. The best performance with no detrimental effect on carcass yield was obtained with the mixture of 75% SBO with 25% T. An experiment was conducted to compare the effects of increasing dietary net energy (NE) in finishing pig diets while either maintaining a standardized ileal digestible lysine:NE ratio (SID Lys:NE) or maintaining SID Lys as a constant percentage of the diet across increasing energy densities. A total of 150 pigs (Line 600 × 241; DNA, Columbus, NE; initially 35.7 kg) were used in a 91-d study. Pigs were blocked by sex and weight and randomly assigned to 1 of 5 treatments with 2 pigs per pen and 15 pens per treatment. Treatments included a low-energy control diet that was corn-soybean meal-based with added soybean hulls, and a 2 × 2 factorial arrangement of treatments with main effects of increasing dietary NE (medium or high by adding choice white grease) and formulation method (with a SID Lys:NE ratio or maintaining the same percentage SID Lys). Linear and quadratic contrasts were made using the control diet and the medium- and high-energy diets within each formulation method. Pigs and feeders were weighed approximately every 30 d to calculate average daily gain (ADG), average daily feed intake (ADFI), and gain-to-feed ratio (G:F). At the end of the experiment, pigs were sent to a commercial processing facility for carcass data collection. From days 0 to 34 and 34 to 61, ADG and SID Lys intake increased as NE increased (linear, P < 0.05) in pigs fed diets with a Lys:NE ratio, but not for those fed the same percentage Lys. As NE increased, NE intake and G:F increased (P < 0.01) in pigs fed diets with either formulation method. From days 61 to 91, increasing NE had no effect (P > 0.10) on ADG. There was no change in G:F in pigs fed diets with the same percentage Lys (P > 0.10), but G:F decreased then increased (quadratic, P < 0.01) in response to increasing NE in pigs fed diets with a SID Lys:NE ratio. Overall, increasing dietary NE increased (linear, P < 0.001) daily NE intake and G:F (linear, P < 0.018) with either formulation method. However, SID Lys intake, ADG, and hot carcass weight only increased (linear, P < 0.01) when a SID Lys:NE ratio was maintained. Increasing NE without maintaining a constant SID Lys:NE ratio increased backfat depth (quadratic, P = 0.01), whereas it did not in pigs fed diets with a SID Lys:NE ratio. In conclusion, increasing dietary energy density increased NE intake and G:F regardless of formulation method. However, a SID Lys:NE ratio must be maintained to achieve increased ADG and minimize fat deposition.
