O Brasil encontra-se entre os três principais produtores mundiais de feijão-caupi, acompanhando Nigéria e Niger (QUIN, 1997). No Brasil, o feijão-caupi é cultivado predominantemente no sertão semiárido da região Nordeste e em pequenas áreas na Amazônia (MAIA, 1996). No Nordeste, a produção e a produtividade são de 429.375 t e 303,5 kg/ha, respectivamente. Os maiores produtores são os Estados do Ceará, Piauí, Bahia e Maranhão (IBGE, 1993(IBGE, -2000.O feijão-caupi (Vigna unguiculata L. Walp.), comumente chamado de feijão-de-corda ou feijão-macassar, constitui alimento básico para as populações de baixa renda do nordeste brasileiro, sendo ainda uma das principais fontes de renda e emprego desta região. Dentre os diferentes produtos agrícolas encontrados nas regiões tropicais, o caupi se destaca pelo alto valor nutritivo, além de seu baixo custo de produção (EMBRAPA MEIO-NORTE, 2003).Esta leguminosa apresenta um importante papel na nutrição humana por constituir uma importante fonte de proteínas, carboidratos, destacando-se pelo alto teor de fibras alimentares, vitaminas e minerais, além de possuir baixa quantidade de lipídios (EMBRAPA MEIO-NORTE, 2003).O feijão, além de aumentar o conteúdo protéico na alimentação, contribui para melhorar sua qualidade na dieta, quando constituída predominantemente de leguminosas e cereais, porque além de ser uma excelente fonte de proteínas AbstractThis work had as objective to enrich bakery products (biscuit and rocambole or Brazilian roll) with cowpea flour (CF) to analyze their acceptability and chemical composition including mineral contents (iron, zinc, magnesium, potassium, and phosphorus) and vitamins (thiamine and pyridoxine). Three formulations of biscuits containing 10, 20, and 30% CF and two formulations of Brazilian rolls with 10 and 20% CF were developed. It was observed an increase in the protein contents of the 30% CF biscuits and 20% CF Brazilian roll, as well as in the ash value of 20 and 30% CF biscuits and 20% CF Brazilian roll, when compared to a standard formulation. The concentration of minerals and pyridoxine analyzed increased with the addition of CF. It was also observed an increase in the thiamine concentration of 20% CF Brazilian roll. 10% CF Biscuits presented the major acceptance (84.4%) among the biscuits formulated with CF. In addition, the 10 e 20% CF Brazilian rolls also had a good acceptance (86.7 and 77.8%, respectively). All formulations developed with CF presented scores above six indicating that the products were sensory accepted. Therefore, it can be said that the addition of CF with the objective to improve the nutritive value of formulations based on cereals is feasible. Outro fator que deve ser levado em consideração na seleção de genótipos destinados à mesa é a qualidade culinária das raízes. Existem diversos fatores de qualidade que devem ser considerados, mas os de maior importância são a textura, a plasticidade e a pegajosidade da massa cozida (PEREIRA et al., 1985). Existe uma forte correlação entre o tempo de cozimento e essas características, de modo que, quanto menor o tempo de cozimento, melhor a massa cozida. Portanto, a simples determinação do tempo de cozimento é uma segura avaliação indireta da qualidade de massa cozida (PEREIRA et al., 1985; FUKUDA e BORGES, 1988;LORENZI, 1994).As carências alimentares existentes em populações pobres ou mal nutridas causam problemas de saúde pública em todo o mundo, principalmente em países pobres e em desenvolvimento. A obtenção de vitamina A na alimentação humana ocorre por duas maneiras: por meio do consumo de alimentos de origem animal cuja vitamina A já está pré-formada (os retinóides) e pelo consumo de alimentos de origem vegetal nos quais são constatados carotenóides pró-vitamínicos A (RONCADA, 1998). INTRODUÇÃOA mandioca (Manihot esculenta Crantz) é uma das culturas mais importantes na alimentação humana dos trópicos, principalmente para as populações de baixa renda. A produção mundial foi estimada pela FAO (2005), em 210 milhões de toneladas. Apenas uma pequena parte é utilizada na alimentação animal ou como matéria-prima para produtos industrializados que não se destinam à alimentação humana. No Brasil, a mandioca integra o cardápio em todas as regiões brasileiras, desde o período pré-colonial até os dias atuais. É consumida na forma de farinha de mandioca ou de derivados de amido ou, ainda, as raízes são processadas no âmbito doméstico e consumidas cozidas, fritas ou utilizadas para preparar pratos típicos. Summary This study investigated the effects of processing and storage on the physicochemical properties and retention of antioxidant compounds of no‐added sucrose chewy candies (NASC) incorporated with differently processed açai (frozen pulp, spray‐dried and freeze‐dried powders). NASC containing freeze‐dried açai had the highest softness and recoveries of total phenolic (TP) and total anthocyanin (TA) immediately after production. Colour parameters and antioxidant capacity by ABTS and ORAC assays had no significant differences after 6 months of NASC storage, except for ORAC in NASC containing spray‐dried açai, whereas DPPH• in all samples significantly increased. Water activity and hardness also increased after storage, whereas TP and TA contents decreased, despite presenting good retentions (approx. 72–78% TP and 84–99% TA). This study suggests that açai has a great potential to be used as a natural pigment and antioxidant source in candy manufacturing, meeting consumption trends towards healthier products.
Phenolic compounds in crude extracts were obtained from defatted sunflower seed flour using sodium bisulfite and ethanol solutions as extracting agents. The antioxidant, antimicrobial, anti-proliferative, and DNA protective activities of the phenolic compounds in crude extract were analyzed. The phenolic compound contents were determined as chlorogenic acid (CGA) equivalent, presenting 11.57 and 15.44 g CGA eq/100g regarding the sodium bisulfite extract and ethanolic extract, respectively. The ORAC, DPPH, and ABTS methods were used to evaluate antioxidant activity. Both extracts presented antioxidant properties, considering that the ethanolic extract demonstrated higher values (EC 50 0.36 g extract/g DPPH•). The antimicrobial action was analyzed as to the minimal inhibitory concentration (MIC) and the minimal bactericidal concentration (MBC) of 4 kinds of bacteria ( Escherichia coli , Pseudomonas aeruginosa , Staphylococcus aureus , and Bacillus subtilis ). The ethanolic extract was effective against all of these microorganisms, out of which E. coli was the most sensitive, with a MIC of 11.6 mg CGA/mL. The ethanolic extract presented DNA protective activity without cytotoxic activity concerning in vitro anti-proliferative assay. These findings can be considered as initial evidence of the potential use of phenolic compounds obtained from sunflower seed flour as natural additives in the food industry.
RESUMOExiste uma extensa variedade genética no urucum que são conhecidas por denominações como "focinho de rato", "cabeça de moleque", "peruana", "bico de pato", "amarela", "piave" entre outras. Todas são caracterizadas por propriedades como porte da planta, período de produção, forma e cores das cachopas, deiscência, etc. A última década tem sido marcada por um melhoramento genético, buscando maior produtividade e, principalmente, maior teor de pigmentos. O Instituto Agronômico (IAC) comporta no Polo Regional Centro Norte, (Pindorama, SP), uma coleção de plantas de urucum, com mais de 25 acessos, que em trabalhos anteriores foram avaliadas quanto às suas características agronômicas. Contudo, os teores de bixina e lipídeos, que também são características importantes das sementes de urucum, pois afetam diretamente o rendimento industrial, não foram estudados. Este estudo teve como objetivo a validação de uma metodologia analítica de determinação de bixina e a caracterização da coleção do IAC quanto aos teores de bixina e lipídios. Os resultados indicaram que no método proposto houve linearidade na faixa de trabalho utilizada para a análise de sementes de urucum. Os limites de detecção e quantificação foram de 0,31 e 0,63 g de carotenóides totais expressos como bixina por 100 g de semente, respectivamente. O método foi preciso mas sensível a alterações na massa de amostra, tempo de extração e no coeficiente de absorção ( ). As árvores existentes na coleção possuem altos teores de bixina na semente, variando (em base seca) de 3,12 ± 0,06% a 6,26 ± 0,06%. Os teores de lipídios variaram de 1,97 ± 0% a 3,98 ± 0,09%. ABSTRACT BIXIN AND LIPIDS CONTENT IN ANNATO SEEDS FROM COLLECTION OF THE INSTITUTO AGRONÔMICO (IAC)Annato has wide genetic varieties that are known by different names including "focinho de rato", "cabeça de moleque", peruana, "bico de pato", yellow and piave. Different properties are used to characterize them, namely, size of plant, production period, shape and fruit color, dehiscence, etc. The last decade have been marked by genetic improvement researches, in order to reach greater productivity and, especially, higher pigment content. Açaí (Euterpe oleracea) has a high nutritional value because of its antioxidant compounds, which have the appeal of health benefits. This fruit is native of the floodplain of the Brazilian state of Pará, and was fractionated in peel, pulp, peel plus pulp, and seed. The aim of this research was to evaluate the nutritional composition, total phenolic content, total anthocyanins, antioxidant capacity and the fatty acid profile of these fractions. The highest lipid content (33.5 g.100g-1 DB) was present in the açaí pulp fraction and gas chromatography analysis showed unsaturated fatty acids (71.8%). The peel and seed fractions had the highest dietary fiber content (86.1 and 83.4 g.100g-1 DB, respectively), being insoluble dietary fiber predominant in the peel. The peel has the highest total anthocyanins (372.8 mg.100g-1 DB) and the seed has the highest total phenolic content (3602 mg.100g-1 DB) and the highest antioxidant capacity (88.5 µmol TE/g DB). The marketing approach in the industry of açaí products is aimed at its antioxidant and energy potential, considering the high content of lipids and carbohydrates, showing that 100g of fresh fruit has approximately 130 cal. These results show promising perspectives for the use of açaí fractions for new tropical products with considerable levels of nutrients and antioxidant capacity.
