-A design procedure was proposed for sizing solar-assisted crop-drying systems and assessing the combination of solar collector area and auxiliary energy needs that meets the requirements of the load. Two empirical correlations were compared for use with high thermal inertia solar collectors that are cheap and appropriate for rural areas. A case study as performed in the city of Campinas in southeastern Brazil. Grain drying with partial air heating by solar energy can provide an annual savings of 30% in fuel consumption for 1.80m 2 collector area during the drying of 1.2t of corn at 50ºC at a daily air rate of 1526.8 m 3 /day.
In this work two mathematical methodologies to solve the diffusion differential equation related to the banana drying process were used in order to obtain the mass diffusion coefficient value. A simplified mathematical model was considered that was based on Fick's Law, with initial and boundary conditions according to the experimental procedure carried out for banana drying. The first methodology was performed by using an approximation of the analytical solution and the second by using the numerical simulation according to the implicit scheme of the finite difference method. The calculation was carried out by looking for the minimal value of the norm calculated between the experimental data and the theoretical results obtained using different values of the diffusion coefficient. The algorithms associated with these methodologies were implemented with Matlab. The values of the diffusion coefficient according to the first and second methodologies were 1.65 x 10-6 [m² h-1] and 1.58 x 10-6 [m² h-1] respectively, with the associated minimal residual values of 0.0269 and 0.0257.
Construíram-se as isotermas de dessorção de grãos da espécie Café Arábica (Coffea arábica L.), da cultivar Novo Mundo-Acaiá, para as temperaturas de 50 e 73 °C e teores de mucilagem residual de 16,1 e 52,7%; posteriormente, oito modelos matemáticos de sorção de produtos higroscópicos foram ajustados aos dados experimentais (BET, BET Linear, GAB, Halsey, Halsey Modificado, Langmuir, Oswin e Peleg), com a finalidade de se obter seus coeficientes. A escolha do melhor ajuste se deu em função da avaliação do coeficiente de determinação (R²), do desvio relativo médio (DRM), da tendência de distribuição dos resíduos provenientes dos ajustes dos modelos e do desvio padrão da estimativa. As isotermas de dessorção para temperatura de 50°C e teores de mucilagem residual de 16,1 e 52,7% podem ser representadas pelos modelos Peleg, Halsey Modificado, GAB e Oswin. Para a temperatura de 73°C, o modelo GAB não representa bem os dados experimentais, sendo que os modelos Peleg e Halsey Modificado indicam o melhor desempenho. Com vistas à estimativa das umidades de equilíbrio dinâmicas, a equação proposta por Fioreze mostrou-se altamente satisfatória.
RESUMOO tomate seco em conserva é alvo de crescente aceitação no mercado brasileiro; sua utilização é comum em aperitivos e na culinária como ingrediente de molhos e pizzas. Avaliou-se, neste trabalho o efeito dos seguintes fatores na qualidade do tomate seco: variedade de tomate (Rio Grande e Débora Plus), geometria de corte (pedaços de ½ e ¼ com relação ao eixo maior do fruto), presença ou ausência de sementes e teor de umidade final (25 e 35%), mediante análises instrumentais de cor e textura e testes sensoriais afetivos. Os resultados mostraram que a variedade Rio Grande apresentou melhor mastigabilidade e dureza, porém maior suscetibilidade ao escurecimento após o processo de secagem. De forma geral, a preferência dos consumidores foi por tomates secos com 35% de umidade final, enquanto a melhor qualidade final foi obtida a partir do tratamento com a variedade Rio Grande e umidade final de 35%. The effect of the following factors on the quality of dried tomato was evaluated: variety of tomato (Rio Grande and Débora Plus), geometry of pieces (½ and ¼ to the fruit major axis), presence or absence of seeds and final moisture content (25 and 35%) by means of instrumental texture, and color analysis and sensorial affective tests. The results showed that the variety Rio Grande presented better physical parameters but was more susceptible to darkness. Generally, the consumers preferred dried tomatoes at 35% moisture content. The best final quality of dried tomato was obtained from the treatment performed with Rio Grande variety and 35% final moisture content.
A desidratação osmótica pela qual passa a produção de fruta, é uma alternativa para o aproveitamento dos excedentes da persicultura. Neste trabalho se avaliou a influência da temperatura e da concentração do xarope de sacarose na desidratação osmótica de pêssegos, e se investigaram variações de propriedades físicas, químicas e dos parâmetros da desidratação osmótica (perda de massa e de água; incorporação de sólidos). O delineamento central composto rotacional foi utilizado variando-se a temperatura (30 a 50 ºC) e a concentração (45 a 65 °Brix) da solução osmótica e se fixando a razão mássica xarope:fruta 4:1, tempo de processo 4 h, e formato dos pedaços (metades). Na análise sensorial empregou-se o método de aceitação avaliando-se os atributos aparência, sabor, textura, cor e qualidade geral. Modelaram-se os resultados com o programa Statistica (v 6.0), através da Metodologia de Superfície de Resposta. Os seguintes modelos matemáticos resultaram significativos (p < 0,05) e preditivos: adimensionais dos teores de sólidos solúveis e do parâmetro L* de cor, parâmetros perda de água e perda de massa. A temperatura é o efeito preponderante. As condições de processo de 50 a 54,1 ° C e 55 a 65 °Brix, proporcionaram maiores perdas de água e melhores desempenhos sensoriais.

Os cogumelos comestíveis são alimentos altamente perecíveis. A secagem apresenta-se como alternativa de proporcionar armazenagem segura e livre do desenvolvimento de microrganismos. Neste trabalho, foram investigados os efeitos dos fatores geometria da matéria-prima (cogumelos inteiros e fatiados), temperatura de secagem (50 °C e 70 ºC) e umidade final (5% e 15% bu) sobre a qualidade de cogumelos Shiitake, após a secagem. Curvas experimentais de secagem foram levantadas e análises de cor e textura foram realizadas no produto fresco e no produto depois de seco e reidratado. O efeito desses parâmetros foi avaliado mediante análise de variância acompanhada de teste de comparações múltiplas. A secagem ocorreu no período decrescente, e os cogumelos fatiados e secos a 70 ºC demandaram menor tempo de processo do que os demais tratamentos. Ocorreu menor escurecimento nos cogumelos secos a 70 ºC, e o tempo de secagem afetou a qualidade, constatada pela maior dureza, gomosidade e escurecimento.
