RESUMOO tomate seco em conserva é alvo de crescente aceitação no mercado brasileiro; sua utilização é comum em aperitivos e na culinária como ingrediente de molhos e pizzas. Avaliou-se, neste trabalho o efeito dos seguintes fatores na qualidade do tomate seco: variedade de tomate (Rio Grande e Débora Plus), geometria de corte (pedaços de ½ e ¼ com relação ao eixo maior do fruto), presença ou ausência de sementes e teor de umidade final (25 e 35%), mediante análises instrumentais de cor e textura e testes sensoriais afetivos. Os resultados mostraram que a variedade Rio Grande apresentou melhor mastigabilidade e dureza, porém maior suscetibilidade ao escurecimento após o processo de secagem. De forma geral, a preferência dos consumidores foi por tomates secos com 35% de umidade final, enquanto a melhor qualidade final foi obtida a partir do tratamento com a variedade Rio Grande e umidade final de 35%. The effect of the following factors on the quality of dried tomato was evaluated: variety of tomato (Rio Grande and Débora Plus), geometry of pieces (½ and ¼ to the fruit major axis), presence or absence of seeds and final moisture content (25 and 35%) by means of instrumental texture, and color analysis and sensorial affective tests. The results showed that the variety Rio Grande presented better physical parameters but was more susceptible to darkness. Generally, the consumers preferred dried tomatoes at 35% moisture content. The best final quality of dried tomato was obtained from the treatment performed with Rio Grande variety and 35% final moisture content.
RESUMOO Brasil é considerado o maior produtor mundial de cana-de-açúcar, e as regiões Nordeste e Sudeste são as maiores produtoras nacionais. A pesquisa objetivou determinar os principais constituintes do caldo de cana tais como água, sacarose, açúcares redutores, proteína, polissacarídeos totais, dextrana, cinzas e minerais (fósforo, potássio, cálcio e magnésio), além de analisá-lo físico-quimicamente (pH, acidez, sólidos solúveis, relação Brix/Acidez ("ratio"), teor de ácido ascórbico e atividade da pectinesterase). Também, foram realizadas análises microbiológicas (Contagem Padrão, Coliformes Totais e Fecais, Contagem de Bolores e Leveduras), para então determinar a qualidade do caldo de cana sob esse ponto de vista. As determinações revelaram que o caldo de cana é uma bebida altamente rica em açúcares, fato que aliado ao pH torna-o muito susceptível à deterioração microbiana. Como os constituintes do caldo encontraram-se em teores baixos, não haverá problemas maiores na sua clarificação. A garapa não pode ser considerada como boa fonte de vitamina C. As condições microbiológicas da bebida "in natura" foram consideradas boas.
RESUMO:Esse trabalho de revisão aborda as perspectivas de mercado e importantes componentes funcionais de frutas e vegetais em sucos e bebidas de frutas. Apesar dos preços elevados persistirem como um empecilho para que todas as classes sociais tenham acesso ao seu consumo, há uma crescente demanda por uma alimentação mais saudável, e com isso o mercado das chamadas bebidas naturais e funcionais vem ganhando cada vez mais espaço no cotidiano dos consumidores. O processamento dessas bebidas deve ser adequado a fim de garantir o seu caráter funcional, que pode ser conferido por componentes naturais da matéria-prima ou pela adição de ingredientes que trazem benefícios à saúde. O conhecimento de tendências de mercado e novas perspectivas são fundamentais para o direcionamento de pesquisa, desenvolvimento e inovação do setor de bebidas, sucos e polpas de frutas.Palavras-chaves: bebidas saudáveis, antioxidantes, sucos e tendências.
Determining the shelf life has become a factor of major importance in the development of foods designed to meet consumer demands in terms of quality and safety. The goal of the present study was to investigate the shelf life of vacuum-packed dried tomatoes, stored at both room and refrigeration temperature (4°C) for a period of 180 days. The following determinations were performed during the storage period studied: microbiological analysis, instrumental color, lycopene, and ascorbic acid. Sorption isotherms were determined at both temperatures (room temperature and 4°C). The microbiological quality of vacuum-packed dried tomatoes remained unchanged during 180 days for the refrigerated samples and 90 days for the samples stored at room temperature. The rate constant (k) of lycopene degradation of the refrigerated samples and the samples stored at room temperature was 3.209×10 −5 and 12.994× 10 −5 /day, respectively. The rate constant (k) of ascorbic acid degradation was 3.339×10 −4 /day for cold storage and 76.655×10 −4 /day for storage at room temperature. The tomatoes stored at room temperature were subjected to analysis over 90 days of storage, period after which both the appearance and sensory characteristics of the product fell below the levels of consumer acceptability. As for the tomatoes stored at refrigeration temperature, the original sensory characteristics were maintained throughout the entire storage period of 180 days.
Fruits are natural sources of minerals whose ingestion is recommended in a balanced diet. The increasing consumption of fruit-based beverages demands the development of rapid methods to evaluate their quality parameters. X-ray fluorescence spectrometry is an analytical-nuclear technique that is gaining space in the environmental and geological fields, and has been explored modestly in the food field. The main objective of this work was to develop a methodology to determine the mineral content of fruitbased beverages by applying this technique. Beverages manufactured from organic and conventional fruit varieties were evaluated, aiming to compare their nutritional value. The research was divided into three steps: in the first step, a direct measurement of the samples was made, that is, without prior preparation; in the second, standard curves were prepared with the elements of calcium and potassium, based on the category of 'fine samples'. Lastly, these curves were used to determine concentrations of calcium and potassium in the samples of juices and pulps prepared as 'fine samples'. The fine sample measurements showed results more exact compared to that obtained from the direct measurements. From the data evaluated, it was not possible to attribute better nutritional quality to either the organic or conventional samples.Keywords: X-ray fluorescence; minerals; food analysis RESUMO As frutas são fontes naturais de minerais cuja ingestão é recomendada em uma dieta equilibrada. O aumento no consumo de bebidas à base de fruta exige o desenvolvimento de métodos rápidos para avaliar os seus parâmetros de qualidade. Espectrometria de fluorescência de raios-X é uma técnica analítica nuclear que está ganhando espaço nas áreas ambientais e geológicas, e tem sido explorado modestamente na área de alimentos. O principal objetivo deste trabalho foi desenvolver uma metodologia para determinar o conteúdo mineral de bebidas à base de frutas, aplicando essa técnica. Bebidas processadas a partir de variedades de frutas orgânicas e convencionais foram avaliadas, com o objetivo de comparar o seu valor nutricional. A investigação foi dividida em três etapas: na primeira etapa, uma medição direta das amostras foi realizada, isto é, sem preparação prévia. Na segunda etapa, as curvas padrão foram preparadas com os elementos de cálcio e de potássio, com base na categoria de "amostras finas". Por último, estas curvas foram utilizadas para determinar as concentrações de cálcio e potássio nas amostras de sucos e polpas preparadas
