ObjetivoInvestigar a validade e a reprodutibilidade de um questionário de freqüência de consumo alimentar desenvolvido para a população adulta. MétodosForam entrevistados, em três momentos, 69 indivíduos, de ambos os sexos, freqüentadores de restaurantes industriais em dois órgãos públicos de Brasília, Distrito Federal. Na primeira e terceira entrevistas foram aplicados um recordatório 24 horas e um questionário de freqüência de consumo alimentar, e na segunda entrevista, um recordatório 24 horas. A duração média do estudo foi de 181 dias. Macronutrientes, vitaminas A e C, cálcio, ferro, zinco, colesterol, fibras e energia total foram analisados utilizando-se os coeficientes de correlação intraclasse e de Pearson, este último na forma bruta e deatenuada. ResultadosQuanto à reprodutibilidade, o questionário de freqüência de consumo alimentar obteve desempenho adequado, apresentando resultados acima de 0,7 para lipídeo, colesterol, energia e proteína. Para a validade, os melhores coeficientes deatenuados foram observados para vitamina C (r=0,66), ferro (r=0,58), proteína (r=0,55) e carboidrato (r=0,55) e os piores, para colesterol (r=0,32) e vitamina A (r=0,37). ConclusãoA obtenção de coeficientes de correlação expressivos para alguns nutrientes indica que este questionário de freqüência de consumo alimentar constitui-se em um bom instrumento de pesquisa para estudos
The project entitled Promotion of Health Eating Habits by Schools, operating in the Federal District of Brazil since 2001, encourages good eating habits in the school community within the context of promoting healthy lifestyles and preventing chronic non-communicable diseases. The current article presents and analyzes a methodology to train preschool and elementary educators and school cafeteria owners. The workshops included theoretical classes, practical activities, and educational games and were evaluated on the basis of expansion and applicability of knowledge, in addition to implementation of the 10 steps to a healthy school cafeteria. The proposed pedagogical activities were verified by an analysis of the teachers' workshop folders. The overall evaluation was positive, with expansion of knowledge (p < 0.05) among participants for the three workshop modules. The objectives laid out in the workshop folders were reached by 44% of the teachers. In the implementation of the healthy cafeteria, positive results were observed when comparing the pre and post-training periods. The methodology helped expand knowledge for both teachers and cafeteria owners, highlighting the school community as a prime space for promoting healthy eating.
Objective: To characterize the school cafeterias in the Federal District of Brazil with respect to the promotion of healthy eating in schools. Methods: This is a descriptive, analytical, cross-sectional study, with a representative sample of schools with cafeterias in the Federal District, Brazil (n=202). The data were collected from April to November 2010 by means of on-site interviews and a structured questionnaire. The Pearson's chi-squared and Student's t tests were used. Results: A higher prevalence of outsourcing, and few employees and dieticians were observed. The prevailing foods were baked sausage, cheese, or chicken rolls or pastries. It was also found that 42.2% of the schools influence the menu of the cafeterias, and 58.6% of the representatives believe in the possibility of influencing the students' eating habits. However, 68.0% of the respondents do not believe in the economic feasibility of completely healthful school cafeterias. Approximately 30.0% of the respondents carry out activities to promote healthy eating. Conclusion: Most of the school cafeterias in the Federal District do not encourage healthful eating. The high prevalence of outsourced services with little interference from the school community gives high autonomy to the cafeteria's owner, whose priority is the pursuit of profit at the expense of the students' nutritional education. Improving the nutritional quality of school foods should be a continuous interactive effort of the food suppliers, principals, students, parents, and government authorities.
ObjetivoAnalisar e comparar o conhecimento sobre nutrição de professores e alunos do Projeto "a escola promovendo hábitos alimentares saudáveis", submetidos a duas estratégias de educação nutricional em escolas do Distrito Federal. MétodosO Projeto Escola utilizou duas estratégias de intervenção em educação nutricional: intervenção nutricional (A) ações educativas realizadas na comunidade escolar pela equipe; e intervenção nutricional (B) ações educativas desenvolvidas por professores que frequentaram oficinas de capacitação. O conhecimento das crianças foi avaliado por meio de um instrumento sobre pirâmide dos alimentos e um sobre higiene pessoal; sendo aplicado com os professores um questionário do tipo verdadeiro ou falso.
OBJECTIVE: The aim of the present study was to describe strategies for the Promotion of Healthy Eating at Public and Private Schools in the Federal District of Brazil. METHODS: A descriptive, analytical, cross-sectional study was carried out involving 122 Private Schools and 173 Public Schools. The components of health promotion in the school setting were adapted to the context of the promotion of healthy eating, with interviews conducted for the administration of a semi-structured questionnaire. The Student's t test, Spearman's correlation coefficients and likelihood ratios were used for the statistical analysis (5% level of significance; p<0.05). RESULTS: Only one private elementary school fulfilled the criteria for 20 of the 24 items studied. At the other extreme, two public high schools only fulfilled the criteria for three items. A positive correlation was found between number of meetings held with the school community to address healthy eating and presence of healthy environments as well as between presence of healthy environments and monitoring of nutritional status of schoolchildren (p<0.01). Schools that held an above-average number of meetings to address healthy eating had a smaller proportion of street vendors and local stores in the surrounding area (p=0.01). The majority of schools that had a partnership with healthcare professionals included the topic of healthy eating in the curriculum (p=0.04). CONCLUSION: The different associations found demonstrate the importance and interdependence of the components of the promotion of healthy eating. Preschools have developed more strategies for the Promotion of Healthy Eating and health in general in comparison to other teaching modalities. Schools in the Federal District of Brazil need support and training to be developed as a "Health Promoting School", specifically with regard to actions directed toward healthy eating.
OBJETIVO: Desenvolver e aplicar uma metodologia para avaliar a implantação da cantina escolar saudável em escolas do Distrito Federal. MÉTODOS: Um estudo descritivo e avaliativo sobre uma intervenção educativa realizado em 2006, por meio de um curso de capacitação para proprietários de cantinas, em que foram avaliados a implantação dos Dez Passos da Cantina Escolar Saudável e o perfil de funcionamento da cantina em três momentos (antes do curso, seis meses e dois anos depois). Para avaliação das preparações, criou-se um sistema de classificação em mais ou menos saudáveis. RESULTADOS: Foram capacitados 35 proprietários de cantina; dentre eles, nove participaram dos três momentos de avaliação. Houve uma maior aplicação dos Dez Passos da Cantina Escolar Saudável e um maior oferecimento de lanches mais saudáveis do 1º para o 2º momento, entretanto o 3º momento de avaliação não manteve o mesmo comportamento. Apesar da descontinuidade observada no processo de acompanhamento da intervenção, os participantes buscaram um maior contato com outras cantinas interessadas no desenvolvimento de uma cantina saudável (p=0,002). CONCLUSÃO: O curso de capacitação apresentou resultados positivos, principalmente a curto prazo, entretanto o processo de acompanhamento durante um ano para esse público não foi o suficiente para garantir a sustentabilidade das ações. Para a efetiva implantação e manutenção da cantina saudável é fundamental o acompanhamento sistemático desse processo, apoiado no envolvimento da comunidade escolar e em legislação específica.
Neste artigo apresenta-se a construção de uma metodologia de capacitação em educação nutricional para educadores de ensino infantil e fundamental até a 4ª série. O desenvolvimento desta metodologia foi feito em quatro escolas de diferentes realidades socioeconômicas do Distrito Federal, Brasil, tendo sido convidados todos os 59 educadores das mesmas. A metodologia foi construída incluindo quatro fases: demanda, pré--análise, foco e enquadre e planejamento flexível. Esta proposta insere-se em uma perspectiva de educação permanente baseada no construtivismo. Dos 59 educadores, 81% (n=48) participaram da etapa de demanda que identificou dificuldades, expectativas e principais temas para o curso. Os temas geradores verificados na etapa pré-análise foram: alimentação saudável; opções de refeições saudáveis; estratégias para a promoção de hábitos alimentares saudáveis com a comunidade; contexto da alimentação na atualidade; aspectos legais sobre alimentação na escola e aproveitamento total de alimentos. O foco do planejamento foi definido como "Alimentação saudável na escola" e o enquadre como um curso de 60 horas a ser realizado na Universidade de Brasília e nas escolas participantes. No planejamento flexível definiram-se os objetivos gerais e específicos do curso, as competências esperadas para os educadores após o curso e toda a programação com seus respectivos planos de aula. Esta proposta representa uma opção norteadora para ações de educação nutricional com este público, de forma a contribuir para a modificação do perfil epidemiológico atual dos escolares. OBJECTIVE: The aim of the present study was to identify experiences with gardens in public schools in the Distrito Federal, Brazil, and to analyze factors involved in their use to promote healthy eating habits. METHODS: This is an analytical cross-sectional study with data collection in two phases: (1) telephone contact with all public schools in the Distrito Federal; (2) interviews conducted with a sample of schools with a garden (n=105). RESULTS: Of the 582 schools in the Distrito Federal, 453 (77.8%) participated in phase 1 and 37.7% of these had a garden. Rural schools had a higher prevalence of gardens (p=0.003). Among the schools which had no garden, 75.2% (n=212) had interest in creating one. The main reason for the deactivation of gardens was a lack of manpower to maintain them. The main reason for creating a garden was to supplement school food (56.2%). The garden was used as an educational space to promote healthy eating habits by 60.8% of the schools. CONCLUSION: An expressive percentage of schools with gardens (37.7%) was identified in the Distrito Federal. A number of factors were associated with the presence of a garden, including the location and size of the school, as well as the level of education. A significant percentage of schools reported using the garden as a space to promote healthy eating habits. This result must be refined by assessing the use and impact of gardens as a tool to promote healthy eating habits in the school community.
