In this study, we evaluated the tissue composition, the ratios between different issues, and the allometric growth of tissues from the commercial cuts neck, shoulder, rib, and leg, and of the carcass of Texel lambs. Thirty uncastrated male lambs born from single calvings were used in this experiment. Lambs were weaned, confined individually, and distributed into five treatments with six replications. Each treatment consisted of a predefined slaughter weight (T23 -initial slaughter, T25, T30, T35, and T40). The proportion of bone decreased linearly in the shoulder, rib, and legs, but remained constant in the neck. The proportion of muscle decreased in the rib, whereas in the other cuts it remained constant. The percentage of fat increased as the slaughter weight of the lambs was increased, for all cuts. In all cuts and in the carcass, bone and muscle showed early growth (b<1), whereas fat displayed late growth (b>1). The proportion of bone decreased and fat increased linearly in the carcass, and the proportion of muscle was not influenced by the slaughter weight of the lambs. The muscle/fat ratio decreased in all cuts, and consequently in the half-carcass, as the slaughter weight was increased. The muscle/ bone ratio increased in the shoulder, rib, leg, and half-carcass, but there was no significant effect on the neck. The bone and muscle tissues showed early growth, whereas the fat had late growth in the different commercial cuts and carcass of Texel lambs. The tissue growth pattern of the shoulder may be representative of the allometric growth of the different carcass tissues. An increase in the slaughter weight of Texel lambs leads to a reduction of the muscle/fat ratio, due to the higher deposition of fat in the carcass of these animals. ResumoAvaliou-se a composição tecidual, a relação existente entre os diferentes tecidos e o crescimento alométrico dos tecidos dos cortes comerciais pescoço, paleta, costilhar e perna e da carcaça de cordeiros da raça Texel. Foram utilizados 30 cordeiros machos, não castrados e nascidos de parto simples. Os cordeiros foram desmamados, confinados individualmente e distribuídos em cinco tratamentos com seis repetições, sendo cada tratamento um peso pré-estabelecido de abate (T23 -abate inicial, T25, T30, T35 e T40). A proporção de osso diminuiu linearmente na paleta, no costilhar e na perna e se manteve constante no pescoço. A proporção de músculo diminuiu apenas no costilhar, enquanto que nos demais cortes se manteve constante. A porcentagem de gordura aumentou com a elevação do peso de abate dos cordeiros, em todos os cortes realizados. Em todos os cortes e na carcaça, o osso e o músculo apresentaram crescimento precoce (b<1), enquanto que a gordura apresentou crescimento tardio (b>1). This study aimed to evaluate the Texel lambs' meat quality fed with increasing levels of crude glycerin (0, 7, 14, and 21% of dry matter) in the diet. Thirthy-two-two non-castrated male Texel lambs were used, with initial weight of 15.9 ± 4.1 kg, using a completely randomized design with four treatments and eight repetitions, per treatment. Upon reaching the average weight of 35 kg, the animals were slaughtered. The meat chemical composition was similar among treatments (P>0.05) and total lipids and crude protein presented averages of 3.47 and 20.05 g 100g -1, respectively. No changes in pH, marbling, color, and water loss under pressure were observed. The shear force did not change among treatments and the texture can be considered soft, with average values of 5.48 kgf. There was a linear (P<0.05) decrease in odor values by the addition of glycerin and no significant differences (P>0.05) were observed for the attributes flavor, tenderness, juiciness, and overall acceptance among treatments. Fatty acids in higher proportions in the meat lamb were to C18:1n-9 (1298.90 mg 100g -1 ), C16:0 (709.07 mg 100g -1 ) and C18:0 (433.30 mg 100g -1 ), with percentages of 42.72, 23.07 and 14.35%, respectively. Significant difference according to the glycerin level in the diet was observed only for the margaric acid (C17:0) with an increasing linear effect, reaching 58.95 mg 100g -1 muscle to the group with 21% crude glycerin, corresponding to 1.77% of total fatty acids. The other fatty acids did not change, and provided a satisfactory result for conjugated linoleic acid (CLA), totaling about 6.1 mg 100 g -1 muscle, corresponding to 0.21% of total lipids. The use of glycerin in the diet for finishing lambs does not alter the characteristics of the meat, maintaining the product quality for consumption. ResumoObjetivou-se avaliar a qualidade da carne de cordeiros Texel alimentados com níveis crescentes de glicerina bruta (0, 7, 14 e 21% da matéria seca) na dieta. Trinta e dois cordeiros Texel machos não castrados foram avaliados, com peso inicial de 15,9 ± 4,1 kg, em delineamento inteiramente casualizado, com quatro tratamentos e oito repetições. Ao atingir o peso médio de 35 kg, os animais foram abatidos. A composição química da carne foi similar entre os tratamentos e as medias de lipídios totais e proteína bruta foram 3,47 e 20,05 g 100 g -1 , respectivamente. Não houve variações nos valores de pH, marmoreio, cor e perda de água por pressão. A força de cisalhamento não variou entre os tratamentos e a textura da carne pode ser considerada macia, com valores médios de 5,48 kg-f. Houve decréscimo linear nos valores de odor em função da adição de glicerina bruta e não houve diferença significativa para sabor, maciez, suculência, e aceitação geral entre os tratamentos. RESUMOObjetivou-se avaliar o efeito da porcentagem de glicerina bruta em suplementos sobre as características da carcaça e os componentes do peso vivo de cordeiros lactentes mantidos em pasto de azevém. Foram utilizados 32 cordeiros lactentes, distribuídos nos tratamentos: 0, 10, 20 e 30% de glicerina bruta na matéria seca, em substituição ao milho, no suplemento isoproteico (18% de PB na matéria seca) fornecido diariamente em quantidade equivalente a 2% do peso corporal. As porcentagens de glicerina bruta tiveram efeito linear decrescente sobre peso de carcaça quente, peso de carcaça fria, rendimento de carcaça quente e rendimento de carcaça fria, enquanto as perdas pelo jejum aumentaram. O peso da paleta e o peso do costilhar diminuíram, enquanto a proporção de perna aumentou com o incremento de glicerina bruta no suplemento. Na composição tecidual da paleta, observou-se que a gordura subcutânea, a gordura intermuscular e a gordura total da paleta decresceram linearmente segundo as porcentagens de glicerina bruta. Sobre os componentes do peso vivo, observaram-se diferenças nas proporções de pele, rúmen, omaso, intestino grosso, que aumentaram, enquanto a de gordura renal diminuiu linearmente. Conclui-se que o uso de glicerina bruta em até 30% em suplemento fornecido em comedouro privativo para cordeiros lactentes mantidos em pasto de azevém interfere nas características da carcaça e nos componentes corporais.
