Efeito do cloreto de cálcio e da película de alginato de sódio na conservação de laranja 'Pera' minimamente processada

Abstract: Na utilização de frutas cítricas como produtos frescos, o descascamento é o fator limitante, dada a inconveniência da operação, o odor dos óleos essenciais e a perda de suco, daí o interesse em que se ofereçam estas frutas sem casca, prontas para o consumo.
