<p>O governo brasileiro incentiva o consumo de hortaliças não convencionais, como forma de aproveitamento da biodiversidade brasileira e suprimento de necessidades nutricionais de forma viável a população, principalmente a de baixa renda. A Ora-pro-nóbis (<em>Pereskia aculeata</em> Miller) é uma hortaliça nativa brasileira que se propaga facilmente, cujo cultivo apresenta baixa incidência de doenças e de demanda hídrica. É viável para o cultivo doméstico, como fonte nutricional alternativa e de baixo custo, sendo uma hortaliça recomendada para o consumo diário na alimentação, nas formas crua e/ou processada. Neste trabalho, buscou-se ampliar o uso o e cultivo da Ora-pro-nóbis, com a produção e distribuição de mudas em um evento tradicional na Zona Rural de Uberlândia, a Semana da Família Rural, em sua 26ª edição, no Instituto Federal do Triângulo Mineiro – Campus Uberlândia. Durante o evento foram distribuídas amostras de alimentos processados com folhas de Ora-pro-nóbis <em>in natura </em>ou previamente secas, para degustação e avaliação da apreciação. Também foram distribuídas mudas de Ora-pro-nóbis aos interessados, mediante cadastro prévio. Os dados apresentados revelaram interesse da população no uso da planta e a aceitação dos produtos incrementados com as folhas da planta, uma vez que de 600 pessoas participantes, 232 participaram da degustação de pelo menos um produto alimentício e 156 levaram mudas para o plantio.</p><p align="center"><strong><em>Ora-pro-nóbis in human food consumption: sensorial perception</em></strong></p><p class="Standard"><strong>Abstract</strong><strong>: </strong>Brazilian government encourages the consume unconventional vegetables to avail the biodiversity from the country and nourish the population, mainly the low-income people. Ora-pro-nóbis (<em>Pereskia aculeata</em> Miller) is a brazilian native vegetable which is easily propagated and has low diseases and low request water rates. As a low-cost nutritional source, this vegetable is viable to home cultivation and recommended for the daily consume <em>in natura</em> or processed. This essay objectified to expand Ora-pro-nóbis cultivation by seedling distribution in a traditional event called Rural Family Week, in its 26ª edition. During the event, Ora-pro-nóbis seedling and food products cooked with Ora-pro-Nóbis leaves were distributed for testing and evaluation. It was observed large interest in food products with Ora-pro-nóbis leaves, considering that 232 people tasted the products and 156 took seedlings to cultivate in 600 who participated.</p>
Establishing good infant eating habits in childhood is quite important for proper growth and development. The increasing number of mothers who work outside home has made children have their meals in day care centers or schools. In addition, meals have their preparation being replaced by more suitable options, like instant food, lately depriving kids from good eating and nutritional habits. Such kind of food does not contribute to the formation of good eating habits. Thus, vegetables such as the ora-pro-nóbis (unconventional vegetable, known in English language countries as Barbados Goosenberry and cientific name Pereskia aculeata Miller) that have in their leaves proteins, fibers and minerals, like iron, can contribute to improve the childlike feeding. In order to improve the nutritional value of commercial chocolate cake premixes, in natura ora-pro-nóbis leaves were added in at ratios of 0 (standard), 10, 20, 30 and 40% leaf weight per dough weight, which were covered with chocolate kind icing. Moisture, ashes, lipids, proteins, crude fiber and carbohydrate and total caloric content (VCT) were analyzed in the elaborated formulations. The results showed a significant increase in water retention, crude fiber content and decrease in total caloric value (VCT) in the added cakes of ora-pro-nóbis leaves.
Além de sua qualidade como alimento, o mel é dotado de numerosas propriedades terapêuticas, sendo utilizado pela medicina popular como fitoterápico sob diversas formas e associações. Durante o transcorrer dos tempos, esse excepcional alimento vem sendo fraudado, com a busca de lucros fáceis, o que pode comprometer a segurança alimentar, consequentemente a saúde dos consumidores e, baseado neste fato, este trabalho teve como objetivo verificar a qualidade de amostras de mel, na região de Uberlândia. As análises físico-químicas realizadas nas amostras de mel, em duas repetições, foram as exigidas pela Instrução Normativa n o 11 de 20 de Outubro de 2000, sendo elas; acidez, açúcares redutores, atividade diastásica, cinzas, hidroximetilfurural, sacarose aparente, sólidos insolúveis em água e umidade. Foram analisadas 10 (dez) amostras de mel, sendo quatro com registro da S.I.F.; três com rótulo e assinatura do técnico responsável e três artesanais. Das dez amostras de mel analisadas, 100% atendiam à Normativa n o 11 quanto aos parâmetros umidade, cinzas e acidez, 10% apresentaram teor de sólidos insolúveis em água superior ao permitido, 30% apresentaram teor de açúcares redutores inferior ao exigido e 60% apresentaram teor de sacarose aparente superior ao estabelecido pela Normativa n o 11. Entre as amostras analisadas, as 3 (três) que mais apresentaram parâmetros em desacordo com a Instrução Normativa n o 11 foram as amostras de mel artesanal, portanto sem registro da S.I.F. e sem rótulo com assinatura do técnico responsável e 1 (uma) amostra de mel com rótulo e assinatura do técnico responsável.
O presente trabalho caracterizou o perfil dos servidores de um Instituto Federal de Educação nos quesitos socioeconômicos e hábitos de consumo de bebidas à base de frutas. O questionário foi confeccionado através da ferramenta Google Forms, totalizando 16 questões de múltipla escolha. A aplicação foi realizada pelo envio por e-mail institucional aos servidores com autorização prévia do Comitê de Ética, conforme Parecer 3.532.635, totalizando 298 respostas, que corresponderam a 26,7% dos servidores. Nos resultados, a maioria dos entrevistados era do sexo feminino (65,4%), com alto grau de instrução (63,8% com mestrado/doutorado) e condições financeiras compatíveis à classe média (38,6% com renda > 5 a 10 salários-mínimos). As maiores frequências foram de servidores não adeptos a dietas especiais (85,2%) e sem restrições ao consumo de sacarose (93,3%). A maioria possui hábitos de consumo de bebidas à base de frutas (90,2%), sendo os sabores mais consumidos os de laranja, limão e uva (85,0; 60,7 e 62,9%, respectivamente). No caso específico do tamarindo, grande parte dos entrevistados gosta desta fruta (82,60%), mas raramente consome bebidas provenientes dessa (41,3%). A maioria desconhece a definição de suco e de néctar (62,20%), mas os entrevistados que confirmaram saber as diferenças, acertaram que a diferença é a concentração de polpa (85,40%). Os entrevistados, em geral, costumam observar a embalagem (34,00% sempre observam) e visualizam, preferencialmente, o prazo de validade (89,80%) e preço (62,80%). Logo, identificou-se no público entrevistado, que o hábito de consumo de bebidas à base de frutas é relevante e frequente, o que representa a tendência atual do consumidor na busca de alimentos nutritivos e saudáveis. Abstract The present study characterized the profile of Education Federal Institute servants regarding socioeconomic terms and consumption habits of fruit-based beverages. The questionnaire was carried out by using the Google Forms tool, totalling 16 multiple choice questions. The application was carried out by sending institutional e-mail to the servants with prior authorization from Ethics Committee according to Opinion 3.532.635, totalling 298 responses, which corresponded to 26.7% of the servants. Int the results, most of the respondents were female (65.4%), with a high level of education (63.8% master / PhD) and financial conditions compatible with the middle class (38.6% with income> 5 to 10 minimum wages). The highest frequencies were of servants not adept to any special diets (85.2%) and without restrictions on sucrose consumption (93.3%). Most have consumption habits of fruit-based drinks (90.2%), with the most consumed flavours being orange, lemon and grape (85.0; 60.7 and 62.9% respectively). In the specific case of tamarind, most of the respondents like this fruit (82.6%) but rarely consume drinks made of it (41,3%). Most of them are unaware of the definition of juice and nectar (62.2%), but the interviewees who confirmed that they knew the differences, agreed the difference is the pulp concentration (85.4%). Respondents, in general, usually look at the packaging (34.0% always do) and preferentially check the expiration date (89.8%) and the price (62.8%). Therefore, it was identified that in the interviewed public, that the habit of consuming fruit-based beverages is relevant and frequent, which represents the consumer current trend in the search for nutritious and healthy foods.
