; Patrícia Beltrão Lessa Constant 3 ResumoA alergia alimentar pode ser definida como uma reação adversa a um antígeno alimentar mediada por mecanismos fundamentalmente imunológicos. É um problema nutricional que apresentou um crescimento nas ultimas décadas, provavelmente devido à maior exposição da população a um número maior de alérgenos alimentares disponíveis. Ele vem se tornando um problema de saúde em todo o mundo e está associado a um impacto negativo significativo na qualidade de vida. Os alimentos mais citados como causadores de alergias alimentares são: leite, ovos, amendoim, castanhas, camarão, peixe e soja, e os principais alérgenos alimentares identificados são de natureza protéica. É importante que haja investimento em pesquisas no sentido de reduzir os danos causados por alimentos que contém alérgenos. Estudos com a biotecnologia podem apresentar-se como uma alternativa eficiente e segura. Esta pesquisa tem como objetivo apresentar uma revisão atualizada das alergias alimentares, com foco principal no seu mecanismo de atuação no organismo.Também se discutem os principais alimentos envolvidos e as alternativas que vem sendo apresentadas para minimizar este problema. Palavras-chave: Alergia. Alimentos. Reações adversas. Sistema imune. AbstractFood allergy can be defined as an adverse reaction to a food antigen mediated by fundamentally immunological mechanisms. It is a nutritional problem that has shown an increase in the last decades probably due to the population's exposure to a higher number of available food allergens. It has become a health problem worldwide being associated to a significant negative impact on life quality. The foods most cited as those which cause food allergy are: milk, eggs, peanuts, nuts, shrimps, fish and soy bean. The main food allergens are protein-nature ones. There must be investment in research in order to reduce the damage caused by foods containing allergens. Biotechnology studies can be considered an efficient and safe alternative. The purpose of this research is to present an updated review on food allergies focusing on its action mechanism in the body, main food involved and alternatives that have been used to minimize this problem.

Avaliação da farinha de banana verde com aplicação de antioxidantes Evaluation of green banana flour with antioxidant application

The objective of this paper was to determine the volatile profile of four cultivars -Barker, Collinson, Fortuna and Geada of avocado (Persea americana, Mill.) fruit and to perform a detailed study on the effect of volatiles extraction conditions. The best conditions for extraction for Collinson and Fortuna cultivars were by using a mixture of pentane and ethyl ether (2:1) as solvent for 80 min, while for Barker and Geada cultivars, the solvents were hexane and pentane-ether (2:1), respectively but for a shorter extraction period of 60 min. A total number of 158 compounds were separated in all 4 avocado cultivars, among them eighty-four volatile compounds were identified. The principal volatile compounds viz. hexanal, ethyl acetate, methyl dodecanoate, 2,5-dimethyl furan, 1,3-butanediol, 2-ethylphenol, 2-butanol, α−bergamotene, β−caryophyllene, (E)-2-decenal were common in all the 4 cultivars. (E)-2-pentenal which possesses fruity aroma was found only in the cultivar Fortuna while ethyl acetate possessing fresh fruity flavor was present in higher content in Collinson cultivar. Benzaldehyde which possesses characteristic fruity and nutty odor note was present at a higher concentration (4.3%) in only Geada cultivar and in traces in Barker cultivar but it was not detected in Collinson and Fortuna cultivars.Keywords: avocado; aroma; quality; pulp; GC-MS. Practical Application:The innovative nature of this work is that we have monitored the volatile profile of 4 varieties -Barker, Collinson, Fortuna and Geada largely cultivated in the northeast region of Brazil. There is no published work as yet on volatile composition of these varieties. The work also optimizes the conditions of extraction from these cultivars so that higher numbers of volatiles are captured. The differences in volatile compounds among the four varieties could contribute for their suitable usage as fresh or processed fruit.

ResumoApós a colheita, o tomate (Lycopersicon esculentum Mill) apresenta-se como um fruto altamente perecível, tendo um curto período de vida para utilização adequada, sendo a sua industrialização uma importante forma de conseguir um melhor e mais amplo aproveitamento diminuindo o percentual de perdas. Este trabalho teve como objetivo, avaliar a influência do processo de desidratação osmótica seguida de secagem por convecção forçada em secador de cabine, nas características físico-químicas, microbiológicas e sensoriais do tomate. Foram testadas separadamente duas soluções xaropes: NaCl a 10% e NaCl 5% + sacarose 10%. Após desidratação, acondicionamento a quente com condimento a base de óleo, azeite e orégano e pasteurização os produtos foram armazenados a temperatura ambiente e em ausência de luz. Nos tempos 0, 15, 30 e 45 dias foram feitas análises físico-químicas, microbiologias e sensórias. O emprego de desidratação osmótica partindo-se de solutos e concentrações distintas influenciou de forma diferenciada nas características físico-químicas e sensoriais do tomate seco ao longo do armazenamento. A utilização da mistura NaCl e sacarose apresentou a melhores resultados no que diz respeito a aceitação pelo consumidor. Com relação ao tempo de armazenamento, não foi constatada diferenças nas avaliações sensoriais, indicando que embora tenham ocorrido alterações físico-químicas, elas não foram significativamente percebidas pelos provadores. The objective of the present study was to evaluate the influence of the dehydrated osmotic process dried by convection forced in booth dryer, on the physical-chemistry microbiologic and sensorial characteristics of the tomato. Tests were done with NaCl 10% (treatment A) and NaCl 5% + 10% (treatment B). After dehydrated, storing hot with oil flavouring, olive oil and oregano and pasteurized, wares have been stored at environment temperature and on absence of light. At 0, 15, 30 and 45 days analysis physical-chemistry, microbiologist and sensorial have been realized.
