To investigate the impact of different dietary lipid sources on fillet composition and lipid transport, we conducted a feeding trial and evaluated the proximate composition of muscle tissue, fatty acid profiles, total cholesterol (in muscle and plasma), triglycerides, and lipoprotein concentrations in Nile tilapia, Oreochromis niloticus. Five semi‐purified diets, containing different oils (soybean – SO, corn – CO, linseed – LO, fish – FO, and olive – OO), were supplied to tilapia for 160 d. Fish fed with LO and FO diets had a lower percentage of total lipids in muscle compared with the others (P < 0.05). The highest percentage of protein was found in fish fed with FO diet (P < 0.05). The muscle fatty acid profile was influenced differently by diets (P < 0.05). The group supplemented with SO and CO had a higher concentration of 18:2n‐6, whereas the fish fed with LO diet had a higher level of 18:3n‐3 and those that received the FO diet had more 22:6n‐3 in comparison with those supplemented with vegetable oils. Plasma lipid transport was also affected by the diets: the fish fed with FO diet had higher total cholesterol and high‐density lipoprotein and lower very‐low‐density lipoprotein concentrations (P < 0.05).
The effect of different dietary oil sources on the innate immunity and resistance of Nile tilapia, Oreochromis niloticus, to Streptococcus agalactiae infection were evaluated. Fish were fed with diets containing different lipid sources (soybean oil [SO], corn oil, linseed oil [LO], fish oil [FO], and olive oil [OO]). Fish fed SO presented the highest (P < 0.05) hematocrit and serum protein. LO and FO diets increased (P < 0.05) the erythrocyte resistance to osmotic lysis in comparison with other treatments. Fish fed OO showed the highest (P < 0.05) iron-binding capacity and the lowest serum lysozyme and bactericidal activities (P < 0.05). No difference (P > 0.05) was found between diets in alternative complement activity. Fish fed the SO diet had the highest (P < 0.05) survival rate against S. agalactiae challenge. In conclusion, diets with LO oil and FO, rich in -3 fatty acids, and OO, rich in -9 fatty acids, have an immunomodulatory effect in Nile tilapia juveniles. The use of SO in the Nile tilapia diet improved immune function and resistance against S. agalactiae.
RESUMO -Objetivou-se com o presente trabalho avaliar o efeito dos fatores sexo e diferentes faixas de peso ao abate (30 a 40kg, 40 a 50kg e 50 a 60kg) no teor de lipídeos e perfil de ácidos graxos (AG) da carne de capivara (Hydrochaeris hydrochaeris). (Bragagnolo, 1997). O músculo longissimus dorsi in natura de capivara apresentou média de 0,82% de lipí-deos. Houve diferença (P<0,05) entre os teores de lipí-deos de machos (0,65%) e fêmeas (1,09%). Os AG encontrados em maior proporção foram o C18:2ω6 (18,78%), C16:0 (16,38%), C18:0 (11,13%), C18:1ω9 (10,91%), C20:0 (8,43%) e C20:4ω6 (6,66%). Não houve diferença entre os teores desses AG em machos e fêmeas e nas diferentes faixas de peso ao abate. As poucas diferenças entre os fatores sexo e faixas de peso ao abate foram encontrados em AG minoritários. Comparada com as espécies domésticas (bovinos, suínos aves), a carne de capivara, neste trabalho, apresentou reduzido teor de lipídeos totais e elevada porcentagem de AG poliinsaturados. LIPID CONTENT AND FATTY-ACIDS OF CAPYBARA MEAT (Hydrochaeris hydrochaeris)ABSTRACT -This work aimed to evaluate the effect of the factors sex and different slaughter weight ranges (30-40kg, 40-50kg, 50-60kg) on the lipid content and fatty acids profiles of capybara meat. The samples were constituted of the cranial portion of the longissimus dorsi muscle of 28 capybaras (16 males and 12 females), from the same farm. The analyses were carried out at the Meats and Derived Quality Certification Laboratory of the Food Technology Institute -ITAL, in SP. The lipids were extracted using chloroform/ methanol (2:1 (v/v) mixture), following the methodology of Folch et al. (1957), and the composition of fatty acids analysed by gas chromatography (Bragagnolo, 1997). The raw loin of capybara presented 0,82% of lipids. There was significant difference (P <0,05) among the lipid content of males (0,65%) and females (1,09%). The fatty acids found in larger proportion were C18:2ω6 (18,78%), C16:0 (16,38%), C18:0 (11,13%), C18:1ω9 (10,91%), C20:0 (8,43%) and C20:4ω6 (6,66%). There was no significant difference (P>0,05) among the contents of these fatty acids in males and females, and in the different slaughter weight ranges. A few significant differences between the factors sex and slaughter weight ranges were noticed in minor fatty a cids. Comparing to the domestic species, the capybara meat analyzed in this work presented low total lipid content and high percentage of polyunsaturated fatty acids.
RESUMONo presente trabalho foi avaliado o efeito de métodos de cocção na composição química, teor de colesterol e totais de ácidos graxos de filés de Tilápias do Nilo. Os tratamentos foram cozimento em água (CA), fritura em óleo de soja (FO), assado em forno elétrico (FE), assado em forno microondas (MO), e um grupo testemunha (filés crus). O delineamento foi inteiramente casualizado, cada tratamento com 7 peixes e a unidade experimental foi um peixe (2 filés -1 para CA, FE, FO e MO, respectivamente) com relação aos crus (33,00 mg/100g). Os filés FO (P<0,05) apresentaram menores totais de ácidos graxos saturados e monoinsaturados e mostraram maior percentual de ácidos graxos poliinsaturados, quando comparados aos demais grupos. O cozimento aumenta a matéria seca, resultado da perda de água dos filés e aumento na concentração dos demais constituintes. O tratamento frito em óleo causa uma incorporação do meio (óleo de fritura) aos filés e aumenta os lipídeos totais, alterando o perfil de ácidos graxos dos filés de peixes fritos.Termos para indexação: Peixe, ácidos graxos, colesterol. ABSTRACTIn this work, the effects of different cooking methods of Nile tilapia fillets on their chemical composition, cholesterol content and total fatty acids, were studied. Cooking methods evaluated were water boiling (WB), frying in soybean oil (SO), broiling in an electric oven (EO), cooking in a microwave oven (MO) and a control group (raw fillets). The experiment was conducted as a completely randomized design, with the fish (two fillets/fish) considered as the experimental unit, and seven experimental units were used per treatment. Dry matter increased (P<0.05) in cooked fillets (23.27 % WB, 25.44 % EO, 31.93 % MO and 33.44 % SO) when compared with raw fillets (20.61 %). Total lipids were higher (P<0.05) in SO fillets (17.36 %), than in all the other treatments (6.94 % WB, 9.80 % EO, 8.66 % MO and 5.92 % raw fillets). All cooking methods increased (P<0.05) cholesterol content of the fillets (46.89 mg/100g WB, 46.46 mg/100g EO, 54.78 mg/100g SO and 57.28 mg 100g -1 MO) when compared with raw fillets (33.00 mg/100 g). Relative to all the other treatments, FO fillets had (P<0.05) lower values for saturated and monounsaturated fatty acids, and a higher percentage of polyunsaturated fatty acids. Overall, water boiling results in an increase in dry matter due to water loss in the cooking process, with higher concentration of the remaining constituents. Cooking by oil frying leads to the incorporation of oil in the fillets, with an increase in total lipids and a change of the fatty acid profile in fried fish.
CARCASS YIELDING OF Brycon cephalus IN DIFFERENT HEAD CUTS ABSTRACTThe objective of this study was to determine the carcass yielding of Brycon cephalus in different cuts of its head. The experiment was conducted in the Fish Farmer at the Federal University of Lavras, in may 2001. The experiment was in a randomized design with two treatments (head rightly cut and head obliquely cut) and twenty replications. The fish were removed from the tank with an average weigh of 840 g and were killed by temperature shock with water and ice. It was concluded that the head obliquely cut rendered the best barrel clean yielding (66%) compared to the head rightly cut (61%). In the same way, the ratio fillet/standard length also showed better results for the oblique cut compared to the right cut. INDEX TERMS:Brycon cephalus, yield, head cuts. INTRODUÇÃOO matrinxã é a denominação popular dada ao peixe da espécie Brycon cephalus, da família Characidae, originária da Bacia Amazônica, que vem sendo cultivada com sucesso na Região Sudeste do Brasil, atendendo ao crescente mercado.Entre as espécies de peixes brasileiros, o matrinxã tem despertado grande interesse aos aqüicultores e apresenta grande potencial para a piscicultura, principalmente por possuir carne saborosa, hábito alimentar onívoro, ter reprodução artificial dominada e apresentar relativa rusticidade.Segundo Graef et al. (1987), a espécie é adequada e promissora para a piscicultura, apresentando um enorme potencial de crescimento (700 a 1000g no primeiro ano) e carne nobre, em condições de cultivo.Entretanto, apesar dessas características favorá-veis ao seu cultivo, em algumas regiões do Brasil existem restrições ao seu consumo, em conseqüência da quantidade considerável de ossículos forquilhados denominados de espinhas encontrados na sua musculatura. Tal fato se reflete no preço de comercialização, conseqüentemente inibindo o desenvolvimento de sua produção.
RESUMOVisou-se com este trabalho, comparar a vida útil de presunto fatiado sem capa de gordura (condicionadas à temperatura entre -1 e 4ºC), usando os tratamentos: sistema de embalagem a vácuo (EV) e sistema de embalagem com atmosfera modificada (AM) (50% de N 2 e 50% de O 2 ), com os laminados flexíveis PET/PEBDL (AM1) e PVDC/EVA/PEBDL (AM2) sobre os parâmetros microbiológicos e físico-químicos, por 35 dias. As análises realizadas foram: contagem padrão em placas (CCP), contagem de fungos (CF), pH e umidade. Nas análises do dia inicial de trabalho verificou-se a contagem de <10 2 UFC/g de Staphylococcus aureus e para os demais microrganismos <101 UFC/g. Com relação aos tratamentos, verificou-se que a embalagem com AM estendeu em 5 dias a vida útil do produto em relação a embalagem EV. O pH inicial médio de 6,4 aumentou para 6,55; 6,58 e 6,63 nos tratamentos EV, AM1 e AM2, respectivamente. O tratamento AM2 aumentou a vida útil em relação ao AM1.Termos para indexação: Atmosfera modificada, polietileno, poliamida. ABSTRACTThe aim of this work was to compare the shelf-life of sliced ham without fat layer storage in a range of temperature between 1º and 4ºC using the following treatments: vacuum packing (VP) and packing with modified atmosphere (MA) (50% of N 2 and 50% of O 2 ) using flexible sheets of PEAD/LDPE (MA1) and PVDC/EVA/LDPE (MA2) on microbiological and physical chemical parameters for 35 days. Analysis of plate count of microorganisms, pH and humidity were conduced to evaluate the shelf-life of ham.In the first day of analyze the countings of Staphylococcus aureus had been inferior to 10 2 CFU/g and for the other microorganisms inferior to 10 1 CFU/g. The packed with modified atmosphere increased five days in the shelf-life of the product when compared to vacuum packing. The initial pH (6.4) increased to 6.55, 6.58 and 6.63 on VP MA1 and MA2, respectively. The treatment MA2 increased the shelf-life when compared to modified atmosphere (1).
Comunicação [Communication]Efeito do peso ao abate nos rendimentos dos processamentos do pacu (Piaractus mesopotamicus) [ (Vaz et al., 2000). Segundo Carvalho e Lemos (2009), o consumo de peixes no Brasil é um dos mais baixos do mundo, representando apenas 5% das carnes consumidas. Entre os fatores que contribuem para isso está a forma de apresentação dos peixes nativos brasileiros para comercialização, que pode limitar o consumo, principalmente devido à não padronização do produto.Relacionado à agregação de valores está primordialmente o processamento do pescado, que é considerado fator de grande valia no mercado consumidor. Para a indústria, a qualidade da carcaça do pescado é fator imprescindível para definição dos processos de preparação dos produtos e dos tipos de cortes. O rendimento de filé, além da eficiência das máquinas filetadoras ou da destreza manual do operário, depende de algumas características intrínsecas à matéria-prima, ou seja, da forma anatômica do corpo, do tamanho da cabeça e do peso dos resíduos − vísceras, pele e nadadeiras (Contreras-Guzmán, 1994 A forma externa do corpo do peixe tem grande importância na escolha do processamento realizado pela indústria, pois influencia nas operações de decapitação, evisceração e limpeza geral, que podem ser por métodos manuais ou mecanizados, no dimensionamento das caixas, de câmaras e de outros implementos para a armazenagem, na adequação e no rendimento da carne quando pré-processada na forma de corpo limpo, postas e filés, e na velocidade de resfriamento e de congelamento na indústria (Contreras-Guzmán, 1994 O rendimento do filé aumentou conforme aumentou a classe de peso dos peixes, estando próximo ao rendimento de filé encontrado em tilápia-do-nilo, com 32% (Santos, 2004), e mais baixo que o rendimento de filé do bagre-do-canal (Ictalurus puntactus), com 39,5% (Marengoni et al., 1998), e da piracanjuba, 44,2% (Freato, 2005). Segundo Contreras-Gusmán (1994), essa diferença de rendimento de filés deve-se à superioridade do rendimento das partes comestíveis em peixes fusiformes, em relação aos peixes compridos.A %VIS aumentou em função do aumento da classe de peso, até atingir o máximo de 15,4%, em peixes com peso médio de abate de 850g. Esse aumento deve-se, provavelmente, à proximidade da maturidade sexual, uma vez que foi considerado como víscera todo o conteúdo da cavidade celomática, incluindo as gônadas e a gordura celomática.Diante dos resultados, sugere-se que peixes destinados ao processo de filetagem devem ser abatidos, preferencialmente, com pesos mais elevados, e que os peixes a serem comercializados na forma de carcaça ou inteiros eviscerados podem ser abatidos com pesos menores.
