RESUMOForam utilizados 36 cordeiros machos inteiros, sendo 24 da raça Santa Inês e 12 da raça Bergamácia, os quais entraram no experimento com 15kg e foram distribuídos aleatoriamente nos grupos de peso ao abate (GPA) de 15, 25, 35 e 45kg. O objetivo do trabalho foi avaliar o declínio do pH post-mortem, cor (CIE L*a*b*), perda de peso por cozimento (PPC) e força de cisalhamento (FC) nos músculos longissimus dorsi (LD) e semimembranosus (SM). Os parâmetros estudados foram submetidos à análise de regressão. O valor de pH para ambos os músculos foi expresso através de equações de regressão do tipo exponencial, apresentando uma rápida queda nas primeiras horas, seguido de estabilização. No músculo LD foi encontrado que a glicólise desenvolveu-se mais rapidamente com o aumento do peso. A análise dos componentes da cor para ambos os músculos estudados apresentaram o mesmo comportamento. A raça Bergamácia apresentou maior índice de luminosidade (L*), ou seja, maior brilho. O valor de L* diminuiu, o teor de vermelho (a*) aumentou e o teor de amarelo (b*) diminuiu linearmente em relação ao aumento do peso. A análise geral dos componentes da cor indicou que a carne de cordeiro é mais escura com o aumento do peso. Os resultados das análise de PPC e FC foram similares entre as raças e GPA, os valores obtidos para PPC foram de 28,0±2,5% (LD) e 30,5±4,1% (SM), para FC foram de 2,6±0,6kg (LD) e 2,8±0,7kg (SM).Palavras-chave: cordeiro; carne; qualidade. SUMMARYEFFECT OF THE SLAUGHTER WEIGHT ON THE PHYSICAL-CHEMICAL CHARACTERISTIC OF BERGAMÁCIA AND SANTA INÊS LAMBS MEAT. Thirty-six whole male lambs were used, being twenty-four of Santa Inês breed and twelve of Bergamácia breed, which weighed 15kg at the very beginning of the experiment, and were randomized allocated into slaughtering weight groups (SWG) of 15, 25, 35 and 45kg. The objective of this work was to evaluate the pH post-mortem decline, color (CIEL* a* b*), cooking weight loss (CWL) and shearing force (SF) in the longissimus dorsi (LD) and semimembranosus (SM) muscles. The examined parameters were submitted to a regression analysis. The value of pH for both muscles was expressed by regression equation of exponential type, presenting a fast fall in the first hours, followed by stabilization. The LD muscle glycolisis rate was found to develop more quickly with an increase in weight. The analysis for color components for both examined muscles presented the same behavior. The breed Bergamacia presented larger index lightness (L*), that is to say, larger brilliance. The value of L* decreased, the red content (a*) increased and the yellow content (b*) linearly decreased as the weight increased. The general analysis for color components had indicated that lamb becomes darker with weight increase. RESUMO -Propôs-se avaliar os parâmetros de qualidade pH, cor, perda de peso por cozimento (PPC) e força de cisalhamento (FC) no músculo Longissimus dorsi (LD) e Semimembranosus (SM) de 13 cordeiros machos e 14 fêmeas Santa Inês puro (SI x SI) e o mesmo número de animais Texel x Santa Inês (T x SI), abatidos com 15, 25, 35 e 45 kg PV. A carcaça foi resfriada por 24 horas a 2ºC, realizando-se, durante este período, as medidas de pH. Retiraram-se os músculos LD e SM para as análises de cor, PPC e FC. Utilizou-se um DIC, fatorial 2x2x4, e as médias foram analisadas pelo Proc GLM do programa estatístico SAS. As medidas de pH foram analisadas em parcela subdividida. A queda do pH no LD e SM foi mais acentuada para os animais mais leves. A carne das fêmeas T x SI apresentou pH final maior que a dos machos e cordeiros SI x SI. A luminosidade diminuiu e a intensidade da cor vermelha elevou-se com o aumento do peso de abate. A carne dos machos e dos cordeiros SI x SI apresentou coloração mais vermelha e menos luminosa no LD e SM. A PPC foi menor na carne dos cordeiros mais pesados; no músculo LD, dos machos houve menor perda de água que nos das fêmeas. Os machos tiveram carne mais dura e, com o aumento do peso de abate, houve diminuição de FC, sendo maior para o T x SI para o músculo LD e Santa Inês puro para o músculo SM.Palavras-chave: ovinos, músculos, cor, cozimento, maciez, pH Quality of Meat Production of Purebred Santa Inês and Crossbred Texel x Santa InêsLambs at Different Slaughter Weights ABSTRACT -The objective of this study was analyze the colour, pH, weight loss by cooking (PPC) and shear force (FC) of the Longissimus dorsi (LD) and semimembranosus (SM) muscles of Santa Inês (SI x SI) and Texel x Santa Inês (T x SI) lambs, slaughtered at different live weights. Thirteen males and fourteen females were slaughtered at 15, 25, 35 and 45 of live weight. The carcasses were kept during twenty-four hours at 2 o C and during that time the pH was measured. A completely randomized design in a latin square (2x2x4) arrange for analyse of colour, PPC and FC was used. Split plot arranged was used for the pH values analysis. The decrease of pH of both muscles (LD and SM) was greater in the lighter animals. T x SI females meat showed higher pH values than SI x SI males lambs. The lightness values increased and darkness was lower when the slaughter weight increased. The muscles (LD and SM) of the SI x SI males were reader and darker. The PPC was lower in the heaviest animals and in the LD muscle it was lower in the female lambs. Male lambs muscles lost more water were harder than of the females muscles. The decrease of the FC was related to the increase in the slaughtering weight, and this effect was higher in the LD muscle of T x SI animals and in the SM muscle of the SI x SI animals.

Essas alterações influenciam a preferên-cia dos consumidores e, dentre os atributos que se relacionam com a aceitação da carne, a cor é associada com o frescor do corte e a idade de abate do animal, a maciez determina a aceitação do corte, e, a perda de peso por cozimento é associada ao rendimento após o preparo.As características de cor, maciez e rendimento são influenciados por fatores: ante mortem (sexo, raça, idade de abate e alimentação) e post mortem (tempo e temperatura de resfriamento e armazenamento) [1,4,5,12,14,16,17,27,35]. Considerando os aspectos ante mortem, DRANSFIELD, NUDE & HOGG [10] descreveram que os efeitos da raça apresentam baixa intensidade e podem ser explicados por diferenças na maturidade em decorrência de maior ou menor precocidade e que o peso ao abate pode afetar a qualidade, desde que a diferença entre os pesos seja suficiente para influenciar na maturidade fisiológica do animal. Entretanto, SAÑUDO et al. A study was conducted to characterize lipid profiles in the M. longissimus thoracis of commercial Brazilian beef and to assess how those profiles are influenced by finishing system, genetic group, and their interaction. Intramuscular fat (IMF) and fatty acid (FA) profiles were determined in 160 bulls of the Bos taurus (n = 75) and Bos indicus (n = 85) genetic groups, finished on pasture (n = 46) or with grain supplementation (n = 114) and slaughtered in a commercial abattoir. Finishing system had a major impact on the deposition of IMF, as well as on the concentration of SFA, PUFA, and their ratio, but genetic groups showed important differences in the ability to convert SFA into cis-9 MUFA and to convert 16:0 into 18:0. When compared with pasture-finished animals, those finished with grain had greater content of IMF and SFA (P < 0.01), similar amounts of MUFA (P > 0.05), and about one-half the amount of PUFA (P < 0.01). Except for MUFA, differences in FA profiles among finishing systems were mostly mediated through their effect on IMF, even though the relationship of IMF with groups of FA differed among finishing systems. Under grain finishing, B. taurus had less SFA and greater MUFA than B. indicus (P < 0.01), but no differences were observed in PUFA (P > 0.05). With pasture-finishing, no differences were observed among the 2 genetic groups in SFA and MUFA (P > 0.05), but PUFA were decreased in B. taurus (P < 0.01). When genetic groups were compared in grain-finishing, B. taurus had a decreased ability for elongation and B. indicus had a decreased aptitude for desaturation of FA. On the other hand, with pasture-finishing a greater deposition of intermediate FA from ruminal biohydrogenation was observed in B. indicus than in B. taurus. Overall, FA profiles were affected more by finishing system in B. indicus than in B. taurus.
RESUMO -Neste trabalho foram avaliadas as características físico-químicas da carne de frangos de duas linhagens (Paraíso Pedrês e Pescoço Pelado) criados em sistema semiextensivo, machos e fêmeas, abatidos aos 65, 75, 85 e 95 dias. As características analisadas nos cortes peito e coxa foram umidade, proteína, extrato etéreo, cinzas, cor (CIEL*a*b*), pH final e perda de peso por cocção. As fêmeas da linhagem Paraíso Pedrês apresentaram no peito mais gordura (0,86%) em comparação aos machos das linhagens Paraíso Pedrês (0,63%) e Pescoço Pelado (0,57%). A coxa das aves da linhagem Pescoço Pelado aos 85 dias apresentou maior umidade e menor porcentagem de gordura em comparação à linhagem Paraíso Pedrês, e aos 95 dias, as fêmeas Paraíso Pedrês apresentaram mais gordura que os machos. A cor amarela (b*) no peito foi mais intensa nas aves Pescoço Pelado (6,24) que nas aves Paraíso Pedrês (5,41). Também foi mais intensa nas fêmeas (6,47) que nos machos (5,18). A cor da coxa nas aves Pescoço Pelado foi mais amarelada aos 95 dias (6,87) que aos 85 dias (5,90). Aves da linhagem Pescoço Pelado podem fornecer cortes mais magros, no caso dos machos, e com coloração mais amarelada, no caso das fêmeas, que aves da linhagem Pescoço Pelado.Palavras-chave: composição proximal, cor, cortes, frango caipira Physical-chemical characteristics of meat in chickens of the Paraíso Pedrês and Label Rouge linesABSTRACT -The objective of this study was to evaluate the physical and chemical characteristics of chicken meat from two lines (Paraíso Pedrês or Label Rouge and Pescoço Pelado), raised in a semi-extensive system, and slaughtered at 65, 75, 85 and 95 days of age. The variables assessed in the breast and leg of experimental animals were moisture, protein, fat, ashes, objective colour (CIEL*a*b* system), final pH and cooking loss. The breast of Paraíso Pedrês females showed a higher fat content (0.86%) than in males of the Paraíso Pedrês (0.63%) or Pescoço Pelado (0.57%) lines. In the leg, Pescoço Pelado chicken slaughtered at 85 days showed higher moisture and lower fat than the Paraíso Pedrês line, while Paraíso Pedrês females at 95 days presented more fat than males at the same age. In the breast, the yellow colour (b*) was more intense in Pescoço Pelado (6.24) than in Paraíso Pedrês (5.41), and in the females (6.47) than in the males (5.18).The leg color in the Pescoço Pelado birds was more yellow at 95 (6.87) than at 85 days (5.90). -The objective of this study was to characterize meat quality in Bos taurus and Bos indicus and to determine the influence of finishing system and genetic group on the physicochemical properties of the longissimus thoracis at 24 hours and 10 days post mortem (1ºC). The sample included 160 bulls of the B. taurus (n=75) and B. indicus (n=85) groups, finished either on pasture (n=46) or with grain supplementation (n=114), slaughtered at a carcass weight of 270 to 300 kg. Pasturefinished animals had higher pH, lower red content and a fat content 2.5 times lower than those finished with supplementation.Meat from supplement-finished animals had lower shear force in comparison to that from animals finished on pasture, with means of 7.7 and 8.5 kg at 24 hours, and of 5.5 and 5.9 kg at 10 days, respectively. Samples of B. taurus and B. indicus were similar in moisture and protein, but B. taurus presented higher means for ash and lower means for fat. Aged samples of B. indicus finished on pasture showed lower values for lightness and yellowness. Overall, lightness and yellow content increased and red content decreased with 10-day ageing.
