Essas alterações influenciam a preferên-cia dos consumidores e, dentre os atributos que se relacionam com a aceitação da carne, a cor é associada com o frescor do corte e a idade de abate do animal, a maciez determina a aceitação do corte, e, a perda de peso por cozimento é associada ao rendimento após o preparo.As características de cor, maciez e rendimento são influenciados por fatores: ante mortem (sexo, raça, idade de abate e alimentação) e post mortem (tempo e temperatura de resfriamento e armazenamento) [1,4,5,12,14,16,17,27,35]. Considerando os aspectos ante mortem, DRANSFIELD, NUDE & HOGG [10] descreveram que os efeitos da raça apresentam baixa intensidade e podem ser explicados por diferenças na maturidade em decorrência de maior ou menor precocidade e que o peso ao abate pode afetar a qualidade, desde que a diferença entre os pesos seja suficiente para influenciar na maturidade fisiológica do animal. Entretanto, SAÑUDO et al. [25] citam que carcaça que varia de 8-27kg apresentam, nessa faixa, variações sobre a cor, a maciez, a perda de peso por cocção e o sabor.A influência de fatores como grupos genéticos, sexo e grupo de peso ao abate sobre a qualidade de carne de ovinos foi estudada em algumas raças por: A raça Santa Inês tem mostrado, nos últimos anos, uma ampla expansão nas regiões Norte e Nordeste do Brasil, pois, além da aptidão para a produção de carne e pele, essa raça demonstra boa adaptação a regiões áridas [3].O objetivo deste estudo foi avaliar o efeito dos fatores grupo genético, sexo e grupo de peso ao abate sobre o pH post mortem, a cor, a perda de peso por cozi- In the cooking losses LD and SM muscles showed no significant effect of the breed group, sex and slaughter weight group. The factors studied shear force had no effect on SM muscle. However, the slaughter weight group had effect on the shear force (P<0.005) of the LD muscle, with slaughter weight groups of 15 and 25kg showing higher shear force (13.57 and 10.98kgf, respectively) than slaughter weight groups of 35 and 45kg (8.56 and 7.97kgf, respectively). EFEITOS DO GRUPO GENÉTICO, SEXO E PESO AO ABATE SOBRE AS PROPRIEDADES FÍSICO-QUÍMICAS DA CARNE DE CORDEIROS EM CRESCIMENTO
RESUMO - O objetivo deste trabalho foi avaliar o desempenho de cordeiros e cordeiras cruzas Texel x Bergamácia (T x B), Texel x Santa Inês (T x S) e Santa Inês (SI) puros. Trinta e seis animais foram confinados individualmente, durante um período de 50 dias, recebendo, além de silagem de capim elefante, três dietas: A = sem casca de café (controle), B = com casca de café in natura e C = com casca de café tratada com uréia e grão de soja moído. Os animais foram abatidos com idade média de 180 dias. Consumos de matéria seca (CMS), proteína bruta (CPB) e fibra em detergente neutro (CFDN), conversão alimentar (CA), peso final (PF), ganho de peso diário (GPD), peso de abate (PA), diferença de peso devido ao jejum (DPJ), conteúdo do aparelho digestório (CAD) e peso do corpo vazio (PCV) foram avaliados. A utilização de casca de café na dieta, tratada ou não, não influenciou os consumos de MS, PB, PF, GPD, CA, PF, GPD, PA, DPJ, CAD e PCV. O consumo de FDN aumentou com a utilização da casca de café, sendo menor para os animais que consumiram a dieta contendo casca de café tratada com uréia. Os animais cruzas T x B e T x S apresentaram menores consumos MS, PB e FDN e maiores PF, PA, CAD e PCV, comparados aos cordeiros SI. Não foi observada diferença entre os grupos genéticos para CA, GPD e DPJ, apesar dos valores ligeiramente maiores, mas não-significativos, para CA e GPD dos cordeiros T x B e T x S. Os machos apresentaram valores inferiores de consumos de MS, PB, FDN e CA e superiores para PF, GPD, PA e PCV que femeas. Machos e fêmeas mostraram-se semelhantes para DPJ e CAD.
O trabalho foi conduzido no Setor de Ovinocultura do Departamento de Zootecnia da UFLA, em Lavras, com o objetivo de estudar o crescimento alométrico dos tecidos ósseo, muscular e adiposo dos cortes comerciais em cordeiros. Foram utilizados 24 cordeiros machos inteiros da raça Santa Inês. Os animais foram submetidos a regime de confinamento e receberam alimentação ad libitum. O abate ocorreu quando os animais atingiram os pesos vivos de 15, 25, 35 e 45 kg. Após a carcaça ter sido limpa e resfriada, foram obtidos os cortes comerciais a partir da meia carcaça esquerda. A quantidade dos diferentes tecidos foram obtidos por intermédio da dissecação de perna, lombo, costeleta, costela/ fralda e paleta. O estudo do desenvolvimento relativo da composição tecidual foi feito por meio do modelo de HUXLEY (1932). Constatou-se crescimento heterogônico negativo (b < 1) para o tecido ósseo e heterogônico positivo (b > 1) para o tecido adiposo de todos os cortes. Quanto ao tipo de crescimento do tecido muscular da costela/fralda e paleta, foi verificado crescimento isogônico (b=1) deste tecido em relação aos cortes.
A number of studies have shown that dietary omega-6 and omega-3 long-chain fatty acids can be incorporated into muscle tissue of ruminants despite the biohydrogenation of dietary fatty acids in the rumen. The main focus of this review is on eicosapentaenoic (20:5n-3) and docosahexaenoic (22:6n-3) fatty acids because health authorities around the world consider the sum of these fatty acids as the basis of classifying a food as a source or good source of omega-3 polyunsaturated fatty acids (PUFAs). A high proportion of polyunsaturated fatty acids are hydrogenated in the rumen, leading to a higher concentration of 18:0, but some escapes the rumen to be absorbed intact by the small intestine. Feeding strategies for ruminants have been successfully applied to increase the absorption of PUFAs in the small intestine and therefore to increase the levels of PUFAs in muscle tissue. Protected fats and algae are strong candidates to improve the nutritional value of red meat in ruminants in terms of health-claimable omega-3 fatty acids. Efforts to understand the genetic basis of fatty acid metabolism have been underway. The knowledge of the main genes which control the output of omega-3 fatty acids is still lacking, but gene expression studies have helped to explain the deposition of these acids in muscle, liver, and subcutaneous fat.
RESUMOFunções de crescimento não-lineares foram ajustados a dados de peso-idade de 40 cordeiros das raças Santa Inês e Bergamácia. Pelos testes de Hartley e de Bartlett, verificou-se que os dados apresentavam heterogeneidade de variâncias; em função disso, ajustaram-se as funções de crescimento pelo método dos quadrados mínimos ponderado pelo inverso da variância dos pesos a cada pesagem utilizando a opção WEIGTH do PROC MODEL (SAS INSTITUTE, 1996). As funções de crescimento foram comparadas pela interpretação biológica dos parâmetros e pelos indicadores de qualidade do ajuste (coeficiente de determinação ajustado, quadrado médio do resíduo e teste de Durbin-Watson). As funções de von Bertalanffy e Gompertz apresentaram a melhor qualidade de ajuste, ao passo que as funções de Richards, Logística e Brody não se mostraram adequadas para descrever o crescimento dos animais por apresentarem estimativas não condizentes com a realidade.Termos para indexação: Curva de crescimento, regressão ponderada, cordeiro. ABSTRACTNon linear growth functions were fitted to weight-age data of 40 Santa Inês and Bergamacy lambs. The Hartley and Bartlett tests indicated that the data presented heteroscedastic variance, so the growth functions were fitted through weighted minimum square method by the inverse variance weight in each sampler using the WEIGHT option in PROC MODEL (SAS INSTITUTE, 1996). The functions were compared using the biological interpretation of the parameters and the quality indicators of fit (adjusted determination coefficient, mean square error and Durbin-Watson test). The von Bertalanffy and Gompertz functions provided the best fittings, whereas Richards, Logistic and Brody functions turned out not to be suitable for describing growth behavior, became estimates based on them do not agree with observation.
RESUMO -Objetivou-se avaliar a produção, a composição e o rendimento (na fabricação de queijos) do leite de ovelhas Santa Inês tratadas ou não com ocitocina. Os animais foram mantidos em regime de confinamento e receberam uma dieta com 12% de PB e 65% de NDT. As ovelhas foram distribuídas em dois tratamentos: ordenha manual com injeção endovenosa de três UI de ocitocina e ordenha manual sem injeção de ocitocina (grupo controle). Realizou-se uma ordenha diária, de modo que, até a desmama, as ovelhas permaneceram diariamente com os cordeiros durante 14 horas. Os cordeiros foram desmamados aos 60 dias e as ovelhas continuaram sendo ordenhadas uma vez ao dia até o final da lactação. Foram coletadas amostras de leite para análise dos teores de gordura, de sólidos totais e de sólidos desengordurados. A duração média da lactação foi de 225±27,24 e 210±38,77 dias para as ovelhas controle e tratadas com ocitocina, respetivamente. Até os 133 dias de lactação, o tratamento com ocitocina (141,63±51,52 kg) foi superior ao controle (89,39±16,65 kg), entretanto, durante todo o período de lactação, não diferiu (169,64 ± 71,05) do controle (119,72±32,73). As porcentagens de gordura (5,84±0,44 e 4,96±0,47), sólidos totais (17,40±0,42 e 16,18±0,57) e sólidos desengordurados (11,57±0,15 e 11,22±0,25) no leite foram influenciadas pela aplicação de ocitocina. Os resultados revelaram diferença significativa para as ovelhas tratadas com ocitocina, as quais apresentaram maior produtividade e, inclusive, melhor composição química do leite. A aplicação de ocitocina é recomendada para animais não adaptados à rotina de ordenha. O leite das ovelhas Santa Inês apresentou rendimentos de 4,80; 8,29 e 5,99 L/kg para os queijos tipo azeitão, pecorino e roquefort, respectivamente.Palavras-chave: gordura, hormônio, lactação, ovino Effects of oxytocin on milk yield and composition of Santa Inês ewesABSTRACT -The objective of this trial was to investigate the effects of oxytocin on milk yield and composition and on cheese yield of Santa Inês sheep receiving a diet containing 12% CP and 65% TDN. Animals were maintained in pens and were assigned to one of the following two treatments: hand milking plus an intravenous injection of 3 IU of oxytocin or hand milking without oxytocin injection (control group). Ewes were milked daily and remained with their lambs for a daily period of 14 hours until weaning; lambs were weaned at 60 days of age and ewes still milked once a day until the end of lactation. Milk samples were collected for analysis of fat, total solids, and solids non-fat. Lactation length averaged 225±27.24 and 210±38.77 for control and oxytocin-treated ewes, respectively. RESUMO -Foram utilizados 21 cordeiros das raças Santa Inês e Bergamácia, confinados por um período de 75 dias, sendo alimentados com dietas contendo 24% de dejetos de suínos, na forma de biju (dejeto obtido pela raspagem e varredura do piso das baias de crescimento e terminação) ou dejeto peneirado seco -DPS (dejeto obtido através da peneiração da parte sólida do material contido na lâmina d'água e na água da lavagem das baias). Os animais foram abatidos aos 210 dias de idade, sendo determinados o peso e o rendimento das carcaças, suas mensurações e o peso dos cortes comerciais. As diferentes dietas não afetaram o peso ao abate (PA), peso de carcaça quente (PCQ), rendimento de carcaça quente (RCQ), peso de carcaça fria (PCF), rendimento de carcaça fria (RCF) e percentual de perda ao resfriamento (PPR). Os cordeiros da raça Bergamácia apresentaram maior PA, PCQ e PCF. Não foram verificadas diferenças entre as dietas ou entre as raças para os parâmetros: comprimento total, comprimento da perna, comprimento total da perna, comprimento interno, perímetro da garupa e largura de garupa. No entanto, foi verificada maior profundidade de tórax e espessura de gordura subcutânea nos cordeiros da raça Bergamácia. Também não foi encontrado nenhum efeito das dietas e das raças para os cortes paleta, carré, peito/fralda, lombo, pernil, braço anterior e braço posterior. The animals were slaughtered at 210 days of age, being determined the weight and measures of carcass, dressing percentage and commercial joints. There was no diet effect on the slaughter weight (SW), hot (HCW) and cold (CCW) carcass weights, hot (HCD) and cold (CCD) carcass dressing and percentage of cold loss (PCL). The lambs of Bergamácia breed showed larger SW, HCW and CCW. There was no differences among the diets or among the breeds for the parameters: total length, length of the leg, total length of the leg, internal length, perimeter of the croup and croup width. However, larger thorax depth and thickness of sub-coetaneous fat was verified in the Bergamacia lambs. There was no effect of the diets and breeds for the joints whole shoulder, rib, breast/diaper, loin, ham and previous and posterior arms.
RESUMO Performance of Santa Inês Lambs and its Crosses with Texel, Ile de France e Bergamacia LambsABSTRACT -The work was carried out to evaluate the effect of animal sex, genetic group and slaugher weight on fedlot lambs performance. One hundred and three male and female lambs, purebred Santa Inês (SS) and crosses between Santa Inês and Texel (TS), Ile de France (FS) and Bergamacia (BS) were fedlot in individual cages. Diet and orts were daily collected to calculate the intakes of dry matter (MS), metabolizable energy (EM), digestible protein (PD) and neutral fiber detergent (FDN). The lambs were slaughtered at four weights: 15, 25, 35 and 45 kg of live weight. Weight gain (GPD), number of days in confinement (ND), feed:gain ratio (CA) and intakes of MS, PD, EM and FD were analyzed during three growing phases: 15 to 25 kg (1), 25 to 35 kg (2) and 35 to 45 kg (3), for each genetic group and each sex. The slaughter age (IA) and the empty body weight (PCVZ) were also analyzed. At high weights, TS and FS male lambs showed inferior IA, and the female lambs, superior IA. ND of BS lambs from 35 to 45 kg was superior than TS lambs. From 35 to 45 kg, PCVZ of TS and FS lambs was inferior. The best GPD was observed for TS lambs, followed by FS and SS. The intakes of MS, PD, EM and FDN were similar among the genetic groups, during the phases 1 and 2. TS lambs intake tended to increase as body weight increased, whereas the other groups showed tended to decrease. CA increased as slaughter weight increased. The males did not show differences in CA among the genetic groups, but TS and FS females showed better results. At 35 and 45 kg, the females showed superior RC than the males. At 35 kg, the TS males showed better RC than the other groups.
