Mit Hilfe einer modifizierten Xylenolmethode sowie mit p‐Kresol wurde der Nitratgehalt von Spinat und anderen Gemüsearten überprüft, die bei der Herstellung von Säuglingsfertignahrung auf Obst‐ und Gemüsebasis Verwendung finden. Hierbei zeigte sich, daß die empfohlenen Grenzwerte von 300 mg NO−3/kg Frischware bei Spinat und einigen anderen nitratspeichernden Gemüsearten um ein Vielfaches überschritten werden. Die Aufgaben des vorbeugenden Gesundheitsschutzes verlangen, auf die landwirtschaftliche Produktion einzuwirken, um die z. Z. noch bestehenden Kulturfehler zu beseitigen und somit eine Gefährdung der Gesundheit der Kleinstkinder durch extrem hohe Nitratwerte zu verhindern.
It is reported of the uptake of lead, cadmium and mercury by cultivated mushrooms (Agaricus bisporus) from lead, cadmium and mercury-containing substrates. Cd and Hg were observed to accumulate significantly via the mycelium, whereas Pb accumulated scarely, even if the Pb contents in the substrate were high. High lead concentrations in wild mushrooms, therefore, are likely to be mainly due to emissions; whereas, with Cd and Hg, uptake from the soil must also be considered.
An Hand einer Literaturübersicht wird über Probleme der Nitratakkumulation und ‐reduktion, über die pharmakodynamische Wirkung des Nitrits sowie über den Nitritgehalt von Spinat und dessen Zunahme während der Lagerung berichtet. In eigenen Versuchen werden Spinatblätter unter verschiedenen Bedingungen 4 Tage gelagert und die Nitritzunahme sowie mikrobiologische Veränderungen verfolgt. Die Ergebnisse zeigen ein Nitritmaximum am 3. Tag, das von den Lagerbedingungen abhängig ist. Keimzahl und Colizahl sind ebenfalls von der Art der Lagerung abhängig und nehmen in allen Fällen zu. Von den nitratreduzierenden Mikroorganismen sind Hafnia und Aerobacter aerogenes besonders zahlreich vertreten.
Mit Hilfe der Square-wave-Polarographie wurde der Gehalt von Pilzen an Kupfer. Blei. Cadmium und Zink bestimmt. Pilzproben von einem 800 m von einer Buntmetallhatte entfemten Fundort ergaben bei Uberwiegend holzwachsenden F'ilzen 130-185 pg Cu, 56-178 pg Pb, 4.5-33,7 pg Cd und 120-1170 pg Zn je I g Trockensubstanz. Die Werte liegen 5-bis Iomal so hoch wie die von Pilzproben aus 5 km von der Htitte entfernten Fundorten. Der Schwernietallgehalt von Pilzen kann somit zur Abschiitzung der Ausdehnung von Pb, Zn. Cd und Cu-Immissionen herangezogen werden. &fit groBem Erfolg wurden in den letzten Jahren bestimmte niedere [1-9] und hohere [IO-13, 171 Pflanzen als Indikatoren zum Erkennen von Schadstoffen in der Luft eingesetzt. Diese Methode gibt sowohl Auskunft uber die Intensitat als auch uber die flachenmUige Ausdehnung einer Luftverunreinigung. Als Kriterien konnen in Betracht kommen : -h3erlich sichtbare Schtidigungen der Pflanzen, -Anreicherungen von Schwermetallionen in den Pflanzenorganen. Erste systematische Untersuchungen an Moosen in den skandinavischen Lhdern, insbesondere in Zentralschweden , wiesen darauf hin, daB bespielsweise in betrtichtlichem MaBe Blei und andere Schwermetalle mit dem Wind und dem Regen aus Westeuropa bis in diese Regionen getragen werden [14]. Die gleiche Untersuchungsmethodik wurde auch in Wales zur Beurteilung der Schwermetallimmissionen von Buntmetallhutten angewendet [IS].Im Rahmen unserer Untersuchungen uber den Gehalt von Schwermetallen in Kulturpflanzen fanden wir, daB dieser erwartungsgemlB besonders hoch in Pilzen ist. Es sollte deshalb gepriift werden, inwieweit es miiglich ist, auch Pihe als Indikatoren far die Beurteilung von Immissionen in der Umgebung von Huttenbetrieben heranzuziehen !16].
Expevimentellev Teil ProbenvorbeveitulzgParallel hierzu erfolgte die Bestimmung der Trockensubstanz bei 105 O C .Die Pilze wurden geschnitten, bei 60-70 OC getrocknet und in einer Schlagmtthle gemahlen.
derfscut4pEs wurde ein kombinierter TrockenaufschluB angewendet : 0.5 g Trockensubstanz wurden zungchst mit H, SO, conc. verkohlt, mit Mg(NO,), und HNO, behandelt und bei 450-500 "C im Muffelofen vollsthdig mineralisiert.
