Gezien de relatief grote spreiding in nitraatgehalten van b.v. spinazie mogen stikstofbemestingsadviezen die erop gericht zijn het overschrijden van een bepaald nitraatgehalte in het geoogste gewas te voorkomen niet gebaseerd worden op de gemiddelde nitraatgehalten die in bemestingsproeven per stikstoftrap worden gevonden.Dit proefschrift.4. Verschuiving van de oogst van spinazie van 's ochtends vroeg naar een later tijdstip op de dag leidt niet noodzakelijkerwijs tot lagere nitraatgehalten en biedt in verband met de verdere verwerking van het produkt eerder na-dan voordelen.5. De overwegend hoge nitraatgehalten van kasgroenten in de wintermaanden zijn eerder een gevolg van de heersende lichtomstandigheden en het kasklimaat dan van het gevoerde bemestingsbeleid.6. In het kader van de nitraatproblematiek is het aanbevelen van een gevarieerde voedselkeuze en het opstellen van richtlijnen ten aanzien van het bewaren en bereiden van bepaalde groenten vooralsnog zinvoller dan het aan een maximum binden van het nitraatgehalte van een aantal 'probleem'groenten.7. Aus der Literatur ist bekannt, daß es bei falscher individueller Zubereitung von Spinatbreien zu Nitritintoxikationen kommen kann. Es galt zu untersuchen, inwieweit bei der Herstellung industrieller Säuglingsfertignahrung solche Möglichkeiten bestehen. An Hand von Stufenkontrollen wurden die Gesamtkeimzahl, Colizahl, Nitrat‐ und Nitritkonzentration in den einzelnen Produktionsstufen verfolgt. Obwohl die Verweildauer des Breies innerhalb der Produktionslinie recht kurz ist, traten erhebliche Keimanstiege auf, die auf Reinfektionen zurückzuführen sind. Die Nitritbildung, hervorgerufen durch die mikrobiologische Nitratreduktion, ist sehr gering, verdoppelt sich aber in der Produktionsstufe zwischen Abfüllung und Autoklavierung. Diese Phase von der Abfüllung zur Autoklavierung sollte kontinuierlich gestaltet bzw. die Stehzeit auf ein Minimum reduziert werden, um Nitritbildungen zu vermeiden. So war gerade diese Produktionsphase in der Vergangenheit oft Anlaß zu Fehlproduktionen durch Nitrit‐bzw. NO‐Bildung in der Konserve.

During the years 1972--1975, the author performed nitrate determinations, using the xylenol method according to E. Bohm, to verify if the standard or maximum permissible values established by the Ministry for Health of the GDR in 1972-1973 for spinach and spinach preserves for babies had been respected. The relative standard deviation of the method is +/- 5%. The values found in spinach samples of the same harvest and from the same area varied considerably (up to +/- 40% of the mean). Taken altogether, the nitrate content, especially in autumn spinach, exceeded by far the maximum permissible values for baby food as well as for general consumption in spite of contractual agreement with the farmers on the use of nitrogenous fertilizers. It is recommended to study systematically all the factors of nitrate accumulation in order to secure safe spinach products.
