Na última década, os produtos lácteos vêm exercendo um papel significativo no segmento do mercado de alimentos funcionais, destacando-se as bebidas lácteas fermentadas. Consumidos em diversas partes do mundo pela sua atratividade promotora de saúde, os leites fermentados possuem aspectos comuns de fabricação, diferindo-se pela microbiota envolvida na fermentação, podendo alguns destes micro-organismos serem probióticos. A adição de vitaminas, minerais, prebióticos, ácidos graxos, fitoquímicos, enzimas, antioxidantes, etc., promovem o aumento do consumo de leites fermentados pelos consumidores que buscam um estilo de vida aliado a saudabilidade e prevenção de doenças, além disso, o consumo de outros tipos de leite não bovino, como o leite de jumenta e camela, e a inclusão de proteínas vegetais e animais, expressam novas tendências de fontes alternativas e de enriquecimento aos leites fermentados.
Vegetable foods have biological properties and can be considered potentially functional or health promoting foods. In plant species, proteins are of great interest, they are present in different parts of their structure. Some of its functional properties are attributed to biologically active peptides and proteins, for this activity requires hydrolysis of proteins by digestion: enzymatic, fermentation or autolysis. In addition, proteins of plant origin exert antioxidant power in products, adding value to products. In the food sector, the demand for natural antioxidants is increasing, as well as adding nutritional value and low cost. The objective of this work is to evaluate, on a literary basis, the beneficial health properties provided by proteins of plant origin.
The objective of this work was to analyze the content of bioactive compounds extracted from the carrot, through an experimental design of 3 factors, 3 levels and two axial points, including extraction time (17-37-57min), temperature (30-50-70ºC) and ethanol concentration (50-65-80%). The result was expressed as a percentage. Based on the results, it can be said that time did not significantly influence the extraction of antioxidant compounds (p> 0.001), and that the temperature is directly proportional to the yield. Regarding phenolic compounds, only temperature was significant, and for flavonols, only time and proportion. The use of ethanol as a solvent showed good results when compared to the commonly used solvents, in addition to having the quality of being economically viable and food grade. Another important factor was the pre-treatment of the sample, which allowed good yield values when compared to the literature.
Desenvolver produtos extrusados com maior qualidade nutricional e que tenham sabor agradável é um desafio para a indústria de alimentos. Assim, o objetivo deste trabalho é desenvolver um cereal matinal extrusado à base de mandioca e de folhas de estévia pré-tratadas com etanol e caracterizá-lo química e sensorialmente. Foram produzidas três formulações de cereais matinais utilizando tapioca granulada e de 0-2% de folhas de estévia. As determinações de umidade, cinzas e proteínas foram realizadas de acordo com o método descrito pela AOAC (2005) e a de lipídeos pelo método de Goldfish. O teor de carboidratos foi estimado subtraindo-se de 100 o somatório dos resultados anteriores. A aceitação sensorial foi avaliada por meio de escala hedônica de nove pontos. A incorporação de folhas de estévia nos cereais matinais de tapioca representou um aumento significativo na composição centesimal dos extrusados, elevando o teor de proteínas entre as formulações. Apenas os teores de cinzas e lipídeos não diferiram estatisticamente entre a formulação com 1% de estévia e o controle. Todas as formulações foram bem aceitas sensorialmente e não houve diferenças significativas entre as notas atribuídas aos cereais matinais, todos obtendo valores entre 5,71 e 5,82 para o sabor, 5,29 e 6,29 para a textura e 5,53 e 6,29 para a avaliação global. O cereal matinal elaborado com adição de 2% de folhas de estévia obteve os menores percentuais na região de rejeição e o maior teor de proteínas, se mostrando promissor para a produção de cereais matinais.
