En el presente trabajo se caracterizó el proceso de extracción de antocianinas empleando el método de análisis de superficie de respuesta con intervalos de temperatura entre 47,57 y 132,43ºC, y tiempos desde 11,36 a 138,64 minutos. Además, con la técnica del punto estacionario se determinó una máxima retención de antocianina (33,99 mg/g) a una temperatura de 98.39ºC a un tiempo de 105,89 minutos de extracción; sin embargo, al ser este tiempo demasiado prolongado, se empleó el análisis canónico redefiniéndose los parámetros óptimos de extracción a una temperatura de 100ºC durante un tiempo de 60 minutos con una reducción del contenido de antocianinas del 2,49% (33,14 mg/g) con respecto al máximo. Con el extracto obtenido en condiciones óptimas se elaboró una bebida y, utilizando el método del pH diferencial y la prueba t de Student (p = 0,05), se cuantificó su contenido de antocianinas y se comparó con el de una bebida, observándose que la bebida elaborada presentó contenidos mayores, cuya diferencia varía dentro del rango de 2,79 y 4,72 mg/mL. Finalmente, empleando una prueba de grado de satisfacción con una escala hedónica de nueve puntos se determinó que la bebida “gustó mucho” a un panel sensorial semientrenado.

En ese sentido, ya a partir de las últimas décadas, las emisiones de dióxido de carbono han alcanzado cifras record superando las 10 gigatoneladas. Este incremento está asociado al sector energético (47%), la industria (30%) y el transporte (11%) principalmente, lo que ha logrado un calentamiento global progresivo de la superficie terrestre con las consecuencias típicas asociadas al derretimiento de los glaciares, cambios en los ciclos hidrológicos, falta de alimentos, aumento de los fenómenos meteorológicos, migraciones descontroladas, enfermedades y pandemias. De este modo, surge la economía ambiental, una disciplina que intenta dar repuestas integrales entre ambos tópicos, medio ambiente y economía, donde diversas teorías tratan de explicar los fenómenos observados. El concepto de las Curvas de Kuznets Ambientales (CKA), señala una relación dinámica entre el PIB y la calidad del medio ambiente. El objetivo del artículo ha sido determinar si en el Perú, durante el periodo 1990-2015, ha habido una relación en forma de U invertida entre la producción interna y la contaminación del aire. The goal and purpose of this theoretical research are to analyze the evidence provided on the characteristics of the millennial generation and verify how these traits influence the human talent retention practices carried out by entrepreneurs. The empirical analysis is based on a systematic review of the scientific literature that includes 17 studies that were found in academic Google databases and university repositories. The results indicate that millennial workers are the generation with the highest rate of labor turnover so the retention practices most valued by them are related to opportunities for professional growth, greater flexibility between work and personal life, and better organizational communication. In most of the studies analyzed, economic remuneration is not a practice highly valued by this generation; however, in other studies, the results indicate that remuneration has a higher percentage of valuation, with a slight difference between the factors with greater and lesser representation by millennial employees.
La presente investigación recorre el origen y el uso de la noción de comuna en las ciencias sociales. El objetivo de la misma es analizar las distintas perspectivas de la comuna desde una mirada teórica documental. Se parte del estudio de la primera aparición del término haciendo referencia a las organizaciones de la Italia medieval, recorriendo la experiencia de la Comuna de París, las experiencias de la revolución China y las más recientes expresiones y usos en Venezuela. La presente investigación es de tipo teórico documental. Las reflexiones sobre el término arrojan que existen dos grandes nociones de esta categoría, por un lado, referencia una forma local de organización político-administrativa del territorio, por otro, da lugar a formas de resistencia anti-feudal, en su momento, y anti-capitalistas en la actualidad.
