Foods rich in antioxidants play an essential role in the prevention of diseases. The present study compared contents of phenolics, vitamin C, anthocyanin and antioxidant activity of 11 fresh exotic fruits, cultivated in the northeastern part of Brazil. The antioxidant activities were evaluated using two antioxidant systems 2,2-diphenyl-1-picrylhydrazyl (DPPH) and 2,2′-azinobis(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS), expressed as TEAC (Trolox Equivalent Antioxidant Capacity) and VCEAC (Vitamin C Equivalent Antioxidant Capacity) values. The results indicated that the above fruits, such as murici and mangaba, were good sources of antioxidants. The phenolic contents showed positive correlations with total antioxidant by ABTS (R = 0.94, P ≤ 0.001) and DPPH (R = 0.88, P ≤ 0.001) assays. However, this correlation was not noticed when examining vitamin C and anthocyanins contents. The 11 fruits studied had comparable antioxidant activity in both, ABTS and DPPH assays. These methods are recommended as useful tools for the evaluation of the total activity antioxidant in fruits. Our results indicated promising perspectives for the development and usage of fruits species studied with considerable levels of antioxidant activity.
RESUMOFoi elaborado um suplemento alimentar em pó, a partir da desidratação da polpa de frutos de acerola utilizando o método "FOAM-MAT". Vários testes utilizando diferentes agentes químicos, que favorecem à formação da espuma, foram realizados, tendo sido escolhido o experimento que mais se ajustou ao parâmetro de densidade recomendado como ideal (0,1 a 0,6). Na condição experimental definida, a polpa foi formulada e desidratrada em estufa de secagem com circulação de ar, a uma temperatura de 60 a 70°C, por 90 minutos, obtendo-se um produto em pó, com umidade final de 7,2%. Em paralelo ao experimento, foi efetuada uma caracterização química da polpa de acerola. O produto em pó obtido, foi embalado em sacos metalizados de 25 gramas e submetido a um estudo de estabilidade por 3 meses. Os resultados encontrados, mostraram que o produto elaborado apresentou elevado teor de vitamina C, em um nível 10 vezes maior do que na polpa integral.Palavras-chave: suplemento alimentar; desidratação; acerola. SUMMARYDEHYDRATION OF ACEROLA PULP (Malpighia emarginata D.C.) BY FOAM-MAT DRYING PROCESS. A food supplement from dehydrated pulp using a non-conventional method of FOAM-MAT was produced. Several tests have been accomplished using different chemical agents to facilitate the foam formation, and an experiment has been chosen that most adjusted to the recommended density parameter (0.1 to 0.6). After the definition of the experimental conditions, the pulp was formulated and dehydrated in a drying hot-house with air circulation at a temperature of 60 to 70°C for 90 minutes. The product obtained was a powder with final humidity of 7.2%. Concomitant to the experiment the chemical analysis of the pulp had been accomplished. The obtained powder was immediately afterwards analysed with the purpose of identifying the new characteristics of the product and packed in 25g metalized bags and submitted to stability studies for a period of 3 months. SummaryOsmotic dehydration represents a technological alternative to reduce post-harvest losses of fruits. In this work, the influence of the osmotic solution concentration and osmotic solution to fruit weight ratio was examined on the osmotic dehydration of melons under vacuum. The process of osmotic dehydration followed by air-drying was studied and modelled so that it could be optimised. The developed model has been validated with experimental data and simulations have shown that how the operating conditions affect the process. An optimisation was done using the model in order to search for the best operating condition that would reduce the total processing time.
Summary This study evaluated the effectiveness of packaging using a microencapsulated β‐cyclodextrin and trans‐cinnamaldehyde complex incorporated into a base chitosan matrix on the shelf life of fresh‐cut melon (Cucumis melo L. var. Reticulatus Naud) group Inodorus that were coated with a multilayered coating system using a polypropylene tray (Ziploc®) with (i) Ziploc® lid, (ii) Saran® wrap and (iii) plain cheesecloth and stored at 4 °C for 15 days. The multilayered antimicrobial coating improved the shelf life of fresh‐cut melon (up to 15 days), compared with the controls (7 days). Coated samples were firmer, maintained colour and total carotenoids content and showed less weight loss than the controls (P < 0.05). Among the packaging treatments, the Ziploc® lid was the most effective in maintaining shelf life. This study demonstrates the application of a new generation of edible coating using natural antimicrobial agents by means of the layer‐by‐layer assembly.
Cashew apple and guava residues from fruit juice industry were prepared as dehydrated fruit powders and used at different levels of wheat flour substitution for cookies formulations. The effects of guava and cashew apple fruit powders supplementation on physicochemical and sensorial characteristics of the cookies were evaluated. The pH, fibre and protein content were significantly affected. Biscuits with 15 g and 20 g/100g cashew apple and guava fruit powders showed the highest scores for sensorial attributes, respectively. The supplementation seems to be suited for wheat flour substitution and it is possible to obtain cookies with value-added food ingredient within the standards.
As frutas tropicais são utilizadas como matéria-prima para a fabricação de diversos produtos alimentícios, destacando-se mais recentemente a polpa de fruta congelada de ampla aceitação entre os consumidores, utilizada para a elaboração de sucos e refrescos comercializados em lanchonetes, escolas, restaurantes, além do consumo doméstico. Atualmente sabe-se que a fibra alimentar desempenha no organismo funções importantes como intervir no metabolismo dos lipídios e carboidratos e na fisiologia do trato gastrointestinal, além de assegurar uma absorção mais lenta dos nutrientes e promover a sensação de saciedade. Estudos mais recentes também comentam sobre as ações benéficas da fibra alimentar em doenças respiratórias e função pulmonar. Em função do exposto, este trabalho teve como objetivo determinar os parâmetros físico-químicos e o teor de fibra bruta e fibra alimentar dos resíduos do bagaço do caju, bagaço da goiaba e casca do maracujá, obtidos do processamento de polpa de fruta e transformados em pós alimentícios. Dentre os parâmetros físico-químicos analisados foi verificado que os pós alimentícios dos resíduos de caju, goiaba e maracujá apresentam em predominância: ºBrix 40,48±0,00; 10,48±0,00; 20,56±0,00); açúcares redutores (36,55±0,65; 5,31±0,13; 8,3±0,10%); vitamina C (34,72±0,29; 21,55±3,66; 11,76±0,13mg/100mL); fibra bruta (9,92±1,28; 39,56±0,46; 26,31±1,09%); fibra alimentar (3,26±0,01; 24,46±3,73; 17,07±0,79%); A partir dos resultados obtidos pode-se considerar que os pós alimentícios destes resíduos são boas fontes de vitamina C, açúcar redutor e apresentam altos teores de fibra bruta e alimentar.
Esta revisão apresenta os aspectos relevantes da àgua-de-coco, como os relacionados com sua composição química, valor nutritivo e propriedades funcionais, que aliadas a seu sabor adocicado, tornaram-na uma bebida muito apreciada, favorecendo o aumento do seu consumo. Também aborda as formas de comercialização da água-de-coco destacando-se os aspectos relacionados à industrialização que equilibram a oferta do produto ao longo do ano. Os fatores importantes durante o processamento da água-de-coco foram enfatizados e as pesquisas que vêm sendo realizadas para extensão de sua vida de prateleira e obtenção de produtos que mantenham o máximo possível suas características sensoriais originais. AbstractThis review presents the important aspects of the coconut water, such as its chemical composition, nutritional value and functional properties, which allied to its sweetened taste, turned it into a much appreciated beverage, favoring the increase of its consumption. It also reports the types of commercialization of the coconut water and the related aspects of the industrialization of the coconut water, balancing the offer of green coconut along the year. The important factors during the industrialization of the coconut water were emphasized and the researches that have been accomplished for the extension of its shelf life, obtaining products that maintain as much as possible its original sensorial characteristics.
A acerola é uma fruta muito apreciada por seu alto teor de vitamina C, além de ser fonte de carotenóides e antocianinas, sendo industrializada na forma de polpa congelada e processamento de suco. Investigações dos efeitos do processamento nos constituintes nutricionais de sucos tropicais são escassos. Freqüentemente, as perdas de vitamina C são as únicas avaliadas. Este trabalho objetivou determinar o efeito de operações do processamento (formulação/homogeneização e tratamento térmico) de suco de acerola sobre as características químicas e físico-químicas deste produto. Os resultados desta pesquisa indicam pequenas alterações, observando-se somente uma variação significativa para o pH do suco, apesar de ter havido diminuição dos teores de vitamina C e antocianinas, e aumento do conteúdo de carotenóides, no suco processado. It also has a good source of carotenoids and anthocyanins and is industrialised as frozen pulp and processed as juice. Research on the effects of processing on the nutritional constituent of tropical juices is scarce. Often, only the loss of vitamin C is evaluated. The aim of this work is to determine the effect of some processing operations (formulation/ homogenization and heat treatment) on physical and physical-chemical characteristics of acerola juice. The results of this research indicate small changes in the physical and physical-chemical characteristics, and a significant change in the pH, a decrease in the vitamin C and anthocyanins content and an increase in the carotenoids of the processed juice were observed.
