RESUMOExiste um consenso mundial de que os alimentos não devam mais ser vistos somente como uma fonte de nutrientes com apelo sensorial, mas que também sejam fonte de bem estar e saúde. Esse novo conceito requer mudanças de paradigmas no desenvolvimento de novos produtos, aplicando as tecnologias tradicionais, aliadas aos novos métodos de conservação, preservando o máximo possível os componentes que cada alimento possui. Nos métodos mais tradicionais, várias vitaminas e aromas por exemplo, eram parcialmente perdidos, e o resultado, além de uma valiosa perda de nutrientes importantes ao organismo, era um produto muito distante do produto original, em termos de característi-cas sensoriais. Além da perda de alguns nutrientes importantes, a cor, o sabor e o odor originais eram modificados. Havia então uma grande necessidade de se implementar métodos que pudessem deixar esses componentes nutricionais mais bioacessíveis, preservando as características originais de cor, sabor e odor do alimento. O método de microencapsulação possui várias aplicações, tanto na indús-tria de alimentos, como em indústrias farmacêuticas, de cosméticos, têxteis, de agrotóxicos, de tintas, entre outras. Microencapsulação é o processo de empacotamento de materiais sólidos, líquidos ou gasosos em cápsulas extremamente pequenas, as quais podem liberar o conteúdo de forma controlada e sob condições específicas. Diversas técnicas têm sido utilizadas na elaboração das microcápsulas, tais como: spray drying, spraycooling, coacervação, extrusão, extrusão centrífuga, recobrimento em leito fluidizado, lipossomas e complexação por inclusão. Essa técnica tem solucionado limitações no emprego de ingredientes alimentícios, visto que pode suprimir ou atenuar sabores e odores indesejá-veis, reduzir a volatilidade e a reatividade e aumentar a estabilidade destes em condições ambientais adversas, como na presença de luz, oxigênio e pH extremos. Este artigo de revisão tem como objetivo fazer uma explanação sobre o uso da microencapsulação na área de alimentos. Palavras-crave: microencapsulação, alimento, ingredientes microencapsulados. A cerveja e o vinho são as bebidas mais antigas do mundo. Os historiadores datam os primeiros indícios do surgimento da cerveja, em 8000 a.C na Palestina. Cerveja é a bebida obtida pela fermentação alcoólica do mosto cervejeiro oriundo do malte de cevada e água potável, por ação da levedura, com adição de lúpulo. Quando surgiu, a cerveja não continha lúpulo em sua composição. Assim, ela se deteriorava com maior rapidez. Na Europa, por volta do ano de 1000, descobriu-se que o lúpulo possuía propriedades antissépticas, e foi então adicionado à cerveja, a fim de manter suas características de sabor por mais tempo, além de melhorar sua estabilidade. As descobertas de Louis Pasteur sobre o levedo e a conservação de alimentos, traz profundas mudanças na qualidade da bebida, graças à esterilização de materiais, o trabalho à vácuo, e o processo de pasteurização. No fim do século XX, já se podia fabricar a cerveja com segurança microbiológica e com atributos sensoriais característicos, garantindo uma maior vida de prateleira, podendo expandir assim sua comercialização. Deste modo, no início do século XX, já existiam mais de 3200 cervejarias, só na Bélgica. Atualmente, a Europa é a maior produtora de cerveja, seguida pelos Estados Unidos, Japão e Brasil, sendo a Europa também a maior consumidora, disparadamente, quando comparada aos demais países, cujo consumo ainda é considerado baixo. Quanto à classificação, com relação ao teor de extrato original, têm-se: forte (> 14º P); extra (> 12,5º P); comum (>11º P) e fraca ou leve (> 7º P). Com relação à cor, classificam-se em claras e escuras. Quanto ao tipo de fermentação em alta e baixa e quanto ao teor alcoólico em: alto (> 7%); médio (> 4%); baixo (>2%) e sem álcool (até 0,5 %). Quanto à denominação, têm-se : Pilsen (mais comum, de baixa fermentação, Bock (mais encorpada); Weiss; Munchen dentre outras.Este artigo de revisão tem como objetivo apresentar as matérias primas utilizadas na indústria cervejeira, bem como o processo de fabricação da cerveja. RESUMOO presente estudo foi conduzido em frigorífico comercial e as análises no Setor de Tecnologia de Carnes do Departamento de Ciências dos Alimentos da Universidade Federal de Lavras (UFLA). Com o objetivo de avaliar o efeito do sexo e categoria de peso sobre a composição centesimal e teor de colesterol, 20 eqüinos (10 machos castrados e 10 fêmeas) foram abatidos e agrupados em categorias de peso ao abate preestabelecidas, sendo: C 1 ( 88,82 a 97,88 kg); C 2 (102,20 a 115,80 kg); C 3 (129,71 a 160,69 kg); C 4 (162,80 a 236,40 kg); com 5 animais por categoria. Os músculos longissimus dorsi (LD) e semimembranosus (SM), após o abate, foram coletados e analisados: umidade, gordura, proteína e cinzas (AOAC, 1990) e o colesterol foi determinado por colorimetria (BRAGAGNOLO, 1997). O modelo estatístico foi inteiramente casualizado, em esquema fatorial 2X4, e os dados foram analisadas pelo programa estatístico SAS. O fator sexo influenciou (p<0,05) os teores de colesterol no músculo LD. As médias encontradas (em base de matéria seca natural) foram de 36,77% e 56,08% para macho e fêmea, respectivamente. Os fatores categoria de peso e sexo não influenciaram os valores de umidade, proteína, cinza e gordura, nos músculos LD e SM, cujas médias foram: cinzas 0,70% e 1,16%; umidade 75,53% e 75,83%; gordura 0,67% e 2,03%; proteína 21,63% e 22,49% , para os músculos LD e SM, respectivamente. As proporções desses constituintes químicos mostram que a carne de eqüinos obtida em abatedouro comercial apresenta alta quantidade de proteína e baixa de gordura e pode ser considerada uma carne magra.Termos para indexação: Composição centesimal; Carne; Eqüino. ABSTRACTThe present study was conducted in a packing house, with the assays being done in the Sector of Meat Technology/Food Science Department of the Universidade Federal de Lavras (UFLA). With the objective of evaluating the effect of sex and category of weight on the meat proximate composition and content of cholesterol, 20 equines (10 castrated males and 10 females) were slaughtered and grouped in pre-established categories of weight: C 1 (88.82 to 97.88 kg); C 2 (102.20 to 115.80 kg), C 3 (129.7 to 160.69 kg) and C 4 (162.80 to 236.40 kg); with 5 animals for each category. The muscles longissimus dorsi (LD) and semimembranosus (SM) were collected and analyzed for: moisture, fat, protein and ashes (AOAC, 1990) and the cholesterol was determined by colorimetry (BRAGAGNOLO, 1997). The statistical model was completely randomized, in factorial scheme 2X4, and the data were analyzed through the statistical program SAS. The factor sex influenced (p<0,05) the contents of cholesterol in LD muscle, with average values (in base of dry natural material) of 36.77% and 56.08%, for males and females, respectively. RESuMOCom o desenvolvimento da indústria de alimentos, as embalagens têm se aperfeiçoado, indo além de sua função básica de proteger o alimento contra danos mecânicos e contaminações químicas e microbiológicas. Elas têm cada vez mais desempenhando papel de destaque, contribuindo ativamente para a venda de um produto. Assim, as indústrias de embalagens têm procurado atender aos consumidores mais exigentes e juntamente aos centros de pesquisa e universidades, têm investido mais em estudos de novas tecnologias, a fim de prolongar as características de qualidade do alimento, conferir melhor aparência, maior proteção mecânica no embarque, transporte, desembarque e nos supermercados, oferecer embalagens mais compactas, que ocupem menos espaço na geladeira, com abertura e fechamento mais fáceis, e que utilizem materiais de fácil reciclagem ou decomposição no ambiente. Com o objetivo de atender às novas expectativas das indústrias de alimentos e dos consumidores, surgem as embalagens ativas e as embalagens inteligentes. As embalagens ativas são aquelas que interagem de alguma forma com o alimento, seja liberando substâncias conservantes ao longo da vida de prateleira do produto, ou "corrigindo" alguns problemas naturais do alimento, como sabor amargo por exemplo, em que algumas enzimas podem ser adicionadas ao material de embalagem, minimizando este problema e tornando o produto mais saboroso. Já as embalagens inteligentes indicam as modificações químicas às quais os alimentos estão passando, como mudanças de pH, por exemplo, indicando alterações na qualidade do produto. RESUMOUm grande desafio para a indústria de alimentos atualmente, é atender aos anseios do consumidor, no sentido de oferecer alimentos processados, livre de aditivos químicos e submetidos a tratamentos térmicos cada vez mais brandos, a fim de que estes sejam o mais natural possível, garantindo a segurança microbiológica destes produtos. Alguns patógenos alimentares, como a Listeria monocytogenes e Escherichia coli O157:H7, bactérias extremamente nocivas à saúde, podendo levar à abortos e até mesmo ao óbito, emergiram à medida que houve um maior consumo de produtos refrigerados. Assim, há um crescente interesse pelos chamados bioconservantes alimentares. As bacteriocinas são peptídios com atividade antimicrobiana, ribossomicamente sintetizados e secretados por bactérias produzidas por diferentes cepas, principalmente as do gênero Bacillus. Essas bacteriocinas têm a capacidade de destruir ou inibir o crescimento de outras bactérias taxonomicamente relacionadas com a cepa produtora. Uma vez que as bactérias lácticas estão presentes naturalmente em produtos fermentados, suas bacteriocinas são aceitas pela legislação e pelos consumidores como aditivos alimentares. ABSTRACTA major challenge for the food industry today is to meet the desires of consumers, to offer processed foods free of chemical additives and heat-treated increasingly lenient, so that they are as natural as possible, ensuring the microbiological safety of these products. Some foodborne pathogens such as Listeria monocytogenes and Escherichia coli O157: H7 bacteria extremely harmful to health and may lead to abortion and even to death, emerged as there was a higher consumption of chilled products. Thus, there is a growing interest in called bioconservants food. The bacteriocins are peptides with antimicrobial activity, ribosome synthesized and secreted by bacteria produced by different strains, especially those from the genus Bacillus. These substances have the capacity to destroy or inhibit the growth of other bacteria taxonomically related to the producing strain. Since the lactic acid bacteria are naturally present in fermented products, their bacteriocins are accepted by law and by consumers as food additives. This literature review has sought to highlight the use of bacteriocins as bioconservants in food.
