Composição centesimal e teor de colesterol na carne de eqüinos (Equus caballus, Linneaus, 1758) machos e fêmeas agrupados por peso de carcaça

Abstract: RESUMOO presente estudo foi conduzido em frigorífico comercial e as análises no Setor de Tecnologia de Carnes do Departamento de Ciências dos Alimentos da Universidade Federal de Lavras (UFLA).
