This study aimed to assess the effect of different breeds and crosses of broiler chickens and sex on growth, carcass characteristics, and tissue composition. The experimental design was a completely randomized design in a 6 × 2 factorial scheme, with six genotypes (New Hampshire – NHS, Jersey Black Giant – JBG, Rodhe Island Red – RIR, Indigenous Giant – IG, and the hybrids IG × NHS and IG × JBG) and two sexes (male and female). Each treatment was composed of five replications with three broiler chickens, totaling 180 broiler chickens. Zootechnical performance and growth were assessed through the Gompertz equation parameters. After slaughtering at 105 days, the characteristics of carcass and main cuts were determined by means of weight, yield, and proportion of tissue constituents (meat, bone, and skin). Regarding the Gompertz equation parameters, the genotype NHS presented a higher growth potential. Males presented higher live weight and carcass weights, except for IG. No difference was observed between genotypes and sexes (P > 0.05) for carcass yield. The genotype JBG presented the highest average for breast yield (24.4%). Males presented the highest average for leg yield (30.5%). The genotype IG presented the highest value of breast meat yield (71.2%), being similar to the genotypes from the crosses IG × NHS, and IG × JBG (68.9 and 68.3%, respectively). For meat to breastbone ratio, the genotype IG presented the highest value (3.4) and, considering the sex, females presented a higher average (3.2) for this characteristic. Regarding the proportion of leg meat, an effect was observed for genotype and sex (P < 0.05) with the highest values observed for the hybrid IG × JBG and females (66.3 and 66.0%, respectively). For meat to leg bone ratio, the genotypes NHS, JBG, RIR, and IG × NHS presented the highest values (2.6, 2.7, 2.6, and 2.6, respectively), with females presenting the highest value (P < 0.05) (2.7). The genotypes IG, IG × NHS and IG × JBG presented the best growth and carcass characteristics, being recommended to be reared under an alternative system. Females presented the highest breast yield and, proportionally, the highest amount of leg meat, which are important attributes in a chicken meat production system.
The purpose was to evaluate the effects of gender and of different genotypes of chickens on the physicochemical parameters and centesimal composition, related to the quality of meat. The design was completely randomized arranged in 5x2 factorial scheme, five genotypes (Índio Gigante - IG; New Hampshire - NHS; Gigante Negra de Jersey - GNJ; poultry from the crossing between the IG and NHS breeds - IG x NHS; and between the IG and GNJ breeds - IG x GNJ) and two genders, with five repetitions and each one represented by three poultry, totaling 150 animals, slaughtered at 105 days. The parameters evaluated on the breast and thigh were: centesimal composition (moisture, ether extract - EE, protein and ash), ultimate pH, color (L*- luminosity, a*- redness, b* -yellowness, C* - chroma index and h* - hue angle), weight loss by cooking (WLC) and shear force (SF). The IG genotype had the highest average of ultimate pH of the breast (6.03). The NHS and IG x NHS genotypes showed, respectively, higher average of L * (58.93) and a* (1.92) of the breast. The IG, IG x NHS and IG x GNJ showed the highest values of b* of the breast (12.53, 13.37 and 12.69, respectively). The IG poultry showed high average of SF of the breast and thigh (4.79 and 5.01kgf, respectively). The IG x NHS and IG x GNJ genotypes showed the lowest ultimate pH values of the thigh (6.13 and 6.02, respectively). The IG x GNJ genotype showed a high average of b* of the thigh (14.94) and the NHS had a high average of WCL (24.65%). The females showed higher averages of EE on the breast and ash on the thigh (1.03 and 1.11%, respectively). The IG x NHS and IG x GNJ poultry showed higher averages of EE of the breast (1.21 and 1.38 %, respectively). The poultry of IG breed and those from the crossing with NHS and GNJ presented meat quality characteristics more desirable by the consumer in relation to physicochemical parameters and centesimal composition, while genders showed no influence on these aspects.
ResumoObjetivou-se caracterizar a qualidade da carne de aves da raça Rodhe Island Red em função da diferença do tipo de corte e sexo. Foram utilizadas 30 aves em delineamento inteiramente casualizado em esquema fatorial (2 x 2), sendo dois cortes (peito e coxa) e dois sexos, com cinco repetições por tratamento. As aves foram abatidas aos 105 dias para realização das análises físico-químicas, composição centesimal e perfil lipídico do peito e coxa. A coxa apresentou maior média de pH final, teor de vermelho (a*) e força de cisalhamento (FC). Para luminosidade (L*), o peito obteve a maior média e as fêmeas maior média de FC. A coxa apresentou maior teor de extrato etéreo (EE) e umidade. O peito apresentou maior média de ácidos graxos saturados. As fêmeas obtiveram maior quantidade de ω3 e menor relação ω6/ω3. Foi observado maior índice de trombogenicidade no peito. A coxa mostrou menor conteúdo de ácidos graxos saturados e menor índice de trombogenicidade. As fêmeas apresentaram maior teor de ω3. O tipo de corte demonstrou maior influência que o sexo sobre os parâmetros estudados e a coxa apresentou melhores aspectos físico-químicos e de perfil lipídico para carne de aves neste sistema de produção relacionados à qualidade de carne desejável pelos consumidores. Climatic characteristics of the production sites of pigs influence the yield of the system, with breeding sows being a category extremely sensitive to high temperatures, especially when their upper critical temperature is reached. This review evaluated the effects of the evaporative cooling system on environmental, physiological and performance parameters in breeding sows. By means of this review, a bibliographic search was performed using the following keywords: sow; swine; gilt and pig combined individually with the expression ‘evaporative cooling’. A total of 11 papers met the prerequisites determined to compose the systematic review and the studies involved gestating and lactating sows maintained in environments that presented ambient temperatures between 21.5 and 34.8 °C and relative humidity between 32.2 and 84.2%. The evaporative cooling system was used in order to cool the macro or micro environment. It can be concluded that the use of evaporative cooling system promotes increase in feed intake per lactating sow, decrease in weight loss in lactation, increase of weight of piglets at weaning, temperature reduction of the barns and decrease of the respiratory rate of the sows. For gestating sows, no changes in reproductive performance were reported.
The objective was to conduct a systematic review to evaluate the effects of dietary supplementation with beta-adrenergic agonists on calpains and calpastatin activity in bovine muscle and changes in meat tenderness. A survey was conducted in June 2019 on Science Direct, Web of Science, Scopus, PubMed and Capes Periodicals, using four keyword combinations: agonist and calpain and cattle; agonist and calpain and bovine; agonist and calpain and heifers; agonist and calpain and steers. Thirteen studies were selected, 54% concluded that supplementation with beta-adrenergic agonists increases calpastatin activity, 23% observed increase in their gene expression and 23% reported no effect on activity or expression of this enzyme. Nine studies evaluated the influence of beta-adrenergic agonists supplementation on meat texture and all found an increase in shear force values. There is strong evidence that betaadrenergic agonists may increase calpastatin activity in the muscle, causing damage to meat tenderness.
RESUMO Objetivou-se avaliar a influência da suplementação com minerais biocomplexados sobre a qualidade da carne de frangos da linhagem Label Rouge, de ambos os sexos, criados em sistema alternativo. O delineamento experimental foi inteiramente ao acaso (DIC), disposto em esquema fatorial (3x2), sendo três dietas (controle; 0,50ppm de selênio; 0,40ppm de cromo) e dois sexos. Para a estabilidade lipídica, foi utilizado o DIC, disposto em esquema fatorial (3x2x2), sendo três dietas, dois sexos e dois tempos de armazenamento (zero e 12 meses). Os parâmetros avaliados no peito e na coxa foram: pH final, cor (L* - luminosidade, a* - índice de vermelho, b* - índice de amarelo, C* - índice de saturação e h* - ângulo de tonalidade), perda de peso por cozimento (PPC), força de cisalhamento (FC) e estabilidade lipídica. Além disso, foram avaliadas a proporção das formas químicas da mioglobina da coxa e a quantificação do conteúdo de selênio no peito. Não houve efeito isolado da dieta sobre os parâmetros físicos e químicos do peito e da coxa e sobre a concentração de selênio no peito. As fêmeas apresentaram médias superiores de L* (57,57), b* (10,55) e C* (10,60) do peito; e os machos de L* (55,09) da coxa. Entre os machos, as aves alimentadas com a dieta controle e com cromo expressaram valores superiores de FC da coxa em relação às suplementadas com selênio; para o tratamento com cromo, os machos apresentaram média superior de FC da coxa e, em contrapartida, para o tratamento com selênio, as fêmeas manifestaram a maior média. As amostras submetidas ao período de 12 meses de armazenamento mostraram maiores valores de substâncias reativas ao ácido tiobarbitúrico (TBARS) em ambos os cortes. A suplementação com cromo e selênio biocomplexados não provocou alterações na qualidade da carne; as fêmeas demonstraram melhores atributos de qualidade da carne.
This study was conducted to evaluate the effects of dietary supplementation with biocomplexed selenium and chromium on the fatty acid profile of the breast and thigh of males and females broilers of the Label Rouge lineage. The experimental design was completely randomized arranged in a 3 x 2 factorial scheme corresponding to three diets (control; 0.40 ppm of chromium; 0.50 ppm of selenium) and two sexes. Each treatment consisted of three plots of five broilers. The fatty acid profile was evaluated in the breast and thigh samples. The addition of biocomplexed selenium in the broilers diets increased the content of long chain fatty acid of the omega 3 and 6 series (docosahexaenoic - DHA and arachidonic acids, respectively), the total of omega 6 and the stearic acid content on the breast (pectoralis major muscle). In addition, selenium supplementation caused a reduction in oleic acid content and in total of monounsaturated in the same muscle. Males had higher contents of linoleic and linolenic acids, and total of polyunsaturated; and lower content of oleic acid, total of monounsaturated and saturated in the thigh. The broilers supplemented with biocomplexed selenium and males presented better lipid quality in the muscle by breast and thigh, respectively.
Non-ruminantsFull-length research article Nutritional evaluation of chia (Salvia hispanica) seeds and oil in broiler diets ABSTRACT -Two experiments were carried with broilers from 29 to 42 days of age for the nutritional evaluation of dietary chia. Thus, the nitrogen-corrected apparent metabolizable energy (AMEn) and the apparent metabolizability coefficients of gross energy and ether extract of chia seeds and oil, toasted soybean grain (TSG), and soybean oil were determined in the experiment I, by total excreta collection method, using 120 broilers. Each experimental diet (reference diet [RD] and four diets with the tested feedstuffs) was evaluated in eight replicates of three broilers. The TSG and chia seeds replaced the RD in 250 g/kg, whereas soybean and chia oils replaced the RD in 100 g/kg. Simultaneously, a second experiment was carried subdivided into two trials. In the performance trial, we evaluated the dietary feedstuffs effects on performance, carcass and cut yields, blood parameters, and activity of lipogenic enzymes. The nutrient metabolizability coefficients and AMEn were evaluated in the metabolism trial. The AMEn values of 37.49, 37.35, 15.85, and 8.43 MJ/kg of dry matter were determined for chia oil, soybean oil, TSG, and chia seeds, respectively (experiment I). In the second experiment, the best feed conversion was observed in broilers fed diets containing chia oil and TSG. However, the diet formulated with chia seeds worsened broiler feed conversion, exhibited the smaller energy value and apparent metabolizability coefficient of the ether extract, and increased the activity of the malic enzyme and serum total cholesterol level. There was no difference for glucose-6-phosphate dehydrogenase activity and high-density lipoprotein cholesterol level. In general, chia oil showed to be efficient in replacing soybean oil in broiler diets.
