A valorização de queijos artesanais é crescente nos últimos anos. Atualmente qualquer município do estado de Minas Gerais pode solicitar o seu credenciamento como região produtora de queijo Minas artesanal. A produção de queijo está presente em todos os municípios da microrregião de Montes Claros e possui valor social inquestionável para a população. Entretanto não há sequer estudos iniciais para que, diante dos resultados, ações possam ser planejadas visando tirar o queijo da informalidade. Este trabalho teve como objetivo caracterizar os aspectos físico-químicos e microbiológicos do queijo artesanal da microrregião de Montes Claros, MG. As análises microbiológicas feitas foram: coliformes 30 ºC, Escherichia coli, Staphylococcus aureus, Salmonella sp e Listeria sp.. E para as análises físico-químicas foram: pH, aw, gordura, umidade, cloretos, nitrogênio total, extensão e profundidade de maturação e cinzas em 18 queijos representados pelos municípios que compõem a microrregião de Montes Claros, MG. Assim como acontecia nas regiões tradicionais no passado, é notória a falta de padronização dos queijos analisados, assim como condições microbiológicas insatisfatórias para consumo. Tornam-se necessárias ações de pesquisa e principalmente extensão para que seja possível a produção de queijos passíveis de serem consumidos.
This study aimed to assess the effect of different breeds and crosses of broiler chickens and sex on growth, carcass characteristics, and tissue composition. The experimental design was a completely randomized design in a 6 × 2 factorial scheme, with six genotypes (New Hampshire – NHS, Jersey Black Giant – JBG, Rodhe Island Red – RIR, Indigenous Giant – IG, and the hybrids IG × NHS and IG × JBG) and two sexes (male and female). Each treatment was composed of five replications with three broiler chickens, totaling 180 broiler chickens. Zootechnical performance and growth were assessed through the Gompertz equation parameters. After slaughtering at 105 days, the characteristics of carcass and main cuts were determined by means of weight, yield, and proportion of tissue constituents (meat, bone, and skin). Regarding the Gompertz equation parameters, the genotype NHS presented a higher growth potential. Males presented higher live weight and carcass weights, except for IG. No difference was observed between genotypes and sexes (P > 0.05) for carcass yield. The genotype JBG presented the highest average for breast yield (24.4%). Males presented the highest average for leg yield (30.5%). The genotype IG presented the highest value of breast meat yield (71.2%), being similar to the genotypes from the crosses IG × NHS, and IG × JBG (68.9 and 68.3%, respectively). For meat to breastbone ratio, the genotype IG presented the highest value (3.4) and, considering the sex, females presented a higher average (3.2) for this characteristic. Regarding the proportion of leg meat, an effect was observed for genotype and sex (P < 0.05) with the highest values observed for the hybrid IG × JBG and females (66.3 and 66.0%, respectively). For meat to leg bone ratio, the genotypes NHS, JBG, RIR, and IG × NHS presented the highest values (2.6, 2.7, 2.6, and 2.6, respectively), with females presenting the highest value (P < 0.05) (2.7). The genotypes IG, IG × NHS and IG × JBG presented the best growth and carcass characteristics, being recommended to be reared under an alternative system. Females presented the highest breast yield and, proportionally, the highest amount of leg meat, which are important attributes in a chicken meat production system.
A região da Serra Geral foi reconhecida como produtora de queijo artesanal em 2018, porém se desconhece a existência de um padrão de produção desse alimento. Esse trabalho teve como objetivo diagnosticar o processo de fabricação do queijo artesanal produzido na região da Serra Geral, avaliando a existência de um padrão de produção e possibilidade de legalização das queijarias. Foram realizadas visitas com aplicação de entrevista estruturada em 28 unidades produtoras que compõem a região. Os resultados apontam que 60,72% dos produtores consideram-se inadequados quanto aos requisitos exigidos pelas legislações de produção de queijo artesanal, sendo que 46,44% destes não sabem o que deve ser feito para se adequarem. A comercialização dos queijos é realizada de 2 a 4 dias após a produção dos mesmos, em 82% das queijarias. Apenas em 17,85% possui entrada sanitária, 72% não fazem nenhum tratamento na água e foram encontradas falhas nas práticas higiênicas no processo produtivo, sendo observados seis fluxogramas do processo de produção. Conclui-se que com investimentos e políticas adequadas de valorização do queijo artesanal da Serra Geral há possibilidade de legalização do mesmo, fato esse já observado em outras regiões produtoras tradicionais de queijos artesanais. Deve-se avaliar a possibilidade da realização de estudos físico-químicos e microbiológicos dos queijos para investigar a qualidade e segurança da sua comercialização sem causar prejuízo para o consumidor.
RESUMO Objetivou-se, com este estudo, verificar a influência da suplementação com diferentes associações entre minerais orgânicos sobre o desempenho e as características de carcaça, bem como avaliar sua viabilidade econômica, para suínos em terminação. Foram utilizados 88 machos castrados, divididos entre quatro tratamentos: controle com dieta basal e suplementação com CrFe, MgSe e CrFeMgSe, durante os 28 dias que antecederam o abate. O delineamento experimental foi em blocos ao acaso, com parcela experimental representada por dois animais. Os animais suplementados com CrFeMgSe apresentaram piores índices de peso final, ganho de peso diário e consumo durante todo o período, com consequente redução no peso de carcaça, menor profundidade de lombo, área de olho-de-lombo e menor quantidade de carne magra na carcaça. Houve um aumento no custo da dieta para os grupos CrFe, MgSe e CrFeMgSe, respectivamente. O uso de cromo mais ferro e magnésio mais selênio, associados dois a dois, não altera os parâmetros de desempenho e as características de carcaça. A associação dos quatro minerais, no entanto, promove piora nessas características e aumenta o custo da dieta.
