Pedúnculos de clones de cajueiro-anão-precoce, dos clones CCP-76, END-157, END-183 e END-189, foram armazenados durante 25 dias, sob refrigeração associada a atmosfera modificada, com o objetivo de avaliar o efeito das condições atualmente utilizadas (5ºC e 85-90% de UR) para conservação, transporte e comercialização de cajus in natura. Os pedúnculos foram avaliados a cada 5 dias quanto às seguintes características: perda de peso, firmeza, cor (antocianinas), sólidos e açúcares solúveis, acidez, pH, vitamina C e compostos fenólicos. O uso da refrigeração (5ºC e 85% U.R), associada a atmosfera modificada, proporcionou uma vida útil pós-colheita de 10 dias para o clone END 189, de até 15 dias para o clone END 157 e de até 25 dias para os clones CCP 76 e END 183. A temperatura de 5ºC não se mostrou adequada para armazenamento de pedúnculos de coloração mais intensa (END 157 e END 189) que a testemunha (CCP 76), provocando perda de cor (antocianinas) a partir do 10º dia de armazenamento. A atmosfera modificada reduziu significativamente a perda de peso, favorecendo a aparência do produto para comercialização, independentemente do clone estudado.
Avaliou-se a qualidade de polpas congeladas de cajá, caju e acerola produzidas e comercializadas nos Estados do Ceará e Rio Grande do Norte. Foram analisadas 45 amostras, determinando-se pH, Sólidos solúveis (°Brix), Acidez, Relação °Brix/acidez, teor alcoólico e vitamina C. Os resultados obtidos para polpas de cajá e caju foram comparados com os Padrões de Identidade e Qualidade para suco de cajá e suco de caju. Considerando a ausência de legislação padronizando produtos de acerola, esta deixou de ser comparada com padrão de referência oficial. Os resultados obtidos demonstraram que, 63,3% das amostras analisadas de polpas de caju apresentaram valores abaixo do padrão mínimo estabelecido para sólidos solúveis (de 10 °Brix) e 63,6% abaixo do valor mínimo estabelecido para acidez (de 0,3 g/100 g). Todas as polpas de caju apresentaram relação °Brix/acidez e teor de vitamina “C” acima do padrão mínimo exigido para suco. Para as polpas de cajá, 46,6% das amostras exibiram valores de sólidos solúveis abaixo do padrão mínimo exigido (de 8 °Brix) e 53,3% situaram-se, em relação à acidez, abaixo do mínimo exigido (1,25 g/100 g). As polpas de acerola mostraram, em média, valores de vitamina “C” de 831,72 mg/100 g de polpa. O teor alcoólico em todas as amostras analisadas foi negativo.
