Strawberry is a fruit appreciated throughout the world due to its attractive quality attributes and stands out due to its high phenolic compound content, which positively contribute to biological properties of nutritional interest. The objective of this study was to evaluate the effect of cassava starch coatings incorporated with propolis combinations on the phytochemical content and the maintenance and increase of the strawberry antioxidant activity. The treatments were 3% cassava starch (CS), 3% cassava starch + 33% ethanolic propolis extract (CS + P33%), 3% cassava starch + 66% ethanolic propolis extract (CS + P66%) and control (C). The fruits were stored at 4 °C ± 0.5 ºC and 90%RH for 16 days, making up a completely randomized design with 4 treatments and 5 time evaluations. Vitamin C, phenolic compound, anthocyanin, and antioxidant activity levels were evaluated through two methods. The coating with 66% of propolis promoted higher Vitamin C content than fruits submitted to the other treatments at 8 and 12 days of storage. For antioxidant activity, fruits treated with CS maintained a higher FRS percentage (free radical scavenging) at all time evaluations. Control fruits presented higher anthocyanin content at the last evaluation time when the highest antioxidant capacity, by the ABTS method (2,2'-azino-bis(3-ethylbenzothiazoline-6-sulphonic acid)), was observed in fruits with CS and CS + P66% treatments. There was an increase tendency of the phenolic content during storage in all evaluated fruits. The propolis concentrations used, however, were not sufficient to increase or maintain the antioxidant capacity and phenolic contents of strawberries.Index terms: Phytochemicals; antioxidant; Fragaria ananassa. RESUMOO morango é um fruto muito apreciado em todo o mundo por apresentar atributos de qualidade atrativos para o consumidor e destacase por seu alto conteúdo de compostos fenólicos, contribuindo, positivamente, para propriedades biológicas de interesse nutricional. Objetivou-se, neste estudo, avaliar o efeito de combinações do revestimento de fécula de mandioca incorporado com própolis, sob o conteúdo de fitoquímicos e na manutenção e incremento da atividade antioxidante de morangos. Os tratamentos utilizados foram fécula de mandioca 3% (CS), fécula de mandioca 3% + extrato etanólico de própolis 33% (CS + P33%), fécula de mandioca 3% + extrato etanólico de própolis 66% (CS+P66%) e controle (C), sendo os frutos armazenados a 4 ºC ± 0,5 ºC e UR90% por 16 dias, perfazendo um delineamento inteiramente casualizado com 4 tratamentos e 5 tempos de avaliação. Avaliaram-se teores de vitamina C, compostos fenólicos totais, antocianinas e atividade antioxidante, por dois métodos. O revestimento com 66% de própolis promoveu maior conteúdo de Vitamina C que os frutos submetidos a outros tratamentos aos 8 e 12 dias. ABSTRACT. This work aimed to evaluate the physicochemical characteristics and enzymatic activity of "Sabará" jabuticaba fruits, which were cultivated in Lavras, Minas Gerais State, Brazil, at different maturation stages. The fruits were harvested and separated into five different stages: totally green fruit, fruit with incipient pigmentation, fruit with a light purple predominance, totally purple fruit and totally dark purple fruit. These fruits were physicochemically analyzed and evaluated for polygalacturonase enzymatic activity. Chlorophyll degradation and the synthesis of anthocyanin on fruit rinds were observed, as well as the degradation of the cell wall and its consequent softening. In the pulp, increased soluble solids, pH and sugars were observed, while acidity decreased as maturation progressed.Keywords: Myrciaria jaboticaba, pectin, polygalacturonase, chlorophyll, anthocyanin.Caracterização de Jabuticaba 'Sabará' em diferentes estádios de maturação RESUMO. O presente trabalho teve como objetivo avaliar as características físico-químicas e de atividade enzimática de jabuticabas 'Sabará' cultivadas em Lavras, Estado de Minas Gerias, Brasil, em diferentes estádios de maturação. Os frutos foram colhidos e separados em cinco diferentes estádios: frutos totalmente verdes; frutos com início de pigmentação; frutos com predominância roxo claro; frutos totalmente roxos e frutos totalmente roxo-escuro. Em seguida, os frutos foram submetidos às análises físico-químicas e a atividade da enzima poligalacturonase. Foi possível observar a degradação da clorofila e a síntese de antocianinas na casca dos frutos, bem como a degradação da parede celular e o conseqüente amaciamento dos mesmos. Na polpa, observou-se um aumento de sólidos solúveis, pH e açúcares, bem como uma diminuição da acidez à medida que o grau de maturação foi aumentando.

Phenolic compounds and anthocyanins content in grape juices varies in the cultivar, ripening and climate characteristics. The objective of this work was to characterize and evaluate antioxidant activity of grape juices produced in southwestern Minas Gerais. Grapes were harvested, sanitized and the juices from cultivars 'Bordô', 'Isabel Precoce', 'BRS Violeta' and 'BRS Rúbea' were produced in artisanal equipment by steam extraction and stored for 120 days. The following analyzes were performed during storage: color (L *), pH, soluble solids, titratable acidity, anthocyanins, antioxidant activity (DPPH and β-caroteno/linoleic acid), total phenolics, vitamin C and organic acids. Among the cultivars evaluated, the consumption of grape juice from cultivar 'BRS Violeta' is suggested due to its higher content of vitamin C, antioxidant activity, total phenolics, anthocyanins, and also due to a better physicochemical characteristic showed, when compared to the juices of the other cultivars.Index terms: Vitis labrusca, phenolics, vitamin C, organic acids. RESUMOO teor de compostos fenólicos e antocianinas em sucos de uva varia de acordo com a cultivar, maturidade e características climáticas. Neste trabalho, objetivou-se a caracterização e a avaliação da atividade antioxidante de sucos de uvas americanas produzidas no sudoeste de Minas Gerais. As uvas foram colhidas, sanitizadas, sendo as grainhas e demais partes dos cachos descartadas. Então, os sucos das cultivares Bordô (Vitis labrusca), Isabel Precoce (Vitis labrusca), BRS Violeta (híbrida) e BRS Rúbea (híbrida) foram produzidos em equipamento artesanal por extração em vapor de água, acondicionados em frascos de vidro e armazenados a 18ºC±2ºC por 120 dias. As seguintes análises foram realizadas ao longo do armazenamento: cor (L*), pH, sólidos solúveis totais, acidez titulável, , antocianinas, atividade antioxidante (DPPH e β-caroteno/ácido linoléico), fenólicos totais, vitamina C e ácidos orgânicos. Entre as cultivares avaliadas, sugere-se o consumo do suco de uva da cultivar BRS Violeta, pelos maiores valores de vitamina C, atividade antioxidante, fenólicos totais, antocianinas, além de apresentar melhores características físico-químicas quando comparada ao suco das demais cultivares. Knowing that moderate stress such as UV radiation can activate defense mechanisms in plants, the use of UV-C radiation appears as hypothesis of a promising technique that would help to stimulate and enhance beneficial compounds for health, through a clean and healthy technology. In this study, the possible induction of secondary metabolism, the increase in the content of phytochemical compounds and physicochemical changes through the use of UV-C radiation were evaluated on whole grape juices produced with Vitis labrusca grapes, cultivar Isabel Precoce. Grapes were harvested, sanitized, exposed to UV-C radiation at doses of 0, 2, 4 and 6 KJ m , and then the juices were prepared and packed into amber glass bottles at room temperature. Analyses were performed at 0, 30, 60, 90 and 120 days of storage. Based on results obtained and conditions in which the experiment was performed, UV-C treatment in grapes caused abiotic stress in the fruits, affecting color, titratable acidity, soluble solids/titratable acidity ratio, vitamin C and percentage of protection against oxidation. Application of UV-C did not change levels of phenolic compounds in fruit juices or the percentage of scavenging free radicals, pH and soluble solids.Index terms: Phenolics; antioxidant activity; vitamin C. RESUMOSabendo que estresses moderados como a incidência de radiação UV podem ativar mecanismos de defesa nos vegetais, o uso da radiação UV-C surge como hipótese de uma técnica promissora que ajudaria a estimular e a potencializar compostos benéficos para a saúde, por meio de uma tecnologia limpa e saudável. Neste estudo, avaliou-se a possível indução ao metabolismo secundário, o incremento do teor de compostos fitoquímicos e as alterações físico-químicas, por meio do uso da radiação UV-C em sucos de uva integrais produzido com uvas Vitis labrusca, cv. Isabel Precoce. As uvas foram colhidas, sanitizadas, submetidas à exposição à radiação UV-C, nas doses 0; 2; 4; e 6 kJ m -2 e, em seguida, destinadas à elaboração de sucos, que foram acondicionados em frascos de vidro âmbar e armazenados à temperatura ambiente, sendo as análises realizadas nos dias 0, 30, 60, 90 e 120 dias de armazenamento. Com base nos resultados obtidos e nas condições em que foi realizado o experimento, verificou-se que o tratamento UV-C nas uvas provoca um estresse abiótico nas frutas, afetando a coloração, acidez titulável e relação sólidos/acidez titulável, vitamina C e porcentagem de proteção contra a oxidação. A aplicação da radiação UV-C não resultou em alterações nos teores de compostos fenólicos dos sucos, nem na porcentagem de sequestro de radicais livres, não alterando também o pH e sólidos solúveis.
UV-C radiation is a food preservation method aimed to extend the life of the product, inactivate microorganisms, and stimulate the synthesis of phenolic compounds. This study aimed to physicochemically characterize and evaluate the antioxidant activity and phenolic content of 'Gala' apples subjected to different UV-C radiation doses. The fruits were harvested, sanitized, selected and inserted into a UV-C radiation chamber, and different radiation doses were applied as follows: 0 KJ m-2 (0 min.), 0.68 KJ m-2 (2 minutes), 2.73 KJ m-2 (4 minutes), and 4.10 KJ m-2 (6 minutes). The apples were stored for 120 days at 5 ± 1°C and analyzed after 0, 30, 60, 90, and 120 days of storage. Radiation doses had no influence on parameters, such as weight loss, firmness and Hue angle, and physicochemical aspects, such as pH, soluble solids, titratable acidity and the soluble solids/titratable acidity ratio. The 4.10 KJ m-2 dose was effective and increased the phenolic content and antioxidant activity for up to 90 days while maintaining the content of vitamin C during storage.
