RESUMOO feijão representa a principal fonte de proteínas para as populações de baixa renda, todavia a digestibilidade dessas proteínas é relativamente baixa. Por isto, os programas de melhoramento genético vêm trabalhando em busca de novas linhagens com níveis protéicos mais elevados. Assim, com a finalidade de fornecer informações aos melhoristas, neste trabalho foram analisadas 21 linhagens de feijão (Phaseolus vulgaris L.), quanto à composição centesimal e mineral, digestibilidade protéica, compostos fenólicos e inibidor de tripsina. O delineamento experimental utilizado foi o inteiramente casualizado, com 21 tratamentos (linhagens) e três repetições. O teor de proteína bruta variou de 22,34 a 36,28 g/100 g de matéria seca (MS); o de fibra detergente neutro de 7,56 a 20,91g/ 100 g MS; o de extrato etéreo de 0,53 a 2,55 g/100 g MS e o de cinzas de 2,97 a 4,87 g/100 g MS. Os teores, em g/100 g MS, de P, K, Ca, Mg e S variaram de 0,45 a 0,72; 1,51 a 2,48; 0,03 a 0,28; 0,18 a 0,34 e 0,28 a 0,45, respectivamente. Já os teores de Cu, Mn, Zn e Fe, em mg/kg MS, variaram de 11,37 a 17,73; 14,93 a 28,90; 36,67 a 69,90 e 71,37 a 126,90, respectivamente. A digestibilidade protéica in vitro variou de 18,03% a 48,32%. Os teores de compostos fenólicos variaram de 0,28 a 1,08 mg de ácido tânico/100 g MS e os de inibidor de tripsina de 59,93 a 151,07UTI/mg MS. Entre as linhagens com maiores teores protéicos a ESAL 569 (bege com rajas marrons) apresentou a maior digestibilidade protéica e também níveis consideráveis de minerais. A P-180 (bege com rajas marrons) ficou entre as linhagens com teores mais elevados de proteína bruta e entre as de maiores digestibilidades, além de ter apresentado teores elevados para a maioria dos minerais. Não foi observada nenhuma relação entre a digestibilidade da proteína e os teores de compostos fenólicos e inibidor de tripsina. RESUMOA lichia (Litchi chinensis Sonn.) é um fruto subtropical de alto potencial comercial devido ao seu sabor levemente acidificado, excelente aroma, alto valor nutritivo e atrativa cor vermelha da casca. Ainda no campo, a cor da casca altera-se facilmente, tornandose escurecida em resposta a estresses (alterações da umidade relativa e ataque de patógenos). Após colhida, a casca da lichia perde rapidamente sua cor vermelha. O escurecimento da casca tem sido atribuído a rápida degradação da antocianina, assim como: à rápida perda de umidade pelo fruto e à atividade de enzimas oxidativas como polifenoloxidases e peroxidases. Dada essa alta perecibilidade, o controle do escurecimento é fundamental para o aumento na vida útil pós-colheita, visando ao mercado interno e à exportação de frutas. Avaliou-se, neste trabalho, o comportamento pós-colheita de lichias da cv. Bengal quanto ao escurecimento da casca e às modificações relacionadas com a qualidade da polpa de lichias submetidas a diferentes embalagens: bandeja recoberta com filme de polietileno de baixa densidade com e sem perfurações e frutos recobertos com película de fécula de mandioca (3%). Os frutos foram mantidos em temperatura ambiente (25,1ºC±1,5ºC; 69,3%±8,62%UR) e armazenados por seis dias. Foram realizadas análises físicas, químicas e bioquímicas no dia 0 e a cada 2 dias, até osexto dia de armazenamento. A embalagem recoberta com filme de polietileno perfurado apresentou-se eficiente na redução da perda de massa, escurecimento da casca e na manutenção do teor de antocianina da casca de lichias durante seis dias de armazenamento, em temperatura ambiente.Termos para indexação: Atmosfera modificada, antocianina, polifenoloxidase, peroxidase. ABSTRACTLychee is a subtropical fruit of high commercial value, due to its slightly acid taste, excellent aroma, high nutritive value and attractive deep bright red color of its peel. Also in the field, skin color changes easily, becoming dark in response to stress (changes in relative humidity and the incidence of pathogens). Harvested lychee fruit rapidly loses its bright red skin colour. Peel browning of harvested lychee has largely been attributed to the rapid degradation of the anthocyanin pigments as well as the rapid loss of moisture from the fruit and the activity of oxidative enzymes such polyphenoloxidase and peroxidases. Due to it high perishability, browning control is a fundamental process to the increase of post-harvest useful life aiming the home market and fruit exportation. This study evaluated the postharvest behavior of Litchi cv. Isso o caracteriza como um fruto bastante perecível após a colheita. Dada essa alta perecibilidade, o controle do amadurecimento é fundamental para o aumento na vida útil pós-colheita, visando ao mercado interno e à exportação de frutas. O composto 1-metilciclopropeno (1-MCP) vem sendo usado com a finalidade de controlar o amadurecimento de frutos, flores e hortaliças. Neste trabalho foi avaliada a ação do tratamento com 1-MCP, em diferentes tempos de exposição, em mamões armazenados em condições ambiente. Os frutos foram colhidos no estádio 1 de maturação e foram submetidos ao 1-MCP, na concentração de 270 nL/L, por um período de 0, 12, 18 e 24 horas e, em seguida, armazenados em condição ambiente (T 22±2°C/UR 77% ±2%), por 8 dias. Os frutos tratados com 1-MCP apresentaram maior firmeza, menores teores de pectina solúvel e menor atividade de enzima PME mostrando que o 1-MCP foi eficiente em retardar o amaciamento dos frutos no período estudado. ABSTRACTThe papaya is a climateric fruit whose transformations resulting from ripening occur shortly after the picking of the physiologically ripe fruit, triggered by the production of ethylene and increased breathing rate. That makes it a quite perishable fruit after harvest. Given that perishability, ripening control is fundamental to increase post-harvest shelf life, both for internal consumption and exports. The compound 1-methylcyclopropene (1-MCP) has been used with the purpose of controlling the ripening of fruits, flowers and vegetables. In this work, the effect of the treatment with 1-MCP on papayas stored under room conditions was evaluated in different exposure periods. The fruits were picked at stage 1 of maturation and were submitted to 1-MCP, at the concentration of 270 nL/L, for a period of 0, 12, 18 and 24 hours, and then stored under room conditions (T 22±2°C/RH 77% ±2%) for 8 days. The 1-MCP-treated fruits showed increased firmness, lower contents of soluble pectin and less activity of PME enzyme, showing that 1-MCP was effective in delaying the softening of the fruits over the studied period. Knowing that moderate stress such as UV radiation can activate defense mechanisms in plants, the use of UV-C radiation appears as hypothesis of a promising technique that would help to stimulate and enhance beneficial compounds for health, through a clean and healthy technology. In this study, the possible induction of secondary metabolism, the increase in the content of phytochemical compounds and physicochemical changes through the use of UV-C radiation were evaluated on whole grape juices produced with Vitis labrusca grapes, cultivar Isabel Precoce. Grapes were harvested, sanitized, exposed to UV-C radiation at doses of 0, 2, 4 and 6 KJ m , and then the juices were prepared and packed into amber glass bottles at room temperature. Analyses were performed at 0, 30, 60, 90 and 120 days of storage. Based on results obtained and conditions in which the experiment was performed, UV-C treatment in grapes caused abiotic stress in the fruits, affecting color, titratable acidity, soluble solids/titratable acidity ratio, vitamin C and percentage of protection against oxidation. Application of UV-C did not change levels of phenolic compounds in fruit juices or the percentage of scavenging free radicals, pH and soluble solids.Index terms: Phenolics; antioxidant activity; vitamin C. RESUMOSabendo que estresses moderados como a incidência de radiação UV podem ativar mecanismos de defesa nos vegetais, o uso da radiação UV-C surge como hipótese de uma técnica promissora que ajudaria a estimular e a potencializar compostos benéficos para a saúde, por meio de uma tecnologia limpa e saudável. Neste estudo, avaliou-se a possível indução ao metabolismo secundário, o incremento do teor de compostos fitoquímicos e as alterações físico-químicas, por meio do uso da radiação UV-C em sucos de uva integrais produzido com uvas Vitis labrusca, cv. Isabel Precoce. As uvas foram colhidas, sanitizadas, submetidas à exposição à radiação UV-C, nas doses 0; 2; 4; e 6 kJ m -2 e, em seguida, destinadas à elaboração de sucos, que foram acondicionados em frascos de vidro âmbar e armazenados à temperatura ambiente, sendo as análises realizadas nos dias 0, 30, 60, 90 e 120 dias de armazenamento. Com base nos resultados obtidos e nas condições em que foi realizado o experimento, verificou-se que o tratamento UV-C nas uvas provoca um estresse abiótico nas frutas, afetando a coloração, acidez titulável e relação sólidos/acidez titulável, vitamina C e porcentagem de proteção contra a oxidação. A aplicação da radiação UV-C não resultou em alterações nos teores de compostos fenólicos dos sucos, nem na porcentagem de sequestro de radicais livres, não alterando também o pH e sólidos solúveis.
Strawberries attracts consumers due to its bright red color, characteristic odor, soft texture and slightly acid taste, with several phytochemicals groups that can bring health benefits. However, strawberries are very susceptive to decay, with a short shelf life and do not support sanitization. The cooling reduces the metabolism of fruits during postharvest period and the irradiation can be used as a complement to improve fruit preservation. The aim of this study was to evaluate the application different doses of gama irradiation (0,0 KGy; 0,5 KGy; 1,0 KGy e 1,5 KGy) aiming an extended shelf life and quality maintenance of strawberries stored at cold room (0 ± 1ºC and 90 ± 5% RH) during 15 days. Doses of gama irradiation were not sufficient to change quality parameters and nutritional compounds in strawberries during storage, and the microbiological levels were acceptable until the end of storage period regardless the treatment. Fruit treated with 1,5 KGy were characterized for the higher anthocyanins levels and maintained the lower visual decay index during the last days of storage when compared to other treatments.
Resumo: Hortaliças minimamente processadas são produtos de alta conveniência ao consumidor, porém naturalmente com curta vida útil e com menores teores de compostos bioativos quando comparados com vegetais intactos. O objetivo do trabalho foi verificar a influência da radiação UV-C na qualidade e no teor de compostos fenólicos e atividade antioxidante de diferentes hortaliças minimamente processadas. Nove diferentes hortaliças (tomate, cebola, pimentão, abobrinha, repolho roxo, couve-flor, cenoura, beterraba e batata) foram minimamente processadas e tratadas, ou não, com irradiação UV-C na dose de 4,10 KJ m 2 e em seguida armazenadas em câmara fria pelo período de 72 horas. Em seguida os parâmetros a seguir foram avaliados: coloração (L*, a*, b*, Chroma e ºHue), sólidos solúveis totais, acidez total titulável, atividade antioxidante (pelo método do DPPH e β-caroteno/ácido linoleico) e fenólicos totais. Neste trabalho a dose de irradiação utilizada não influenciou os parâmetros de qualidade avaliados, não observando-se diferença significativa em parâmetros de qualidade em nenhuma hortaliça após serem submetidas à radiação UV-C. Sugeremse testes de controle de microrganismos e qualidade no armazenamento de hortaliças após irradiação, já que as características de qualidade desejáveis pelo consumidor não são influenciadas pela radiação UV-C. UV-C Radiation on Fresh Cut Vegetables Quality:Fresh cut vegetables are products with convenience for consumers, but with a short shelf-life and lower levels of bioactive compounds, when compared to unprocessed vegetables. The aim of this study was to evaluate the influence of UV-C radiation on quality, phenolic compounds and antioxidant activity of different fresh cutted vegetables. Nine different vegetables (tomato, onion, bell pepper, zucchini, red cabbage, cauliflower, carrot, beets and potato) were minimally processed and the control and irradiated (UV-C -4,10 KJ m 2 ) treatments were placed in a cold room for 72 hours. The following parameters were evaluated: color (L*, a*, b*, Chroma and ºHue), total soluble solids, titratable acidity, antioxidant activity (DPPH and β-carotene methods) and total phenolics. The UV-C did not influenced the quality parameters, with no significant difference between treated and control samples in vegetables after irradiation process. Tests including microbiology analysis and quality during storage of vegetables after irradiation are suggested, since the quality parameters, desirable for consumers, were not influenced.
