RESUMOO feijão representa a principal fonte de proteínas para as populações de baixa renda, todavia a digestibilidade dessas proteínas é relativamente baixa. Por isto, os programas de melhoramento genético vêm trabalhando em busca de novas linhagens com níveis protéicos mais elevados. Assim, com a finalidade de fornecer informações aos melhoristas, neste trabalho foram analisadas 21 linhagens de feijão (Phaseolus vulgaris L.), quanto à composição centesimal e mineral, digestibilidade protéica, compostos fenólicos e inibidor de tripsina. O delineamento experimental utilizado foi o inteiramente casualizado, com 21 tratamentos (linhagens) e três repetições. O teor de proteína bruta variou de 22,34 a 36,28 g/100 g de matéria seca (MS); o de fibra detergente neutro de 7,56 a 20,91g/ 100 g MS; o de extrato etéreo de 0,53 a 2,55 g/100 g MS e o de cinzas de 2,97 a 4,87 g/100 g MS. Os teores, em g/100 g MS, de P, K, Ca, Mg e S variaram de 0,45 a 0,72; 1,51 a 2,48; 0,03 a 0,28; 0,18 a 0,34 e 0,28 a 0,45, respectivamente. Já os teores de Cu, Mn, Zn e Fe, em mg/kg MS, variaram de 11,37 a 17,73; 14,93 a 28,90; 36,67 a 69,90 e 71,37 a 126,90, respectivamente. A digestibilidade protéica in vitro variou de 18,03% a 48,32%. Os teores de compostos fenólicos variaram de 0,28 a 1,08 mg de ácido tânico/100 g MS e os de inibidor de tripsina de 59,93 a 151,07UTI/mg MS. Entre as linhagens com maiores teores protéicos a ESAL 569 (bege com rajas marrons) apresentou a maior digestibilidade protéica e também níveis consideráveis de minerais. A P-180 (bege com rajas marrons) ficou entre as linhagens com teores mais elevados de proteína bruta e entre as de maiores digestibilidades, além de ter apresentado teores elevados para a maioria dos minerais. Não foi observada nenhuma relação entre a digestibilidade da proteína e os teores de compostos fenólicos e inibidor de tripsina. ABSTRACTBean represents the main source of proteins for the low income populations, though the digestibility of those proteins is relatively low. Consequently, the programs of plant genetic breeding have been working on the search for new lines with higher protein levels. Infection by nematode parasites with a pulmonary migration in their life cycle and allergic asthma are two highly prevalent diseases in humans; therefore, one may expect both may occur concomitantly. There is a predominant and essential role of Th2 lymphocytes in the mechanisms underlying the control of parasite elimination as well as in the pathology observed in the asthmatic lung. The consequences of such situations have been explored, with controversial results, justifying the development of experimental models in which the relationship between allergic airway inflammation and helminth infection might be evaluated. The present work describes the inflammatory, humoral, and functional changes that occur in the lung of rats after single (subcutaneous inoculation of 1,500 L3 larvae) or multiple (five weekly subcutaneous inoculations of 1,500 L3 larvae) Strongyloides venezuelensis infections. The results show that the migration of S. venezuelensis larvae through the lungs of infected rats induces a local eosinophilic inflammation process which is mostly focal and parenchymal for rats infected a single time and which is peribronchial after multiple infections. The inflammatory process is accompanied by mucus hypersecretion, thickening of bronchial epithelial and muscle layers, and local increase in immunoglobulin E concentrations that peak after 5 to 7 days and are resolved after 12 days of single or multiple infections. The peak of lung immunopathologic changes observed in infected rats coincides with lung airway hyperresponsiveness (AHR), a key functional alteration in asthma. We propose that this experimental model is ideal to carry out further studies on immunoprotection against nematode infection versus immunopathology of allergic airway inflammation.

SUMMARYThe high number of cassava cultivars adapted to many different regions provides a wide variation in the chemical composition of cassava leaves meal (CLM). Therefore, the contents of some nutrients in CLM from five cultivars at three ages of the plant were investigated in order to select the cultivars and ages with superior levels of these nutrients. When the plants were 12 months old, the highest levels of crude protein (CP), β-carotene, iron, magnesium, phosphorus and sulfur were observed. The IAC 289-70 cv. showed the highest levels of magnesium, as well as considerable contents of CP, β-carotene, iron, zinc and sulfur, which did not differ statistically from the cultivars showing the highest levels of these nutrients. O número elevado de cultivares de mandioca adaptados às mais diversas regiões confere ampla variação na composição química da farinha de folhas de mandioca (FFM). Portanto, foram investigados os teores de alguns nutrientes nas FFM de cinco cultivares em três idades da planta, a fim de selecionar cultivares e idades com níveis superiores destes nutrientes. Aos 12 meses de idade da planta, observaram-se os maiores níveis de proteína bruta (PB), β-caroteno, ferro, magnésio, fósforo e enxofre. O cultivar IAC 289-70 apresentou os maiores níveis de magnésio, assim como teores apreciáveis de PB, β-caroteno, ferro, zinco e enxofre, pois não diferiu estatisticamente dos cultivares com os níveis mais elevados destes nutrientes. In Brazil, the cassava leaf meal (CLM) has been used to strive against undernourishment because it is a high source of vitamins and minerals. However, the wide variation in the chemical composition of the different cultivars, as well as their antinutritional substances may be a restriction to their uses. The levels of some antinutrients in CLM from five cultivars at three ages of the plant (TAP) were investigated, in order to select the cultivars and plant ages that would be more appropriate for human consumption. The lowest contents of antinutrients were observed in the 12-month old plants, except for nitrate and hemagglutinin from which the lowest contents were found for the 17 month old ones. The cultivar IAC 289-70 had the lowest antinutrient levels, except for saponin and oxalate. Thus, the cultivar IAC 289-70 at 12 months is the most appropriate for human consumption. ResumoNo Brasil, a farinha de folhas de mandioca (FFM) vem sendo usada no combate à desnutrição por ser fonte de vitaminas e minerais. Todavia, a grande variação na composição química dos diferentes cultivares e a presença de substâncias antinutricionais tem restringido o seu uso. Investigaram-se os níveis de alguns antinutrientes da FFM de cinco cultivares em três idades da planta (TIP), a fim de selecionar cultivares e idades mais adequadas para o consumo humano. Aos 12 meses foram observados os menores teores de antinutrientes, exceto para nitrato e hemaglutinina, os quais foram inferiores aos 17 meses. O cultivar IAC 289-70 destacou-se com os menores níveis dos antinutrientes, exceto para a saponina e oxalato. Portanto, o cultivar IAC 289-70, aos 12 meses, é o mais adequado para o consumo humano.

New bioemulsifier-producing yeasts were isolated from the biological wastewater treatment plant of a dairy industry. Of the 31 bioemulsifier-producing strains, 12 showed emulsifying activity after 2months of incubation, with E(24) values ranging from 7% to 78%. However, only Trichosporon loubieri CLV20, Geotrichum sp. CLOA40, and T. montevideense CLOA70 exhibited high emulsion-stabilizing capacity, with E(24) values of 78%, 67%, and 66%, respectively. These isolates were shown to induce a strong emulsion stabilizing activity rather than the reduction of the interfacial tension. These strains exhibited similar growth rates in the exponential growth phase, with a clear acceleration after 24h and stabilization of the activity after 144h. Emulsification and stability properties of the bioemulsifiers were compared to those of commercial surfactants after the addition of NaCl and exposure to temperature of 100 degrees C. The compounds produced by the isolates appeared to be lipid-polysaccharide complexes. Gas chromatograph analysis of the lipidic fraction of the bioemulsifiers from CLV20, CLOA40, and CLOA70 shows the prevalence of (9Z,12Z)-octadeca-9,12-dienoic acid, in concentrations of 42.8%, 25.9%, and 49.8%, respectively. The carbohydrate composition, as determined by GC-MS of their alditol acetate derivatives, showed a predominance of mannose, galactose, xylose and arabinose.

Peroxidases can be used in decolorization processes and the treatment of textiles effluents. This study evaluates the potential of the turnip peroxidase enzyme in the decolorization of the phthalocyanine textile dye Reactive Blue 21 (RB21). Some factors such as pH, the amount of H 2 O 2 and the enzyme were evaluated in order to determine the optimum conditions for the enzyme performance. The reaction products formed during the decolorization of the RB21 dye were analyzed by high-performance liquid chromatography-mass spectrometry coupling (LC-ESI/MS). LC-ESI/MS analysis showed that the decolorization of the dye RB21 by turnip peroxidase is due to the breaking up of the chromatogenous system. The tests for toxicity towards lettuce seeds showed an increase of the toxicity after enzymatic treatment of the dye. This study verifies the viability of the use of the turnip peroxidase enzyme in the biodegradation of textile dyes.
