Show more

“…In southern Brazil, the tolerance limits of contamination are numerically listed as 6.0x10 5 somatic cells/mL and 6.0x10 5 colony-forming units/ mL for refrigerated raw milk, in addition to some specific physicochemical characteristics (BRASIL, 2011). Nero et al (2009) confirmed that the main parameter used to demonstrate the quality of this product is the microbiological profile, influenced mainly by the methods for obtaining, storing and transporting milk. It is known that there are many variables that interfere negatively with milk quality, and some of these variables require more research, such as milk contamination.…”

“…In the entire region of southern Brazil, including the state Paraná, milk cooling has been implemented for years, even prior to the legal implementation of IN 51 (BRASIL, 2002). In contrast to the milk from Maranhao where small producers rarely cool milk, cooling practices may have led to the selection of psychrotrophic microorganisms in the milk produced in Paraná, resulting in the predominance of mesophilic microorganisms with primarily saccharolytic metabolism (NERO et al, 2009). …”
