The aim was to analyze the Unstable Non-Acid Milk (UNAM) phenomenon through the association of zootechnical characteristics of the farms relating them to their occurrence. The data collection was carried out in 12 dairy farms which received a technical visit to learn the production system: handling, feeding, mineralization and milking procedures. The milk samples were analyzed for fat, protein, lactose, solids not fat, standard plate count, somatic cell count, pH, titratable acidity and ethanol test stability. Milk data were submitted to analysis of variance; association between zootechnical characteristics and UNAM were determined by logistic regression; and multivariate analysis of principal components was carried out. The occurrence of UNAM was verified in 25% of the evaluated farms. In UNAM herds 27% to 33% of the cows were classified as UNAM. The animals with UNAM milk was different between farms classified as Stable or UNAM, being 12% and 30% of cows, respectively. The detection of UNAM was possible when in the herd there are at least 23% of the animals producing UNAM milk. The three principal components identified covered the main areas of influence on the occurrence of UNAM: Quality and interaction with part of the solids; Production and relationship with lactose; Nutrition and correlations with part of the components. The classification of milk in the expansion tank as UNAM can only be identified when more than 23% of the animals were in this condition. The multivariate analysis identified that the nutritional balance of each cow was determining factor for UNAM presence.

The diagnosis of unstable non-acid milk (UNAM) in Brazil is overlooked due to the lack of information about this problem available to dairy farmers, mainly in the North region of the country. This report describes the occurrence of UNAM in three dairy farms of family farmers in northern Tocantins state, Brazil, who use animal feed based on Urochloa brizantha without mineral supplementation. The animals had been subjected to a poor feeding practice, with low quantity and quality, due to the dry period in the region and inappropriate nutritional management. Fourteen animals that presented alterations in milk characteristics were subjected to 72% alizarol test, California mastitis test, strip cup test, somatic cell count (SCC), boil test, physical-chemical and microbiological analyses, and search for undesirable substances. The time of lactation, udder health, and serum glucose level of animals, and soil and forage quality were also evaluated. The results showed 42% animals diagnosed with mastitis, 21% of them with clinical and 21% with subclinical mastitis; and 78% of animals with samples positive for the alizarol and boil tests, and Dornic acidity between 14° and 18°, characterizing positive cases for UNAM. Only one animal presented SCC above the limit established by the Brazilian legislation. The animals presented undamaged teats and no alteration in glycemia. Changes in nutritional management were recommended and done and the alizarol tests were redone after 14 days, showing all negative results for UNAM. The conclusion is that incorrect nutritional management is the main cause of UNAN in the studied cases.

The objective was to differentiate dairy farms and correlate their characteristics with the occurrence of Unstable non-acid milk (UNAM) in the far west of Santa Catarina. In addition to ascertaining the lowest graduation in the alcohol test for milk selection in a commercial dairy. Assessments were made at 45 farms that sold milk in the commercial dairy. Management and production characteristics were identified between August and December of 2016. Milk samples were collected biweekly from the cooling tank between August 2016 and July 2017. They were analyzed for stability to alcohol testing in gradations from 72 to 80 % at 2% intervals, in addition to the boil test, titratable acidity, and pH. The Pearson's Chi-square test was used to evaluate the difference between the UNAM in the graduations tested and the regression analysis to estimate the effect of quantitative variables on the accumulated UNAM. Regression analysis as performed to verify the effect of the month of the year on the UNAM. The milk production in 91% of the farms was in the pasture system with supplementation and the rest in semiconfinement. The area of the farm was 23.6 ± 16 ha to keep 23.6 ± 9.3 lactating cows producing on average of 16.6 ± 4.9 liters/cow. The incidence of UNAM increased concomitantly with the increase in the alcoholic grade used in the test and, in February, the lowest grade for identification of UNAM was found. The study concluded that the accumulated UNAM correlated negatively with the area to produce food and animal productivity. The 76% alcohol content is the best alternative to select commercialized milk.
