ResumoO teste do álcool é amplamente utilizado na recepção dos laticínios para a verificação da estabilidade do leite cru. O leite que não é estável no teste e não apresenta acidez elevada é definido como leite instável não ácido (LINA). A sua ocorrência tem característica multifatorial e pode estar relacionada ao manejo nutricional inadequado. Este estudo objetivou avaliar a influência da infraestrutura da propriedade e da alimentação dos animais sobre a ocorrência de LINA. A infraestrutura foi caracterizada através de questionário guia semiestruturado. Analisou-se a composição centesimal do leite das propriedades, resistência ao teste do álcool, acidez titulável e o pH. Foram consideradas LINA as amostras que precipitaram em concentração de álcool menor ou igual a 72%, com acidez e pH normais. Nos alimentos coletados, determinou-se o teor de fibra em detergente neutro. Os dados foram avaliados através de análise fatorial e de agrupamento utilizando o pacote estatístico SAS. O uso de suplementos alimentares volumosos e concentrados, com consequente melhoria da produtividade animal e maior teor de lactose no leite foi relacionado com menor ocorrência de LINA nas condições estudadas. A ocorrência de LINA apresentou pouca relação com a infraestrutura das propriedades e com a estação do ano. O trabalho objetivou relacionar aspectos da produção leiteira e estrutura para ordenha com a qualidade do leite da região do Vale do Braço do Norte-SC, utilizando técnicas de análise multivariada. O estudo foi realizado em 20 propriedades leiteiras, fornecedoras de uma indústria de laticínios, selecionadas aleatoriamente nos municípios da região. As informações sobre o sistema de produção foram obtidas através do preenchimento de uma lista de verificação durante a ordenha. Os dados de produção, composição, Contagem de Células Somáticas (CCS) e Contagem Bacteriana Total (CBT) foram disponibilizados pela indústria, sendo utilizada a média dos valores dos últimos três meses. Os dados foram avaliados através de análise multivariada (análise fatorial e análise de correspondência múltipla), utilizando-se o pacote estatístico SAS ®. Observou-se relação positiva entre a CCS e a CBT, e entre os teores de gordura e proteína do leite, sendo que as contagens são antagônicas aos teores. A produção de leite por propriedade e a produtividade das vacas também se relacionaram positivamente. As propriedades com maiores valores destas variáveis possuíam ordenha canalizada, sala de ordenha com bom arejamento, fosso azulejado, contenções de metal e alimentavam os animais após a ordenha. As propriedades com menores valores possuíam ordenha balde ao pé, sala de ordenha mal arejada, com fosso concretado, contenções de madeira e faziam a alimentação durante a ordenha. No entanto, a CCS e a CBT não se relacionaram com nenhum destes componentes, constatando que tecnologias e estrutura física não são garantia de uma melhor qualidade do leite.
RESUMO:O estudo objetivou avaliar os fatores que influenciam na qualidade do leite de propriedades da agricultura familiar no Planalto Norte Catarinense e identificar a qualidade da água utilizada na higienização dos equipamentos de ordenha. A pesquisa foi desenvolvida em propriedades leiteiras do Planalto Norte Catarinense visitadas no inverno de 2013 e no verão de 2014, caracterizadas por meio de um questionário guia semiestruturado. Nas amostras de leite foram realizadas análises de contagem bacteriana total, contagem de células somáticas e contagem de bactérias psicrotróficas. Nas amostras de água foram realizadas as seguintes análises microbiológicas: Escherichia coli, coliformes a 35ºC, aeróbios mesófilos e contagem de bactérias psicrotróficas. Os dados foram avaliados por análise fatorial. O manejo de ordenha influenciou a qualidade microbiológica do leite, porém a estrutura da propriedade exerceu pouca influência. Em 84% das propriedades a água que abastecia a produção era a mesma que abastecia a casa da família. As concentrações dos diferentes indicadores de qualidade microbiológica da água analisados estão relacionadas entre si, assim como as concentrações dos indicadores de qualidade do leite. Entretanto, a qualidade da água utilizada nas propriedades leiteiras não tem relação com a qualidade do leite e é influenciada pela precipitação pluviométrica. Palavras-chave: bactérias psicrotróficas; contagem bacteriana total; estrutura de propriedade; manejo de ordenha ABSTRACT: The study aimed to evaluate the factors that influence the milk quality of family farms of Planalto Norte of Santa Catarina and identify the quality of water used in the cleaning of milking equipment. The research was conducted in dairy farms of Planalto Norte of Santa Catarina visited in winter 2013 and summer 2014, characterized by a survey. In milk samples were analyzed total bacterial count, somatic cell count and psychrotrophic bacteria count. In water samples were analyzed Escherichia coli, coliforms at 35ºC, aerobic mesophilic and psychrotrophic bacteria count. Data were evaluated using factor analysis. Milking management influenced microbiological quality of milk, but the farm structure had little influence. In 84% of the farms the water used in the milking parlor was the same as that supplied the family home. Concentrations of different indicators of water microbiological quality analyzed are highly related, as well as the concentrations of milk quality indicators.
