Seafood is one of the most important components of a healthy diet due to its composition. With the Black, Marmara, Aegean and Mediterranean Sea, Turkey has substantial sources of seafood. Seas are highly impacted by environmental pollution. Among these, heavy metal pollution has long been recognized as a serious problem for seafood. As heavy metals cannot be degraded, they are deposited, assimilated or incorporated in water, sediment and aquatic animals. By these properties, they can be transferred to humans through the food chain especially by the consumption of fish and shellfish. The aim of this study is to determine the concentrations of Cd, As, Pb and Hg levels in selected fish species and marine animals from all of the 4 seas of Turkey by using the ICP-MS technique, and to compare the results with the legislations safe limits. For this purpose, 13 different fish species, mussels and shrimps have been obtained from the Black, Marmara, Aegean and Mediterranean Seas. According to the results, metal concentrations decrease in the order As>Pb>Hg>Cd. In all the seas, the same order was found. Statistically significant differences were observed in the metal levels between fish species and the shellfish in all regions. Except for the two samples, all the results was found compatible with the Turkish Food Codex and European Commission Regulation limits. Arsenic levels were detected between 0,076-4,230 mg/kg within the samples. Cadmium levels were detected as higher than the limits in two samples obtained from the Mediterranean Sea, Scophthalmus maximus and Mullus barbatus species as 0,076 mg/kg and 0,064 mg/kg, respectively. The highest and the lowest levels of mercury and lead were measured as 0,005-0,405 and 0,015-0,405 mg/kg, respectively. The results obtained from this study revealed that, except for a few cases, the selected heavy metal concentrations in most samples were below the limits. Also, besides the mussels and the shrimps, there was no single type of fish that was consistently high in all metals. The examined seas and the seafood were found to be safe for human consumption.
Pine honey is a honeydew honey that can be produced endemically in eastern Mediterranean. Turkey is the world's largest producer of pine honey with around 95% export share. Antibiotic residue in honey is still an important problem worldwide. The aim of this study was to determine sulfonamide and tetracycline group antibiotics in pine honey collected from Aegean Region of Turkey. For this purpose, 59 natural pine honey samples were detected by competitive enzyme-linked immunoassay method. Tetracycline group antibiotics were found in 35 honey samples out of 59 between 6 and 42 ppb, whereas in 24 of the samples the levels were below the detection level (< 4 ppb). Sulfonamide group antibiotics were found in 31 honey samples out of 59 between 3 and 32 ppb, while 28 samples were below the detection limit (< 2 ppb). There are no maximum residue limits established for antibiotics in honey according to the European Community regulations, which means honeys should not contain antibiotics.
This study was aimed to determine the presence and amount of the phthalates in yoghurt and ayran samples consumed in Turkey. For this purpose, 36 yoghurt and 24 ayran samples were used as materials in original packages collected from different markets in Turkey. The presence and the amounts of di-n-butyl phthalate (DBP), di (2-ethylhexyl) phthalate (DEHP), benzyl butyl phthalate (BBP), di-isononyl phthalate (DINP), di-n-octyl phthalate (DNOP) and diisodecyl phthalate (DIDP) were determined by liquid chromatography/tandem mass spectrometry (LC-MS/MS). The results of the analysis howed that DBP, DEHP and BBP were present in the yoghurt samples whereas DINP, DIDP and DNOP were found to be lower than the detectable limit 20 µg/kg. The lowest and the highest mounts of DBP, DEHP and BBP in yoghurt samples are 6-229, 24-122, 22-63 µg/kg respectively. The lowest and highest phthalate amounts in ayran samples are determined to be 38-59 µg/kg for DBP and 26-81 µg/kg for DEHP. According to the results, although DEHP and DBP were the main phthalate esters in all milk products that were analyzed, the phthalate values of the samples were found to be less than the limit values (P<0.001).
Belirli bitki türlerinde bulunan Pirolizidin alkaloidleri (PA), özellikle üretim alanlarında kontaminasyon oluşturarak gıdaların tüketimiyle halk sağlığı açısından risk oluşturmaktadır. PA'lar, intoksikasyonlara duyarlılıklarından dolayı başta bebek ve çocuklar olmak üzere tüm yaş gruplarında hepatoksik, pnömotoksik, genotoksik, mutojenik, teratojenik ve karsinojenik etkilidir. Çalışmada, Türkiye’nin kekik ihracaatında önemli payı olan Denizli’de yetiştirilen kekiklerde (Origanum onites) PA ve N-oksit (PANO) bileşiklerinin varlığının ve düzeyinin LC-MS Q-TOF ile araştırılarak potansiyel halk sağlığı risklerinin belirlenmesi amaçlandı. Denizli’de kekik üretimi yapan farklı işletmelerden alınan işlenmiş, paketlenmiş 3 kekik örneği ile Denizli ilinin farklı bölgelerine ait işlenmemiş 8 kekik örneği olmak üzere toplam 11 örnek materyal olarak kullanıldı. Örneklerde PA ve PANO bileşiklerinin tanımlanması ve miktarlandırılması LC-MS Q-TOF ile yapıldı. Analize alınan örneklerden işlenmiş bir örnekte, europine ve europine N-oksit toplam 280 ±22 µg/kg tayin edildi. Analiz sonuçlarına göre; kekik örneklerindeki PA değeri, 2020/2040/AB sayılı regülasyonda belirtilen PA limit değerin (1000 µg/kg) altında saptandı. Örneklerin, PA yönüyle halk sağlığı açısından risk oluşturmadığı belirlendi. Ancak europin saptanan işlenmiş ve paketlenmiş örnek ile aynı bölgeden alınan bütünlüğü bozulmamış kekik örneklerinde PA'ya rastlanmamış olması kekiğin işlenme aşamasında iz miktarda da olsa yabani ot ve tohum parçalarından kaynaklanan kontaminasyonunu işaret etmektedir. Çalışma, alkaloid kontaminasyonunu önlemek amacıyla kekik üretiminde işlenme sürecinin önemini ve ürünün yabani otlardan arındırılması gerekliliğini ortaya koymuştur. Bitki kaynaklı gıdalar için PA sınır değerlerinin 2020/2040/AB sayılı Komisyon Tüzüğü’nde belirtildiği, 2022 yılında yapılacak düzenlemelerle kekik için bu değerin 1000µg/kg olacağı bildirilmektedir. Çalışmanın Türk Gıda Kodeksi kapsamında PA düzenlemelerine zemin oluşturacağı öngörülmektedir.
Honey is an important animal product that is consumed by people of all ages and has become an important antimicrobial agent because it has both antibacterial properties and does not cause microbial resistance. Although, Turkey is among the most important honey producers of the world, there are not enough studies about the antibacterial activity of Turkish honey. According to their geographical area, honey exhibit considerable and variable antimicrobial activity. In this study, we investigated the in vitro antibacterial effect of honey obtained from Turkey, against Escherichia coli, Listeria monocytogenes, Salmonella Typhimurium and Staphylococcus aureus by using agar dilution, agar well diffusion and disc diffusion methods and compared the efficacy of these methods. Results showed the antibacterial effects of Turkish honey, collected from different regions against selected pathogens. Different concentrations of all honey samples displayed an antibacterial activity. Each microorganism exhibited different sensitivity to the honey tested. In addition, a significant difference was detected between the three methods for each microorganism and well diffusion method was found to be the most sensitive method.
Öz: Organofosfatlı ve karbamatlı insektisitlere alternatif olarak geliştirilen neonikotinoidler, günümüzde dünya çapında en yaygın kullanılan insektisit sınıfı olup polen ve nektar dâhil bitkilerin tüm kısımlarına geçerek bu bitkiler tarafından üretilen ürünlere ve hatta arı ürünlerine aktarılabilmektedir. Bu sistemik özellikleriyle neonikotinoidler, bal arıları ve yabani arılar gibi canlıların yanı sıra, insanlar dahil diğer omurgalılar üzerinde de olumsuz etkilere yol açmaktadır. Bu nedenle hangi türevlerinin ne oranda etki oluşturduğuna ilişkin araştırmalar son yıllarda hızla artmakta ve bu çalışma sonuçlarına göre farklı ülkelerde neonikotinoid kullanımlarına yasaklar ve kısıtlamalar getirilmektedir. Bu çalışmanın amacı Türkiye'de üretilen ballarda neonikotinoid varlığının ve dolayısıyla çevredeki kirlilik seviyesinin ölçülmesidir. Bu amaçla, hasat sonrası Türkiye'nin farklı illerindeki arı yetiştiricilerinden direkt temin edilen 44 bal örneği materyal olarak kullanılmıştır. Örneklerde asetamiprid, klotianidin, dinotefuran, imidakloprid, nitenpiram, tiyaloprid ve tiametoksam varlığı Sıvı Kromatografi Kuadrupol Uçuş Zamanlı Kütle Spektrometresi (LC-MS Q-TOF) kullanılarak araştırılmıştır. Analiz edilen örneklerin hiçbirinde neonikotinoid grubu insektisitlere rastlanmamıştır. Analiz edilen örneklerde neonikotinoidlere rastlanmaması Türkiye açısından umut verici bir bulgudur. Neonikotinoidlerin kullanım şekilleri ve canlı organizmalara etkileri üzerine artan araştırmalar yanında, çevresel varlığının da düzenli olarak takip edilmesi ve limitlerin belirlenmesinin, halk sağlığının korunması açısından önemli olduğu düşünülmektedir.
