Este trabalho teve como objetivo estudar as características de carcaça e da carne de novilhos castrados e novilhas superjovens. Foram usados doze animais de cada sexo, recriados com suplementação energética sobre pastagem cultivada de Lolium multiflorum + Avena strigosa e terminados em pastagem cultivada de Pennisetum purpureum, onde permaneceram até o abate aos quatorze meses de idade. Os pesos de fazenda e de carcaça quente foram superiores nos machos, sendo de 365,8 e 203,4 kg, respectivamente, enquanto as fêmeas apresentaram 310,3 e 168,6 kg, citados na mesma ordem. Os machos foram superiores nos comprimentos de carcaça (118,1 vs. 111,3 cm) e de perna (69,2 vs. 64,1 cm) e na área de Longissimus dorsi (58,0 vs. 52,4 cm 2 ). Não houve diferença na espessura de gordura subcutânea da carcaça, mas as fêmeas apresentaram carne mais marmoreada (5,58 pontos) do que os machos (3,67 pontos). Não se verificaram diferenças nas características sensoriais e organolépticas da carne entre os animais dos dois sexos. Concluiu-se que, exceto em relação ao peso de carcaça, novilhas jovens possuem características de carcaça e da carne semelhantes aos machos. Objetivou-se avaliar os parâmetros produtivos das pastagens de milheto (Pennisetum glaucum (L.) R. BR) e capim sudão (Sorghum bicolor cv. sudanense) submetidas ao pastejo contínuo de vacas destinadas ao abate. O delineamento experimental foi o inteiramente casualizado com dois tratamentos e três períodos, sendo cinco repetições (área). Os parâmetros produtivos das pastagens foram similares na comparação entre os tratamentos (P<0,05). O ciclo vegetativo das pastagens não alteraram a massa de forragem (1.606,93 kg e 1.617,47 de matéria seca (MS)/ha) e a oferta de forragem (9,42 e 8,29 kg de MS/100 kg de PV) das pastagens de milheto ou capim sudão. No entanto, as médias para taxa de acúmulo de matéria seca e proteína bruta demonstraram maiores valores nos primeiros 21 dias de utilização das pastagens (130,77 kg de MS/ha e 17,04 g/kg de MS), seguidas de reduções nos dois últimos períodos, sendo as médias do segundo período (65,53 kg/ha de MS e 12,96 g/kg de MS) superior à do terceiro período experimental (36,13 kg/ha de MS e 10,01 g/kg de MS). Os valores para fibra em detergente neutro foram similares nos dois períodos iniciais (48,81; 49,01 g/kg de MS), seguida de aumento nos últimos 21 dias de utilização das pastagens (56,54 g/kg de MS). A taxa de lotação em kg/ha de PV demonstrou interação entre tratamento e período; no entanto, os valores médios entre os tratamentos foram similares (1741,1 kg/ha de PV para milheto e 1881,7 kg/ha de PV para sudão). Pastagens de milheto ou capim sudão se equivalem em relação às características produtivas, sob sistemas de pastejo contínuo com vacas de descarte.
The development of beef calves born of Charolais (CH), Nellore (N), and Charolais × Nellore crossbred cows with Charolais (CHP) and Nellore (NP) predominance, was evaluated from birth to 12 months of age. The cows were grouped into three age classes: primiparous, young and adult. The net energy requirements for maintenance and gain of the calves were also evaluated, as were the production and availability of energy in the milk of the evaluated cows. We used 93 pairs of contemporary cows and calves maintained in natural pasture. From birth to 21 days of age and from 21 to 42 days of age, the calves of adult cows presented the highest average daily weight gain (ADG), while the calves of young and primiparous cows had similar ADG. The highest net energy requirements for maintenance (NEm) and gain (NEg) were for crossbred and Charolais calves, the latter being similar to Nellore calves. The energy available in the milk of the adult cows was 33% higher than that of primiparous cows. The weight gain of calves was influenced by the age of the cow until weaning. The pre-weaning and post-weaning weights of calves were affected by the genetic group, and adult and young cows produced heavier calves in the pre-weaning period than primiparous cows.
The objective of this study was to evaluate the behavioral parameters and strategies of displacement and feeding of cull cows grazing millet or sudan grass. The treatments consisted of: pearl millet (Pennisetum americanum (L.) Leeke) or sudan grass (Sorghum bicolor cv. Sudanense). Both treatments were submitted to continuous grazing of cull cows over 63 experimental days subdivided into three periods. Using 20 Charolais x Nellore cull cows, at the average age of 8 years and average weight of 445 kg. The animals were divided into 10 paddocks, five paddocks used for each treatment comprising two cows. The behavioral assessments were carried out for 24 hours straight. The experimental design was completely randomized with two treatments and three periods. The grazing time of cows showed interaction (P = 0.0035) between treatment and period, and the shortest time for the activity in the first period on pearl millet (504 minutes) compared to the second period of that same treatment (587 minutes) and the third period on sudan grass pastures (535 minutes). The times of rumination and idling were similar between treatments; however, the idling time decreased and rumination increased with time periods. The forage species did not affect the variables related to the strategies of displacement and feeding. With the advancement of cycle pastures the number of steps per minute, stations per minute and per day decreased while the bite rate and the number of bites per day increased. The behavioral parameters of cull cows grazing sudan grass or millet are similar; however, the advancement of the vegetative cycle of these species provides changes in the behavioral pattern of the animals

The aim of this study was to evaluate, by meta-analysis, the quality of the meat of the cows according to genotype, termination system and age class slaughter. During an online research were identified 15 articles with information related to meat quality of slaughtered cows. The data were grouped according of the genotype of cows being: zebu or continental defined, crossed zebu x british or zebu x continental; according to termination system: feedlot or grassland; according to age of slaughter, where: up to 4 years old (young), 4-8 years old (adult) or more than 8 years old (old). The meat of the continental crossbred cows was softer than the other genotypes, both panel of evaluators and by Shear. The meat of cows finished in feedlot showed higher marbling degree in relation to meat of females finished on grassland. The reduction of the slaughter age of cows improved the meat color. The cow's genotype affects the organoleptic aspects of meat while the finished system and slaughter age affects the sensory aspects of meat.
The objective was to evaluate factors that influence calving probability in the first and second reproductive years of beef heifers that reached the minimum recommended body weight (BW) in the first breeding season. Two hundred twentyseven 24-month-old Charolais × Nellore heifers that mated between 2003 and 2012 were analyzed. The parameters evaluated were: year effect; individual and maternal heterozygosis; percentage of Charolais genotype; average daily gain (ADG) from weaning to the end of the first breeding season; BW at 18 and 24 months of age, end of breeding season, parturition, and weaning; Julian date of calving; and adjusted calf weight at weaning. These variables were subjected to logistic regression. Calving rates in the first and second reproductive years were 58.1 and 49.5%, respectively. Performance until the end of the first breeding season, BW before the first breeding season, and individual heterozygosis affected the calving probability in the first breeding season. In the second breeding season, BW variation from the first breeding season and calving, Julian date of calving, and BW at the end of the second breeding season influenced calving probability. Until the end of the first breeding season, ADG of beef heifers responded positively to the calving probability, even after reaching the usually recommended BW for the first breeding season. Primiparous cows calving at the beginning of the breeding season and gaining more BW between the first and second breeding season are more likely to give birth in the second breeding season.
Resumo: Objetivou-se, por meio de meta-análise, avaliar as características da carcaça e da carne de vacas de descarte abatidas com diferentes pesos e grau de acabamento. Os tratamentos foram conforme o peso de abate, sendo eles acima de 480,5 kg (Pesada) ou abaixo de 480 kg (Leve) de PV; e grau de acabamento de carcaça, sendo espessura de gordura subcutânea entre 6 a 10 mm (>6) ou entre 3 a 6 mm (<6). O delineamento experimental foi o inteiramente casualizado em arranjo fatorial 2 x 2, duas classes de peso de abate e duas classes de grau de acabamento de carcaça. Para isso, foram avaliados artigos de trabalhos realizados no Brasil que envolveram estudos de carcaças e carne de vacas de biótipo corte, publicados entre janeiro de 2000 a março de 2013, e que pudessem ser acessados pelas plataformas de busca SciELO e Capes. Os artigos foram localizados a partir da combinação das seguintes palavras-chave: carcaça, carne, fêmeas bovinas, novilhas e vacas. O aumento no peso de abate não refletiu no peso de carcaça quente (252,3 contra 233,3 kg). Houve menor rendimento de carcaça quente (52,9 contra 56,9 %) e maior conformação (10,0 contra 8,6 pontos). O maior grau de acabamento influenciou positivamente o marmoreio (8,7 contra 5,4 pontos). A elevação do peso de abate confere carcaças melhor conformadas, sem refletir na qualidade da carne; já a elevação do grau de acabamento, além de 6 mm, altera as características sensoriais da carne.
