This study aimed to develop an acerola smoothie using gellan gum (GG) as a texture modifier. Samples were developed with three concentrations of GG (0.1%, 0.2%, 0.3% w/v) and a control sample (without GG). Physicochemical, rheological, and sensory properties were evaluated. The smoothie samples showed increased color intensity than the control, with a tendency to yellow and red colors. However, the hydrocolloid concentration did not affect the samples' pH values (4.13 to 4.17). GG presence favored an increase in the samples' viscosity, classified as pseudoplastic fluid. There was a reduction in vitamin C in samples with GG (422.18 to 430.49 mg/100 g), however, the values remained close to the control (448.89 mg/100 g). There was greater sensory acceptance by the sample with intermediate texture (0.2% GG), which obtained a higher frequency for the attributes "homogeneous" and "acerola flavor".
O Nordeste brasileiro apresenta condições favoráveis para o cultivo de frutíferas, sendo uma das regiões que contribui para colocar o país em uma posição importante da produção e comercialização de frutas in natura. Por ser um alimento que apresenta uma elevada porcentagem de água em sua composição torna-se muito perecível e apresenta uma quantidade considerável de desperdício. Nesse embasamento esse trabalho teve como objetivos avaliar a qualidade de polpas congeladas de diversos tipos de frutas e marcas encontradas no comércio salgueirense. Foram utilizados neste estudo polpas de frutas de cinco sabores diferentes e de três marcas, adquiridas no comércio do município de Salgueiro - PE e levados ao Laboratório de Processamento de Vegetais do IF SERTÃO-PE, Campus Salgueiro, onde foram mantidas congeladas até serem analisadas. As polpas de frutas foram submetidas às seguintes análises físico-químicas: sólidos solúveis totais, acidez total titulável, pH, açúcares totais e sólidos totais, seguindo a metodologia descrita pelo IAL (2008). As análises microbiológicas foram realizadas a contagem de bolores e leveduras, segundo metodologias descritas por American Public Health Association (SPECK, 1976) para as polpas de frutas. As embalagens das polpas de frutas foram submetidas às análises visuais para identificar as condições das embalagens, bem como verificar se a rotulagem, o peso e a tabela nutricional estão de acordo com a legislação. As análises realizadas indicam que 66,66% dos sabores estudados estão em desacordo com a legislação, sendo reprovadas, principalmente, no parâmetro sólidos totais o que pode indicar que essas polpas podem ter sido diluídas.
O melão apresenta uma vida útil pós-colheita relativamente curta, o que tem dificultado consideravelmente a sua comercialização nos mercados mais distantes dos centros de produção. O processamento do melão promove o prolongamento do consumo do fruto, contudo acarreta ainda lançamento de rejeitos, como por exemplo, sementes. Assim, o presente estudo teve como objetivo o desenvolvimento de suco concentrado de melão amarelo com adição de farinha de semente da própria fruta. Os melões e sementes seguiram processamento. A polpa e o suco concentrado, com ou sem adição da farinha da semente, foram submetidos a análises químicas, físico-químicas e sensorial. Dentre as formulações estudadas, o suco concentrado com adição de 0,5 % de farinha de semente de melão amarelo, revelou resultados positivos dentre as demais formulações, haja vista o incremento nutricional percebido pela análise cinzas, bem como a aceitabilidade exposta através da análise sensorial. Contudo, como todo estudo, a presente pesquisa demanda por mais estudos afim de otimizar e fomentar ainda mais a produção de suco concentrado de melão amarelo.
A diversificação na linha de processamento do pescado pode contribuir com o aumento do consumo. Baseado neste fator objetivou-se produzir, linguiça de tilápia com duas formulações diferentes, fazendo-se também analises sensoriais, físico-químicas e da qualidade higiênico-sanitárias das mesmas. Realizando-se então a análise sensorial com 30 provadores não treinados, não detectando diferenças significativas (p<0,05) quanto aos atributos avaliados, sendo que os resultados revelaram a preferência pela formulação com maior teor de lipídios. As análises físico-químicas das amostras foram realizadas segundo métodos analíticos do Instituto Adolfo Lutz. Na determinação a amostra CB apresentou os seguintes resultados: pH: 6,11, Acidez: 0,1168%, Proteína: 13,8267%, Umidade: 78,0363%, Cinzas: 1,8284%, Lipídios: 13,7442% e a amostra SB mostrou pH: 5,81, Acidez: 0,0922%, Proteína: 10,4862%, Umidade: 82,4350%, Cinzas: 2,1263%, Lipídios: 14,7435%. As análises microbiológicas foram realizadas de acordo com a metodologia recomendada pela APHA (2000), dentre as quais: número mais provável de coliformes fecais, número mais provável de coliformes totais, contagem de Staphylococcus Aureus, presença ou ausência de Salmonella. Mostrando-se dentro dos padrões indicados pela legislação.
RESUMOEsta pesquisa teve por objetivo desidratar diferentes formulações de polpa de caqui em camada de espuma na temperatura de 70 ºC através do ajuste de modelos matemáticos de secagem aos dados experimentais. Foi utilizado polpa de caqui, comercializada no município de Campina Grande -PB preparada em três diferentes formulações: 1-emulsificante, 2 -liga neutra, 3 -emulsificante e liga neutra. A mistura foi disposta em bandejas e levada para secagem em estufa de ar forçado a 70 °C. Os dados da secagem foram ajustados aos modelos: Cavalcanti Mata, Logarítimico, Page e Midilli e Kucuk, verificando que todos os modelos utilizados ajustaram-se satisfatoriamente aos dados experimentais com coeficientes de determinações superiores a 0,96 e desvios quadráticos médios inferiores a 0,02, porém o modelo de Cavalcanti Mata demonstra uma superioridade por apresentar os maiores valores de R 2 e menores valores de DQM. DRYING OF PERSIMMON PULP BY THE METHOD OF THE FOAM LAYER ABSTRACTThis research aimed to dehydrate different formulations of persimmon pulp in the foam layer at a temperature of 70 ° C by adjusting drying mathematical models to experimental data. The drying data were fitted to models: Mata Cavalcanti, logarithmic, and Page Midilli and Kucuk, verifying that all models used adjusted satisfactorily to the experimental data with coefficients of determination greater than 0,96 and less than mean squared deviations 0,02, but the model of Cavalcanti Mata demonstrates superiority to present the highest values of R 2 and lower values of DQM.
