Propósito justificado do tema: O território de Boticas (Norte Portugal), embora de baixa densidade populacional é visto como um espaço de valorização do património cultural, ao integrar de forma harmoniosa o seu ecossistema de enoturismo através de várias dinâmicas potenciadoras dos recursos endógenos, resultando num reforço da identidade e singularidade culturais. Objetivo: O objectivo deste trabalho é mostrar o “vinho dos mortos” como uma tradição vitivinícola peculiar e um símbolo da astúcia e sobrevivência do povo de Boticas, tendo surgido no período da 2ª Invasão Francesa (1808). O seu nome resultou do facto do vinho ter sido enterrado no chão das adegas, no saibro, debaixo das pipas e dos lagares para salvaguardar o património do saque dos soldados franceses. Design/Metodologia e abordagem: No estudo foram utilizadas duas metodologias qualitativas: MatrizPCI (Matriz Património Cultural Imaterial) para inventariação dos recursos endógenos, seguindo as orientações da UNESCO quanto à “Salvaguarda de Património Cultural” e o modelo dos 6 A’s de Buhalis para o reconhecimento dos atributos do destino turístico e sustentar a propostas de criação de valor na experiência de Enoturismo. Resultados: Os resultados mostram Boticas como um espaço geográfico multifuncional onde as suas características/atributos endógenos asseguram um posicionamento privilegiado e competitivo no quadro do turismo de vinho. Originalidade do documento: Este trabalho é original quanto ao tema e enquadramento.
A gastronomia de taberna, quando observada pela lente dos rituais identitários dos destinos, reflete os diversos marcadores simbólicos da sua génese cultural, permitindo que os saber fazer e os gostos culinários sejam mantidos vivos, e se tornem agentes de progresso regional. Os patrimónios alimentares são espaços de inovação (criatividade) e permanência (tradições), onde se valoriza cada vez mais não só o momento de preparar a comida, mas ainda os modos de socialização, de transmissão cultural e de storytelling. Aplicou-se uma metodologia de “triangulação” de fontes, contendo uma análise comparativa entre três livros de receituários tradicionais, visando elencar os pratos e petiscos mais autênticos e emblemáticos da gastronomia Alentejana. Importa que os Municípios e as entidades de turismo acarinhem o conceito de taberna apoiando a salvaguarda e preservação desses espaços e dessas culturas, e com isso, promover o desenvolvimento do território.
Resumo: As indústrias do vinho e do turismo são "os dois lados da mesma moeda", identificadas como parceiros naturais simbióticos, podendo ser classificados como um ecossistema catalisador do desenvolvimento rural. O turismo do vinho é um excelente veículo de resgate da memória e da construção de uma identidade cultural, garantindo a continuidade das tradições ao longo das gerações, resultante do processo de socialização, onde o indivíduo aprende e interioriza o sistema de valores, de normas e comportamentos de uma determinada cultura. Este tema valoriza as "velhas" atividades rurais e desenvolve outras, investigando oportunidades e fatores de competitividade que existem em cada região. O estudo identifica dinâmicas competitivas que possam moldar o ecossistema do enoturismo usando dados de uma amostra de conveniência de 51 empresas ligadas à indústria do vinho em Portugal. Para alcançar o sucesso empresarial e o desenvolvimento territorial, serão necessárias estratégias de coopetição, criar uma oferta de produtos inovadores e distintivos e promover os produtos endógenos de cada região. Os resultados mostram uma relação complexa entre os stakeholders dentro do ecossistema, com limitadas práticas de cooperação. Foi concluído que, para o enoturismo criar mais-valias sustentáveis nas regiões, é crucial reforçar as parcerias e fortalecer estratégias ganhaganha de coopetição que envolvam todos os stakeholders e ainda garantir uma harmonização da visão e dos objectivos de cada parceiro, alinhados com a especialização inteligente das regiões e focados no crescimento e desenvolvimento sustentáveis dos territórios.Palavras-chave: Desenvolvimento rural. Abstract:The wine and tourism industries are "two sides of the same coin", identified as natural symbiotic partners, classified as a catalytic rural development ecosystem. Wine tourism is an excellent vehicle for the recovery of memory and the construction of a cultural identity, guaranteeing the continuity of traditions throughout the generations, resulting from the process of socialization inherent to it, where the individual learns and internalizes the values and behaviors of a given culture. This theme highlights the "old" rural activities, investigating regional opportunities and competitiveness factors. The study focuses on identifying the competitive dynamics that shape the wine tourism ecosystem, using a convenience sample of 51 Portuguese wine industry companies. In order to achieve business success and territorial development, it will be necessary coopetition strategies and offer innovative and distinctive products from each region. We find evidence of a declining engagement in some interfirm relationships elements. Food and its uses follow the logic of historical time. The civilizational process integrates food as a cultural product and the phenomenon of commensality as an expression of different cultural, social, anthropological and ethnological models. The banquet is a socially structured event and a privileged space for rituals, presentations and performances. A parallel of symbolisms of magnificence and power in the table apparatus will be interpreted, in different historical contexts and using different types of narrative. In the ancient Rome (biographical work “The life of the 12 Caesars” by Suetonius) and at the royal table of the Middle Ages (pictorial narrative of the prenuptial banquet of King João I, based on the illumination of Chronique d ’Angleterre by Jean Wavrin). It is concluded that the table as a microcosm of social rhetoric and of coding hierarchies, perpetuates through time.
Os Pendões Mirandeses, alicerçados nas tradições e memória coletiva inter-regional (Miranda do Douro e Castela/Leão), podem criar uma oportunidade ímpar de desenvolvimento de experiências turísticas singulares em dois territórios contíguos, encorajando à exploração do legado de uma área histórica. Estes fatores identitários podem incentivar e promover a recuperação de simbologias e rituais, através do desenvolvimento de práticas interculturais (Festa dos Pendões). Utilizaram-se duas metodologias qualitativas: MatrizPCI (Matriz Património Cultural Imaterial) para inventariação dos Pendões nas Freguesias do Concelho de Miranda, seguindo as orientações da UNESCO quanto à “Salvaguarda de Património Cultural Imaterial” e modelos do turismo (Mill e Morrison, Inskeep e Costa) para identificar os atributos transformadores daquele território num destino turístico. Defendemos a criação de políticas de incremento do turismo e de Identidade Cultural entre as regiões de Miranda e Castela/Leão.
