Até recentemente, o sabor e a aparência eram os mais importantes atributos de frutas e outros vegetais frescos, mas, atualmente, os consumidores estão mais preocupados com a segurança de alimentos e os valores nutricionais, exigindo o uso de menos produtos químicos em frutas e vegetais. Nesse contexto, muita atenção tem sido dada à busca de substâncias naturais capazes de agir como antimicrobianos e antioxidantes sendo uma alternativa aos produtos utilizados na nanutenção da qualidade dos alimentos. Este aumento do interesse foi intensificado devido às preocupações sobre os recursos naturais limitados da reserva de combustível fóssil e o impacto ambiental causado pelo uso de materiais de embalagem à base de plástico não biodegradáveis. A demanda por produtos renováveis e biodegradáveis tornou-se uma estratégia importante no esforço para reduzir o impacto poluidor das embalagens no meio ambiente. Para superar este problema, pode-se utilizar uma abordagem de revestimento comestível onde os biopolímeros emergem como possíveis substitutos para materiais de embalagem à base de petróleo. Conhecidos como “plásticos verdes” ou bioplásticos eles são oriundos de polímeros biodegradáveis como amidos, celulose, alginato de sódio dentre outros, com numerosos estudos sendo conduzidos para investigar a capacidade de coberturas comestíveis afim de preservar a qualidade e prolongar a vida útil de frutas e hortaliças frescas ao agirem regulando as atividades metabólicas dos frutos além da adição de ingredientes ativos que interagem com o produto.
RESUMOObjetivou-se, neste trabalho, avaliar o efeito de três temperaturas (5°C, 8°C e 11°C), na qualidade de híbridos de milho verde (Zea maiz L.) com endosperma normal, minimamente processado, durante oito dias de armazenamento, com avaliações a cada dois dias. Foram utilizadas espigas de dois híbridos, sendo um comercial da Sementes Agroceres (Ag 1051) e outro do programa de melhoramento da Embrapa Milho e Sorgo (Embrapa HT1). A temperatura de 5°C foi a que melhor preservou a qualidade das espigas dos híbridos de milho verde estudados, por proporcionar perda de massa reduzida e manutenção dos teores de sólidos solúveis, frutose e glicose. O híbrido Ag 1051 apresentou menor perda de massa, maiores valores de umidade e maior teor de frutose. O Embrapa HT1 apresentou maiores valores iniciais e finais para os teores de sólidos solúveis e maior valor para a coloração b*. O valor L*, que indica quãoclaro e escuro é produto, também diminuiu ao longo do armazenamento, indicando escurecimento das espigas ao longo do armazenamento. ABSTRACTThis work had the aim of evaluating the effect of three temperatures (5°C, 8°C and 11°C) on the quality of fresh-cut corn on the cob (Zea maiz L.) with normal endosperm, for 8 days, with analyses taken every two days. Corn on the cob of two hybrids was used, a commercial common type from Sementes Agroceres (Ag 1051) and the other from the breeding program Embrapa Milho e Sorgo (Embrapa HT1). The temperature of 5°C was more efficient to preserve the quality of normal corn by promoting reduced mass loss and higher contents of soluble solids, fructose and glucose. The hybrid Ag 1051 presented lower mass loss, higher contents of moisture and higher content of fructose. The hybrid Embrapa HT1 presented higher initial and final values for soluble solids and higher b* value. The L* value also decreased along storage, indicating browning of the corns along the storage.
RESUMOAs mais importantes frutas tropicais na categoria de sucos são maracujá e manga, especialmente desejadas por sua impressão aromática e intensa. O aroma e o sabor são resultados da presença de numerosos constituintes que se encontram em concentrações variáveis, extremamente sensíveis às mudanças durante o tratamento térmico na produção de suco. Há a necessidade do desenvolvimento dos perfis sensorial e de cor, que podem ser alterados durante o processamento do suco. O objetivo deste trabalho foi desenvolver esses perfis e avaliar os sucos de maracujá entamborado: despolpado, pasteurizado, entamborado e congelado); pronto para beber (formulado com açúcar e água); e pasteurizado. Treze atributos compuseram o perfil sensorial. O experimento de Análise Descritiva Quantitativa foi delineado com 2 fatores, sucos e provadores. Os resultados foram também submetidos a uma análise de componentes principais. Houve diferença significativa entre os três sucos nos atributos sensoriais, exceto para aromas de maracujá e doce. O aroma artificial, e os aromas e os sabores de cozido e fermentado aumentaram significativamente no suco processado. Os dois primeiros componentes principais concentraram 57% da variação nos atributos sensoriais. Os parâmetros de cor, à exceção do turbidez, apresentaram variações significativas entre os sucos. O suco entamborado foi o mais escuro. The most important tropical fruits used in juice production are passion fruit and mango. They are especially liked due to their intense aromas. Aroma and flavor are results of many constituents that are present in different concentrations, which are very sensitive to changes during thermal treatment used in the juice production. This work aimed at developing the sensory profile and evaluating the changes that may occur during the passion fruit juice processing. Three passion fruit juices were analyzed: the raw material (pulp), which was pasteurized, kept in tambour and frozen; the ready-to-drink (formulated with sugar and water); and the pasteurized at 98 C, 30s. The sensory profile was composed of 13 attributes The quantitative descriptive analysis design comprised two factors, i.e. type of juice and panelists. The results were also analyzed using principal components analysis. Significant differences were found among the three juices except for the attribute passion fruit aroma and sweet aroma. the artificial aroma, cooked aroma, fermented aroma and fermented flavor were significantly higher (p<0.05) on the processed passion fruit juice. This study aimed to evaluate the effect of processing steps on bioactive compounds and physicochemical and rheological characteristics of a juçara, banana and strawberry smoothie. The product was obtained by mixing the pulps of these fruits in previously defined proportions. The mixture was standardized in a pilot disintegrator, homogenized at 60 MPa in continuous mode and pasteurized at 90 °C for 35 s. The homogenization step increased the concentration of cyanidin-3-O-glucoside and cyanidin-3-O-rutinoside, major anthocyanins in the smoothie. However, these anthocyanins, as well as perlagonidin-3-O-glucoside, have been reduced (p<0.05) after the pasteurization step. The pasteurization also affected the instrumental color of the smoothie, expressed by Hue angle (p<0.05). Regarding to the rheological behavior, the smoothie, in all processing steps, presented a non-Newtonian fluid behavior with pseudoplastic characteristics (n<1). After homogenization, the smoothie became more fluid and homogeneous. Thus, despite the negative impact of pasteurization on the smoothie's color, the pasteurized product preserves the bioactive compounds such as flavonoids and phenolic acids that are of great importance to human health. Furthermore, the development of this product contributes to add value to the juçara agro-chain and Atlantic Forest preservation.
This study investigated the effect of hydrostatic pressure processing (HPP) on post-rigor mortis beef (Longissimus dorsi muscle, Nelore breed) relevant parameters, such as texture, cooking loss, and color. Pressures varying from 100 to 400 MPa at different times of pressurization (T1: time to reach set pressure, and T2: T1 plus 15 min) were applied, immediately followed by depressurization. Samples were evaluated for color, cooking loss, and tenderness. Both pressure level and pressurizing time had an effect on the color, cooking loss, and tenderness. Low-pressure levels (up to 200 MPa) had a smaller impact on color; nevertheless, it improved tenderness. The cooking loss increased with increased levels of pressure; however, by increasing pressure to 100 and 200 MPa immediately followed by pressure release (T1), no significant differences were observed when compared to the results from unpressurized samples. On the other hand, cooking loss was higher in the beef pressurized at all pressure levels for 15 min (T2). The results show that treatments using lower pressures (100 to 200 MPa) can potentially contribute to Zebu meat quality improvement.
