Durante muito tempo os esforços da pesquisa em tecnologia de alimentos foram centrados na conservação de matérias-primas in natura, com o objetivo de prolongar sua vida útil. As condicionantes atuais da produção de refeições colocam uma nova necessidade, a de produtos prontos para o consumo. Existe uma tendência mundial para usar alimentos cada vez mais naturais, valorizando o sabor original dos produtos, na qual o consumidor, disposto a pagar mais pela qualidade, apresenta um nível de exigência cada vez maior. É neste cenário que surgem os alimentos processados minimamente, que unem a praticidade e a conveniência, proporcionando uma economia de tempo no preparo dos alimentos.O processamento mínimo é definido como qualquer alteração física causada em frutas e hortaliças e que mantém o estado fresco destes produtos (INTERNATIONAL FRESH-CUT PRODUCE ASSOCIATION, 1999). Inclui as operações de seleção, limpeza, lavagem, descascamento, corte, sanificação, centrifugação e embalagem, ou seja, operações que não afetem suas características sensoriais e agreguem valor aos mesmos, resultando em produtos naturais e práticos, cujo preparo e consumo requer menos tempo, atendendo às exigências da vida moderna (DAMASCENO; STAMFORD; ALVES, 2001). AbstractStrawberries cv. Oso Grande were minimally processed and kept in three different atmospheres: 3% O 2 + 10% CO 2 (N 2 balance), 3% O 2 + 15% CO 2 (N 2 balance) and ambient atmosphere (control), at 5 and 10 °C, during 7 days, with the evaluation of their physical and chemical characteristics during storage. Fruits were evaluated at 0, 3 and 7 days for weight loss, firmness, pH, titratable acidity, soluble solids, sugar content (sucrose, fructose and glucose) and total anthocyanins. Data were subjected to analysis of variance (ANOVA) and means were compared by the Least Significance Difference (LSD) test (5%). It was verified that shifting the temperature from 5 to 10 °C had no significant effect on the physical and chemical variables analyzed. The utilization of atmospheres 3% O 2 + 10% CO 2 and 3% O 2 + 15% CO 2 was important for quality maintenance of fresh-cut strawberries. They better preserved firmness in relation to ambient atmosphere, and had a positive effect on the control of fruit weight loss. However, fresh-cut fruits kept under those atmospheres showed a lower content of anthocyanins when compared to fruits stored in ambient conditions. RESUMOObjetivou-se, neste trabalho, avaliar o efeito de três temperaturas (5°C, 8°C e 11°C), na qualidade de híbridos de milho verde (Zea maiz L.) com endosperma normal, minimamente processado, durante oito dias de armazenamento, com avaliações a cada dois dias. Foram utilizadas espigas de dois híbridos, sendo um comercial da Sementes Agroceres (Ag 1051) e outro do programa de melhoramento da Embrapa Milho e Sorgo (Embrapa HT1). A temperatura de 5°C foi a que melhor preservou a qualidade das espigas dos híbridos de milho verde estudados, por proporcionar perda de massa reduzida e manutenção dos teores de sólidos solúveis, frutose e glicose. O híbrido Ag 1051 apresentou menor perda de massa, maiores valores de umidade e maior teor de frutose. O Embrapa HT1 apresentou maiores valores iniciais e finais para os teores de sólidos solúveis e maior valor para a coloração b*. O valor L*, que indica quãoclaro e escuro é produto, também diminuiu ao longo do armazenamento, indicando escurecimento das espigas ao longo do armazenamento. ABSTRACTThis work had the aim of evaluating the effect of three temperatures (5°C, 8°C and 11°C) on the quality of fresh-cut corn on the cob (Zea maiz L.) with normal endosperm, for 8 days, with analyses taken every two days. Corn on the cob of two hybrids was used, a commercial common type from Sementes Agroceres (Ag 1051) and the other from the breeding program Embrapa Milho e Sorgo (Embrapa HT1). The temperature of 5°C was more efficient to preserve the quality of normal corn by promoting reduced mass loss and higher contents of soluble solids, fructose and glucose. The hybrid Ag 1051 presented lower mass loss, higher contents of moisture and higher content of fructose. The hybrid Embrapa HT1 presented higher initial and final values for soluble solids and higher b* value. The L* value also decreased along storage, indicating browning of the corns along the storage.
O consumo de espigas de milho verde com endosperma normal é tradicional, no Brasil, e a sua comercialização in natura é cada vez maior no mercado de produtos minimamente processados, mostrando a necessidade de mais estudos a respeito de sua vida útil. O objetivo deste trabalho foi avaliar a influência de duas atmosferas controladas (2% O 2 + 8% CO 2 , 4% O 2 + 8% CO 2 ) e atmosfera ambiente, na qualidade de milho verde, do tipo normal Embrapa HT1, minimamente processado, durante 12 dias de armazenamento, a 5 °C. As atmosferas controladas foram eficientes em reduzir a perda de massa das espigas de milho, apresentando também menores valores de acidez titulável, o que indica menor atividade respiratória. Os sólidos solúveis, os carotenoides totais, a zeaxantina, a firmeza e os teores de glicose, frutose e sacarose foram influenciados somente pelo tempo de armazenamento, com maiores teores de açúcares redutores em relação aos da sacarose durante todo o armazenamento. O valor L* apresentou decréscimo até o oitavo dia de armazenamento, em todas as atmosferas estudadas, com pequeno aumento no controle até o 12º dia. Todas as amostras analisadas, independentemente das atmosferas de conservação, encontravamse dentro dos limites microbiológicos aceitáveis e seguros para consumo. Its commercialization, as fresh product, properly cleaned and packaged, is being offered increasingly in the market as fresh cut corn. Therefore, it is necessary more studies about this kind of products. The aim of this study was evaluated the influence of two different atmospheres (2% O 2 + 8% CO 2 , 4% O 2 + 8% CO 2 atmosphere and room atmosphere) under 5 °C on the quality of fresh cut corn (Embrapa HT1) on the cob of normal type for 12 days´ storage. The control atmospheres were effective in reducing the weight loss of cobs, which also showed lower values of total titratable acidity, which indicates lower respiratory activity. The soluble solids, total carotenoids, zeaxanthin, firmness and the glucose, fructose and sucrose contents were influenced only by the storage time. It can be verified that concentrations of reducing sugars were higher than the sucrose during the storage. The L* value decreased until 8 days of storage in all the atmospheres studied, with a small increase in control until day 12. All the samples of fresh cut corn studied, independent of the treatment, were within the acceptable microbiologic limits.
