BACKGROUND Marolo (Annona crassiflora Mart) is a typical savannah fruit that is very nutritious and highly appreciated. However, its consumption has been limited to fresh fruit. The objective of this study was to evaluate the potential use of marolo flour in the production of healthy snack bars to valorise this fruit and provide an alternative ready‐to‐eat nutritious product. Snack bars containing increasing amounts of marolo flour (5 g 100 g−1, 10 g 100 g−1, 15 g 100 g−1, 20 g 100 g−1, expressed in w/w) were produced and the physico‐chemical and sensory characteristics were determined. RESULTS Levels up to 20% marolo flour can be incorporated in snack bars with some minor changes in pH and moisture content but with an increase of 2.4‐fold in dietary fibre content and also 1.3‐fold of vitamin C, minerals and antioxidant activity. In addition, up to 10% marolo flour improves significantly the sensory properties of the snack bars, namely appearance, taste, texture and overall acceptance. CONCLUSION Marolo flour can be considered an alternative flour for obtaining healthy snack bars, with increased nutritional and sensory quality. © 2013 Society of Chemical Industry
O cerrado constitui grande fonte natural de recursos biológicos. Ocupa aproximadamente 22% do território nacional, dos quais, cerca de 90% estão situados nos Estados de São Paulo, Minas Gerais, Mato Grosso, Goiás e Bahia (FONSECA; MUNIZ, 1992). Esse bioma é considerado o segundo maior do País, superado apenas pela Floresta Amazônica (RIBEIRO; WALTTER, 1998).Existem poucos estudos sobre desenvolvimento de espécies nativas do cerrado, não havendo, portanto, o conhecimento das etapas de crescimento, pré-maturação, maturação, amadurecimento e senescência.O estudo do desenvolvimento é importante para o estabelecimento do ponto ideal de colheita e para a aplicação de tecnologias que retardem ou reduzam as atividades fisiológicas, aumentando seu período de conservação (CHITARRA, 1998;VILAS BOAS, 1999).Os desafios para a exploração dos frutos nativos existem; em contraposição, há um grande potencial a ser buscado, principalmente para a sua exportação, já que possuem sabores sui generis e não são encontrados em outros países (ALMEIDA et al., 1998).O conhecimento a respeito da planta é importante para sua inserção no mercado consumidor, preservação em seu estado natural e implantação de futuras lavouras comerciais. AbstractThe objective of this work was to characterize the gabiroba fruit (Campomanesia pubescens) during its development through physical, chemical, and biochemical analyses. The fruits were harvested 8 km off the city of Lavras, south of Minas Gerais, Brazil every 5 days from anthesis until complete maturation. The flowering of the gabiroba started in August and its maximum was in September, when the early fructification occurred although October is the ideal period to harvest. The period between flowers opening (anthesis) until ripening lasted 63 days (9 weeks). The fruit reached its maximum size at 63 days (9 th week) after anthesis, with 4,26 g, 17,39 mm and 16,03 mm, representing its mass and longitudinal and transversal diameters, respectively. The gabiroba fruit presented a significant increase of mass, longitudinal and transversal diameters, L* and a* values, vitamin C, total sugar, soluble solids and soluble pectin, during its development showing a simple sigmoidal behaviour. It was observed a decrease in the respiration rate and polygalacturonase activity between 48 and 53 days, as well as reduction in the firmness, total chlorophyll, and oscillation in the b* value and total pectin during the development of the fruit. RESUMOObjetivou-se com este trabalho foi avaliar três marcas de diferentes sucos de uva integral (Vitis labrusca L.) oriundos de duas regiões do Brasil (Sudeste e Centro-Oeste). Os sucos foram avaliados quanto às seguintes análises: sólidos solúveis (°Brix), acidez titulável (AT), pH, vitamina C, açúcares redutores, totais e não-redutores. Os resultados indicaram variabilidade entre as diferentes marcas de sucos de uva, evidenciando que estas encontram-se fora dos padrões estabelecidos pela legislação brasileira em vigor. De acordo com os elevados valores de açúcares totais e não redutores, pode-se inferir que houve adição de sacarose nas três marcas dos sucos analisados.Termos para indexação: Suco de uva, vitamina C, composição. ABSTRACTThe purpose of this work was to evaluated three different marks of juice of integral grape (Vitis labrusca L.) originating from two regions of Brazil (Southeast and Center-west). The juices had been evaluated as the following analyses: soluble solids (ºBrix), titratable acidity (AT), pH, vitamin C, reducing sugars, total and no-reducing sugars. The results indicated variability among the differents marks of grape juice, showing that they find themselves out of the established patterns by the vigorating Brazilian legislation. Acording to the high values of total and non reducing sugars, it may be inferred that there was addition of sucrose in the three analyzed juice marks.
The objective of this work was to characterize promising fruit crops and to explore opportunities for the sustainable and commercial use of flours obtained from fruits as an ingredient in snack bars. The fruit selected was Jeriva, which grow from north to eastern Brazil, and can be found in the Savanna biome. The fruit flour was obtained from dehydrated pulps and the proximate composition, dietary fiber, vitamin C, % scavenging free radicals, mineral composition, pH, ºBrix, titratable acidity and sensory analysis were determined. The flour was incorporated into the formulation by partial substitution of the standard ingredients of snack bars. The presence of increasing amounts (up to 20%) of Jeriva fruit flour resulted in sensory accepted snack bars, with 7.02 average in the scores evaluated, without significant differences among the formulations and significantly increased the protein at 7.12%, vitamin C 40.81 mg.g -1 and fiber contentes showed values at 6.66% for dietary fiber. Moreover, the results of free radical scavenging confirmed the greater antioxidant activity proportional to the increment of flour. Therefore, Jeriva fruit flour could be an alternative sensorily acceptable, for obtaining of snack bars.
Este estudo foi desenvolvido com o objetivo de determinar as alterações na composição físico-química, química e sensorial de café cultivar Rubi, o qual foi submetido a diferentes formas de processamento e dois tipos de torração. Foram colhidos cafés de uma lavoura da UFLA com experimento de pivô central. Após o beneficiamento, as amostras foram divididas em cafés crus e torrados, sendo realizadas as seguintes análises: pH, acidez titulável total, cafeína, ácido clorogênico, polifenóis e índice de coloração. Foi realizada também análise sensorial (prova de xícara) para determinação da qualidade da bebida. Para a variável polifenol, não houve diferença significativa entre as formas de processamento, sendo que a torração clara apresentou maior teor de polifenol. O café natural apresentou um maior valor de cafeína dentro do tipo de processamento, e dentro do tipo de grão, o grão cru apresentou um maior valor de cafeína. Para a variável índice de coloração, os processamentos despolpado e descascado apresentaram os maiores valores e a torração média também apresentou um maior valor. O processamento natural apresentou um maior teor de ácido clorogênico e para o tipo de grão, a torração média também apresentou um maior valor de ácido clorogênico. Para a variável pH, não houve diferença significativa entre as formas de processamento, e dentro do tipo de grão, o grão cru apresentou um maior valor de pH. Com relação à acidez, o café natural apresentou um maior valor desta variável, e a torração média também apresentou um maior valor. Não houve diferença entre as formas de processamento e tipo de torração em relação à análise sensorial, visto que, todos os cafés foram classificados como bebida dura.
RESUMOAmostras de uva (Vitis labrusca L.) cv Patrícia, produzidos na região de Primavera do Leste no Estado de Mato Grosso, foram analisadas pelos parâmetros químicos segundo a legislação: pH, sólidos solúveis (ºBrix), acidez titulável, vitamina C e atividade enzimática das enzimas polifenoloxidase (PPO); peroxidase (POD); pectinametilesterase (PME); e poligalacturonase (PG). O valor de sólidos solúveis (SS) das amostras analisadas foi de 17,69 ºBrix. O valor de pH encontrado foi de 3,69. A acidez titulável (AT) apresentou valor de 0,8 g de ácido tartárico/100 mL de suco. O valor de vitamina C foi de 17,54 mg/mL. A atividade enzimática da polifenoloxidase (PPO) foi de 22,15 U/g/min. As atividades enzimáticas para as enzimas peroxidase (POD) e poligalacturonase apresentaram valores de: 11,59 U/g/min e 3778,61 U/g/min, respectivamente. Não foram detectados valores para a atividade enzimática da pectinametilesterase (PME), nas amostras analisadas. Os parâmetros químicos analisados se encontram dentro dos padrões estabelecidos pela legislação. Pelos resultados apresentados a cultivar Patrícia apresenta um valor elevado de vitamina C e, quando em estado de maturação, apresenta valores elevados da atividade enzimática da poligalacturonase (PG). Patrícia , produced in the area of Primavera do Leste in the State of Mato Grosso, were analyzed by the chemical parameters according to the legislation: pH, soluble solids (ºBrix), titrable acidity, vitamin C and enzymatic activity of the polyfenoloxidase (PPO); peroxydase (POD); pectinmetylesterase (PME); and polygalacturonase (PG). The value of soluble solids (SS) of the analyzed samples it was of 17.69 ºBrix. The value of found pH was of 3.69. The titrable acidity (AT) showed value of 0.8 g of acid tartaric/100 mL juice. The vitamin C value was 17.54 mg/mL. The enzymatic activity of the polyfenoloxidase (PPO) was 22.15 U/g/min. The enzymatic activities for the enzymes peroxidase (POD) and polygalacturonase presented values of: 11.59 U/g/min and 3778.61 U/g/min, respectively. Values were not detected for the enzymatic activity of the pectinmetylesterase (PME) in the analyzed samples. The values of chemical analysis found in this research were in agreement with legislation. For the results presented to Patrícia cultivar a high value of vitamin C was found and when in maturation stage it presents elevated values of the enzymatic activity of the polygalacturonase (PG).
RESUMO O objetivo deste trabalho foi avaliar a eficiência da película de fécula de mandioca 3% e de sacos plásticos de polietileno de baixa densidade na conservação da qualidade pós-colheita de pêssegos Aurora 2 armazenados sob refrigeração (9 + 1 o C e 90 + 5% UR) por 10 dias. O experimento foi realizado no DCA/Ufla, em Lavras-MG. A fécula 3% induziu maior perda de massa, comprometendo a qualidade final do fruto e tendo vida útil de apenas 6 dias. The fruits packed with polyethylene bags presented reduction of mass loss and firmness maintenance due to pectin solubilization decrease.
RESUMOConduziu-se o presente trabalho para estudar o efeito de diferentes sanificantes, na conservação pós-colheita de morangos, armazenados sob refrigeração (9± 1ºC e 99% UR), por um período de 12 dias. O delineamento experimental utilizado foi inteiramente casualizado, com 3 repetições, constituindo dos seguintes tratamentos: T1) Controle, imersão em água destilada, 15 min, T2) imersão em solução de dicloro s. triazinatriona sódica dihidratada (Sumaveg®) a 200 ppm, por 15 min; T3) imersão em solução de peróxido de hidrogênio 10%, por 15 min; T4) imersão em solução de dicloro isocianurato de sódio (Hidrosan®) a 200 ppm, por 15 min. As análises de pH, SS, AT, Cor L*a*b e microbiológicas foram realizadas a cada 3 dias. Os processos de sanificação adotados foram eficientes para manter a qualidade de morangos minimamente processados por 12 dias de armazenamento. Verificou-se, no presente trabalho, que o uso de sanificantes foi de fundamental importância para manter baixas as contagens de fungos filamentosos e leveduras dos morangos minimamente processados. ABSTRACTThe aim of this work was to study the effect of different sanitizing in the conservation postharvest of strawberry, stored in 9°C and 99% R.H. for 12 days. The experiment was conducted in completely randomized design, with three replicates, the treatments constituted by: T1) Control, immersion in distilled water; T2) immersion in solution of dychlorine s. triazinatriona sodiumdehydrated (Sumaveg®) at 200 ppm, for 15 min; T3) immersion in solution of hydrogen peroxide 10%, for 15 min; T4) immersion in solution of dychlorine isocianurate of sodium (Hidrosan®) 200 ppm, for 15 min. The analyses of pH, SS (soluble solids), TA (titrable acidity), Color L*a*b and microbiological was evaluated in 0, 3, 6, 9 and 12 days. The process of sanitizing was efficient to maintain the quality of strawberry minimally processed for 12 days. The use of sanitizing was of fundamental importance to maintain low containing of microorganisms of the group mold and yeasts.
