Resumo: O campo da gastronomia, para além de disciplina e manifestação cultural crescente no Brasil, traz consigo fortemente associada questões sociais e identitárias. No presente artigo, além de analisarmos o estado da arte no contexto nacional, tencionamos as possibilidades de estudo nesse campo, desdobrando suas possibilidades e sublinhando suas particularidades. Aqui esboçamos questões que julgamos pertinentes no desenvolvimento de pesquisas sobre não apenas gastronomia, mas como alimentação.Palavras-chave: Gastronomia. Identidade cultural. Antropologia. Abstract:The gastronomy field, beyond the study discipline and growing cultural event in Brazil aspects, brings strongly associated identity and social issues. In this article, we look beyond the state of art in the national context, we intend to study the possibilities in this field, deployed its possibilities and stressing its peculiarities. Here we outline the issues that we consider relevant in the development of research on not only on gastronomy, but in the food studies.
This paper aims to reflect on the relevance of the ethnographic method to the seizure of social policies in the field of Food and Nutrition. It is based on data from a survey conducted in a community kitchen from a sorting and waste composting unit (UTC)-popularly known as "dump"-in a neighborhood on the outskirts of Porto Alegre-RS, Brazil. It is argued that the merit of this research is its traditional method, ethnography, which involves a set of concepts and procedures that will lead us to the point of view of the groups surveyed through an intensive work-site. Firstly we seek to bring some definitions and characterizations of social policies that address Food and Nutrition Security (FNS) as well as the ethnographic context; then, based on some ethnographic notes, we will try to elucidate, although initially, possible appropriations that actors do on the community kitchen and on other programs there. Without pretending to wind up the debate, at the end the discussion is in favor of the relevance of the method for a deep understanding of the directions given to social programs and to the questioning of the different logics that inhabit the context studied, allowing critically rethink the government's actions concerning FNS.
A comida boa para pensar: sobre práticas, gostos e sistemas alimentares a partir de um olhar socioantropológico Food for thought: on practices, tastes and food systems from a social anthropological approach Resumo A presente comunicação situa-se no campo de estudos da antropologia da alimentação e pretende discorrer sobre aspectos do ato alimentar sob o ponto de vista da cultura. Entendida como um campo aglutinador, a antropologia tem contribuído para a reflexão e a compreensão do fenômeno da alimentação incorporando nas análises representações, crenças, conhecimentos e práticas que são herdados e/ou aprendidos e que são compartilhados pelos indivíduos de uma dada cultura ou de um grupo social determinado. Buscaremos levantar algumas considerações sobre a formação do gosto alimentar enquanto mobilizador de significados e demarcador de identidades. Trataremos sobre a noção de sistema alimentar como uma proposta ampla capaz de aproximar diferentes disciplinas na apreensão do fenômeno enquanto dotado de complexidade. A partir de uma perspectiva sistêmica, é possível apreender as dinâmicas envolvidas na contemporaneidade em que há evidente convivência de uma heterogeneidade sociocultural.Palavras-chave: Comida. Resumo Nessa análise, partimos de um estudo, realizado entre 2014 e 2015, de “núcleos de Fome Zero” na cidade de Porto Alegre para entender os efeitos naquele contexto de um programa de entrega de alimentos a pessoas em risco de insegurança alimentar. Na primeira parte deste artigo, traçamos um perfil dos beneficiados em dois desses núcleos para ressaltar a extrema heterogeneidade da população beneficiada. Num segundo momento, estendemos nosso olhar para a dimensão organizacional do programa ao explorar a maneira com que pessoas – tanto gestores quanto lideranças comunitárias – reagem à situação problemática do momento: a irregularidade na entrega de alimentos. No início dessa investigação, usamos técnicas clássicas da pesquisa etnográfica nas próprias comunidades. Porém, a irregularidade do programa nos levou a incorporar a análise de documentos administrativos, entrevistas com gestores nos setores municipais e estaduais relevantes, e a observação do espaço político coletivo onde os representantes de núcleos debatiam suas dúvidas quinzenalmente: o Fórum Fome Zero. Sugerimos que enquanto métodos quantitativos fornecem detalhes importantes do programa (quantidade e periodicidade de entregas de alimentos), a abordagem qualitativa que privilegia as dinâmicas microterritoriais e que dá visibilidade às lideranças populares demostra outras formas de produtividade do programa ligadas a experiências de mobilização popular e controle social.
