ResumoA produção de empanados congelados de frango pela indústria de alimentos surgiu da demanda dos consumidores por produtos de fácil elaboração pela redução do tempo disponível para seu preparo. Esta classe de produtos pré-prontos e congelados permite uma armazenagem por longos períodos, nos quais poderão haver situações de abuso de temperatura permitindo sua deterioração por fungos filamentosos psicrófilos, sobretudo Penicillium glabrum e Penicillium polonicum. Segundo informações da indústria, isso representa perdas de produção anuais de 1 à 1,5%. Logo, o objetivo deste estudo foi analisar micologicamente as matérias-primas, bem como os empanados congelados de frango e o ar ambiente em diferentes etapas de seu processamento a fim de investigar a origem da contaminação fúngica. Foram analisados um total de 110 amostras, entre elas: farinhas, condimentos, produto após adição de cada farinha, após fritura, após cozimento e produto final já embalado. Foram pesados 10 gramas de cada amostra adicionando 90 ml de água peptonada a 0,1% e o material foi homogeneizado durante 1 minuto em 'Stomacher', com inoculação em Ágar Batata com cloranfenicol e incubação à 25 °C por 7 dias. Para análise da contaminação do ar ambiental, placas de Petri com Ágar Dicloran Glicerol 18% foram expostas por 10, 30 e 60 minutos em áreas consideradas de risco para a contaminação fúngica e incubadas nas mesmas condições acima descritas.
Contextualização: as demandas atuais sociais exigem dos educadores a busca de novos caminhos e novas metodologias de ensino que foquem no protagonismo dos estudantes, favoreçam a motivação e promovam a autonomia destes, buscando pela articulação do conhecimento teórico-prático. O objetivo da pesquisa foi desenvolver modelos didáticos durante uma disciplina do curso de Fisioterapia para auxiliar os acadêmicos no estudo de estruturas complexas, visando um maior aprendizado do conteúdo teórico desenvolvido em sala de aula. Descrição da Experiência: o trabalho foi desenvolvido no módulo de Fisioterapia e Saúde da Mulher, no período de fevereiro a maio de 2018. Os alunos foram divididos em pequenos grupos e as atividades foram desenvolvidas em três etapas: planejamento, construção e apresentação dos modelos didáticos. Cada grupo selecionou o material que foi usado para a confecção dos modelos. Foi escolhida a criação de modelos didáticos para promover uma aula mais atrativa e que despertasse maior interesse nos alunos. Impactos: foram confeccionados quatro modelos didáticos os quais representam a anatomia da mama, tipos de mastectomia, o sistema urinário e a gestação. Pode-se observar que o uso deste tipo de estratégia, permitiu que os alunos experimentassem um processo de construção do conhecimento, passando por momentos de dúvidas e incertezas, mas que estimulou a participação ativa do estudante, despertando o interesse dos mesmos e permitindo a aproximação do conhecimento científico de maneira interativa e motivadora. Considerações finais: verificou-se que o uso de modelos didáticos possibilitou ao discente a troca de concepções, a vivência do trabalho em equipe e da socialização. O docente conseguiu vivenciar um processo dinâmico, em que fosse o norteador da construção do conhecimento.
