Os queijos artesanais podem ser considerados patrimônios das comunidades que os produzem, pois expressam a evolução de um conhecimento compartilhado ao longo do tempo. O consumo desses queijos envolve a valorização de atributos tangíveis, como sabor, e características intangíveis, como tipicidade, sustentabilidade ambiental, social e econômica. O Queijo Colonial do Rio Grande do Sul é produzido por comunidades de descendentes de imigrantes, especialmente italianos e alemães, desde meados do século 19. O volume de produção anual no estado fica em torno de 12,5 mil toneladas, sendo a maior parte processada artesanalmente. O objetivo desse trabalho é analisar as percepções dos consumidores gaúchos com relação a esse produto, discutindo valores de consumo e atributos a ele associados. A coleta de dados foi feita por meio de um questionário estruturado, a metodologia seguiu o modelo survey, na qual 456 consumidores participaram. Nossos resultados demonstram que o Queijo Colonial tem reputação positiva junto aos consumidores, apresentando características como sabor, relação custo-benefício e seguindo normas de higiene que atendem às necessidades emocionais e funcionais de consumo. Mas ele é percebido igualmente como um produto que possui identidade cultural, visto como expressão de um saber-fazer histórico, produzido de forma respeitosa ao meio ambiente e tendo relevância para a economia dos locais onde é produzido, o que demonstra que os consumidores percebem o conteúdo patrimonial do Queijo Colonial do Rio Grande do Sul.
This manuscript discusses the concept of socio-biodiversity product chains, identifying defining elements and threats present in the consolidation of these socio-productive arrangements. Based on these understandings, it describes analytically the ongoing experiences in Southern Brazil involving the construction of chains of native fruits from the Atlantic Forest, especially carried out by actors identified with the agroecological field and socio-environmentalism. The methodology used is based on bibliographical review and initial systematization of field data from a qualitative research developed in the states of Santa Catarina and Rio Grande do Sul. As a result, a description of the current organizational environment of these chains is made, as well as a systematization of socio-productive aspects, involving products, markets, bottlenecks and implications of such arrangements in income alternatives for farming families, environmental conservation and improvements in food and nutrition for farmers and consumers in the regions involved. The chains of juçara açaí and other native fruits (such as butiá, guabiroba and araçá) have different behaviors and, even in a preliminar way (since it is an ongoing research), different threats and challenges can be perceived for each of these fruits, including potential reduction in the protagonism of family farmers and extractivist in the chain of juçara açaí. The importance of the continuity of promotion actions is reinforced, both in the form of direct investments in the associative and family endeavors, as in the actions of social organization and qualification of the different stages of the chain promoted by the rural extension compromised with the principles of agroecology, solidarity economy, and food and nutritional security.
A valorização de alimentos tradicionais tem sido apontada como estratégica para a revitalização de áreas rurais, porém, a comercialização desses produtos em mercados formais requer que sejam cumpridos critérios principalmente em termos de estrutura e utensílios. Entretanto, muitas das exigências nesse sentido representam importante desafio para a comercialização de alimentos tradicionais que, na medida em que têm seus processos legalizados, têm comprometidas justamente as características que lhes conferem singularidade e diversidade. Este é o caso de queijos feitos de leite cru que, em vários países, de acordo com critérios legais, precisam passar por pelo menos sessenta dias de maturação antes de sua comercialização. tomando esse contexto, neste artigo, elegemos o critério que define prazo mínimo de maturação para comercialização de queijos feitos de leite cru e tomamos dados de pesquisa de caráter etnográfico, referente ao Queijo Serrano, produzido nos Campos de Cima da Serra/RS, para amplificar o debate posto em torno da valorização de alimentos tradicionais. os resultados da pesquisa indicam que, para além da adaptação do modo de fazer e das características de produção, a valorização desses alimentos passa pela legitimação de formas de conhecimento tradicionais e de modos de vida rurais.
