ResumoSuco de maracujá desidratado por spray-drying, natural e adicionado de açúcar, foi embalado em embalagens laminadas e armazenado em ambientes de 30 e 40 °C e 84% de umidade relativa. Os sucos embalados tiveram sua vida útil avaliada por determinações físicas e microbiológicas. A adição de açúcar aumentou a solubilidade, a molhabilidade, o tamanho da partícula e os valores de L* luminosidade do produto, e diminuiu os parâmetros de cor a* (intensidade da cor vermelha) e b* (intensidade da cor amarela) do produto. Durante o armazenamento, os produtos se mantiveram microbiologicamente estáveis, mas fisicamente foram alterados em relação aos parâmetros de cor e tamanho da partícula, tornando-se escuros e aglomerados, notadamente aqueles adicionados de açúcar e expostos a 40 °C, não sendo recomendada esta adição. Do ponto de vista físico, o período seguro para armazenamento de suco de maracujá natural desidratado foi de 120 dias a 30 °C e 60 dias a 40 °C. Palavras-chave: secagem; armazenamento; suco de frutas. AbstractPassion fruit juice dehydrated by spray-drying, with and without commercial sugar addition, was wrapped in laminated packing. The packaged juice powder was stored and the shelf life was analyzed by physical and microbiology determinations, at room temperature of 30 and 40 °C and 84% of relative humidity. Adding sugar increased the solubility, wetability, particle size and luminosity L* value and decreased a* (red colour intensity) and b* (yellow colour intensity) colour parameters. During storage the dehydrated juice was microbiologically stable but, physically it was altered in relation to the colour and particle size of the parameters, becoming dark and agglomerated, especially for the added sugar exposed to 40 °C. Therefore this added sugar was not recommended. From the physical standpoint, the safe dehydrated natural passion fruit juice shelf life was estimated at 120 days at 30 °C, and 60 days at 40 °C.
The objective of this work was to perform the chemical characterization of marine bonefish (Albula vulpes) and the development of fish burgers. Three formulations of fish burgers were prepared, containing 5, 8, and 10% cassava starch and functional ingredients (onion, garlic, and ground white pepper). Proximate composition, microbiological and pH analyses of the raw material, and fish burgers were performed, as well as the sensory analyses of the fish burgers. The yield and nutritional value of bonefish was found to be comparable with those of species of commercial value, with high-protein and low-lipid contents. The protein content of the fish burgers varied from 17.52 to 19.40 g 100 g-1 (raw), and from 20.74 to 24.25 g 100 g-1 (grilled); and the lipid contents ranged from 0.20 to 0.73 g 100 g-1 (raw), and from 0.36 to 0.77 g 100 g-1 (grilled). In the sensory tests, the formulations received scores between six and seven on the nine-point hedonic scale. Acceptance indexes were higher than 70% for all the assessed attributes. Therefore, the use of this underutilized species proves to be feasible.
Pesquisou-se o efeito de duas embalagens (polietileno de baixa densidade - PEBD e polipropileno - Longa Vida Pak ou LVP) em relação ao controle (sem embalagem) sobre a conservação de carambolas em atmosfera refrigerada (10 ºC). Utilizou-se o planejamento fatorial inteiramente casualizado 3 x 4 x 2 (3 embalagens x 4 períodos de armazenamento x 2 repetições). As análises para acompanhamento do armazenamento foram: pH, ºBrix (sólidos solúveis), acidez titulável, perda de peso, coliformes totais e fecais, bolores e leveduras. O nível de contaminação microbiológica (bolores e leveduras) foi aceitável até 21 e 28 dias para carambolas não embaladas e embaladas, respectivamente. A embalagem LVP apresentou os menores índices de contaminação. Em relação às alterações físico-químicas, não houve diferenças significativas entre as embalagens com relação a perda de peso, pH e acidez titulável e o teor de sólidos solúveis foi maior para os frutos armazenados em embalagens LVP. Os resultados globais indicam que ambas as embalagens aumentam a vida útil deste produto e que, do ponto de vista microbiológico, a embalagem LVP foi melhor que a embalagem PEBD para a preservação sob condições refrigeradas.
O doce de umbu (Spondias tuberosa Arr. Cam.) de polpas nos estádios de maturação verde e madura representa uma ótima alternativa para os moradores da região semiárida nordestina, pois reduz as perdas pós-colheita e constitui fonte de renda adicional. Entretanto, estes produtos exibem elevada sinérese e escurecimento durante o armazenamento, devido à alta acidez, baixo pH e utilização de embalagens inadequadas (PINTO et al., 2001;POLICARPO et al., 2002).A sinérese e o escurecimento de doces muito ácidos, como o obtido de umbu de polpa verde, podem ser evitados pelo ajuste do pH e o uso de pectina (POLICARPO et al., 2007). Estes fenômenos também podem ser controlados ou evitados com o uso de gomas e amido modificado, os quais são estáveis a baixos pH e altas temperaturas de cocção (MAO; TANG; SWANSON, 2001; RENARD; Van de VELDE; VISSCHERS, 2001). Amido modificado e goma xantana foram testados por Martins et al. (2007), apresentando um bom índice de aceitação para doces obtidos de polpas de umbu nos estádios de maturação verde e maduro (65-80%).A vida útil de um alimento representa o período em que se encontra em boas condições sensoriais e microbiológicas para ser consumido sem prejudicar o paladar e a saúde, condições estas dependentes de transformações físicas, químicas e microbiológicas durante o armazenamento, que, por sua vez, dependem da natureza do produto (tipo e quantidade de ingredientes), da embalagem e das condições de armazenamento (temperatura, umidade relativa, tempo de armazenamento) (WICKLUND et al., 2005; KHOUYIEH;ARAMOUNI;HERALD, 2005;VASQUES et al., 2006;MOURA et al., 2007;POLICARPO et al., 2007).Este trabalho teve como objetivo verificar as alterações físico-químicas e microbiológicas em quatro formulações de doce em massa de umbu de polpa verde e madura, estocados sob condições controladas (30 °C/75% UR) durante 120 dias. AbstractThe umbu (Spondias tuberosa Arr. Câmara) tree is of high economic value to the semi-arid Northeast area of Brazil due to umbu jam production. This work aimed to monitor the shelf life of four marmalade formulations made from green and ripe umbu, which were kept at 30 °C for 120 days. The physical, chemical, and microbiological alterations were evaluated during the time specified. The results showed a decrease in water activity; an increase in the soluble solids, and a reduction in sugar; pH and acidity remained stable; and there was a tendency to lower sucrose content in both jams. The products were microbiologically stable. The use of pectin is recommended to process the formulations made from ripe umbu, and either xanthan gum or glucose syrup to produce jam from the green umbu.
“Umbu” (Spondias tuberosa Arruda Câmara) is a typical fruit from northeastern Brazil of considerable economic importance to this region, because several products are derived from it and commercialized, especially the pulp, which can be used as a raw material for preserves and juices. The objective of this research was to study the preservation of umbu in the green stage of maturation by combined methods, including heat treatment and the addition of preservatives and sucrose. The pulps were blanched, pasteurized and mixed with the preservatives and sucrose according to a complete factorial design with three variables (ratio pulp/sucrose, potassium sorbate and sodium metabisulfite), two levels and two repetitions. The products were filled into high‐density polyethylene packages and exposed to a temperature of 40C for 120 days. Physicochemical, color and chemical (SO2) analyses showed that the concentrations of sodium metabisulfite and potassium sorbate used did not significantly alter product quality. The addition of sucrose significantly decreased the water activity and led to intense browning. The microbiological evaluations showed good product stability for 120 days. The overall results indicated that the heat treatment applied was effective if high levels of hygiene were maintained during the preparatory stages and the packaging materials were well sanitized. The combined preservation methods appear to be an economic way to preserve these high‐acid pulps.
Resumo:A produção e consumo de pescado cresceu expressivamente nos últimos anos.Porém, surgem problemas relacionados à destinação dos resíduos sólidos produzidos na transformação do pescado. Estima-se que 50% da matéria-prima processada seja responsável pela geração de resíduos. O descarte inadequado ocasiona sérios impactos ambientais. O emprego de tecnologias emergentes e inovadoras surge como uma alternativa para agregação de valor ao resíduo que é descartado, diminuindo problemas de poluição ambiental. Desse modo, objetivou-se realizar uma revisão de literatura acerca da geração de resíduos na indústria do pescado e sobre as opções para o correto aproveitamento desse material, contribuindo para a sustentabilidade da pesca e aquicultura. Para seleção das referências foram consultadas as bases de dados Science Direct, SCOPUS, Scielo.org, FAO Fisheries and Aquaculture e Wiley Online Library, utilizando-se os descritores "resíduo de pescado" e "coprodutos de pescado". Foram selecionados e incluídos artigos e documentos originais indexados no período entre 2005 e 2017, cujo objetivo e tema central era resíduo de pescado.
Fish and fish products are an outstanding source of essential protein and micronutrients. In cured meats, such as pâté, the technological characteristics are fundamental to the final quality of the product. The present study aimed to evaluate the effect of the addition of manioc starch, water and inulin on moisture, water holding capacity (WHC) and texture profile in pâtés using the underutilized marine fish bicuda (barracuda, Sphyraenatome) with total fat replacement by inulin. A Rotational Central Composite Design (RCCD) was used with the independent variables inulin, manioc starch, and water. Water, inulin, and manioc starch significantly influenced (p<0.05) the moisture content of pâtés, WHC, and texture, hardness, gumminess, and chewiness parameters. The technological action of inulin as a substitute for fat used in the formulations (3% to 6%) was underestimated. The percentages used were below perecentages of at least 20% of fat reported in the literature.Current legislation does not recommend WHR values and hardness parameters, only values for humidity. There is a need for revision of legislation to meet the characteristics of the identity pattern and quality of fish pâté.
