The effect of applying high hydrostatic pressure (HHP) on the instrumental parameters of color and texture and sensory characteristics of alligator meat were evaluated. Samples of alligator tail meat were sliced, vacuum-packed, pressurized and distributed into four groups: control, treated with 200 MPa/10 min, 300 MPa/10 min and 400 MPa/10 min, then stored at 4°C±1°C for 45 days. Instrumental color, texture profile and a sensory profiling using quantitative descriptive analysis were carried out on the 1st, 15th, 30th and 45th days of storage. HHP was shown to affect the color and texture of the product, and the sensory descriptors (p<0.05). The results suggest that high pressure is a promising technology for the processing of alligator meat, especially low pressures (200 MPa) which can have positive effects on the quality of the product.
The aim of this study was to determine the potential for waste extracts from the pequi (Caryocar brasiliense) and juçara (Euterpe edulis) to reduce oxidatiove processes in antibiotic-free broiler meat. The use of natural antioxidants extracted from fruit-processing wastes has been neglected. Although these residues contain high amounts of these bioactive compounds, they are often discarded by industry. Meat samples were exposed previously submitted to UV-C radiation at 1.161 mW / cm2 for 10 minutes to accelerate the rancidity process. Pequi and juçara waste extracts were obtained by microwave-assisted extraction (MAE). A total of four conditions were tested using antibiotic-free broiler thighs and drumstick meat: BN–with no antioxidant (negative control), BP–with BHT (Butylated hydroxytoluene) (positive control), BE–with juçara extract, BC–with pequi extract. The color, pH, lipid and protein oxidation (days 0, 2, 4, 6, 8 and 10), antioxidant contents and activity (days 0 and 10), and proximal composition and fatty acid profile (day 0) were tested, followed by principal component analysis (PCA). Pequi waste extract presented the highest antioxidant content and activity. BE and BC treatments presented the highest total phenolic (TPC) and flavonoid (TFC) content, and BE presented the highest total monomeric anthocyanin content (TAC). TFC increased during storage in all treatments. The waste extracts of C. brasiliense presented the highest antioxidant activity against lipid oxidation in the antibiotic-free broiler meat. Moreover, both extracts presented high antioxidant activity against protein oxidation. Although the pequi peel extract had a better effect in terms of suppressing both types of oxidation, either this extract or the jussara waste extract could be used as a technological strategy to reduce the oxidative processes in antibiotic-free broiler meat for the poultry industry. Thus, waste extracts can be a potential technology to reduce the oxidative processes in antibiotic-free broiler meat.
This study developed a technique for the preparation of pâté from cachapinta (Pseudoplatystoma sp) waste. For this, frozen minced cachapinta fish was crushed in a mini cutter and homogenized with all other ingredients. The prepared pâté was stored in seamed and thermally treated cans (volume 170 g). Weight proportions of mean moisture, ash, protein, and lipid contents of the minced fish were 75.49, 1.00, 15.00, and 7.92 (g/100 g), respectively. The formulation of the developed pâté is in accordance with legislation for fish products. Cachapinta pâté is a product with high content of polyunsaturated fatty acids, low level of trans fat, and good indices of nutritional quality. Tests of sensory acceptance, purchase intent, and sensory attributes (except spreadability) averaged a score above 6.0, indicating acceptability of the product. Our study suggests that the potential of minced cachapinta for pâté production is high, and that it can contribute a value-added product to seafood consumption.
Sete amostras de polpa de goiaba estáveis ao armazenamento a 25 ºC, preservadas com o uso da tecnologia de métodos combinados e tratadas com sacarose, ácido cítrico e sorbato de potássio foram avaliadas quanto às variações de cor em relação à amostra original (sem tratamento). As medidas de cor foram realizadas por reflexão em espectrofotômetro. Com os dados obtidos calculou-se o croma e a diferença total da cor em relação à amostra original. Todos os tratamentos foram avaliados visualmente e ordenados quanto à intensidade de luminosidade, vermelho e amarelo por uma equipe de julgadores com discriminação superior para cor. Todos as amostras apresentaram diminuição da luminosidade, do teor de vermelho e de amarelo em relação à polpa de goiaba inicial, com exceção do tratamento 1 (0% de sacarose, 0,75% de ácido cítrico e 0,10% de sorbato de potássio), que obteve dados de cor bastante próximos aos da polpa original.
INTRODUÇÃOO mundo é percebido pelo ser humano mediante seus sentidos, dos quais a visão é o mais marcante. O impacto visual não envolve apenas a forma e aspecto dos objetos, mas também a cor. Dos três principais atributos de qualidade dos alimentos -cor, sabor e textura -a cor torna-se cada vez mais importante, à medida que os alimentos são expostos e vendidos (4).
A soja constitui excelente fonte de proteína para a alimentação humana e animal, porém contém alguns componentes de ação antinutricional, como os inibidores de proteases, lectinas, fitatos e saponinas. Neste trabalho foram avaliados os efeitos do tratamento sob alta pressão isostática, considerado brando em relação ao tratamento térmico, sobre os fatores antinutricionais como teor de fitato e inibidor de tripsina de solução com 5% de isolado proteico de soja, processada na faixa de 200 a 700 MPa. Foram realizadas duas extrações de fitato e inibidor de tripsina de bateladas diferentes, sendo as amostras analisadas em triplicata. Há indícios que o tratamento sob alta pressão isostática seja eficiente para eliminar o fitato presente nas amostras de isolado proteico de soja, mas não se mostrou efetivo para alterar os teores de inibidor de tripsina.
Três produtos comerciais de alimento com soja sabor laranja (A, B e C), acondicionados em embalagem longa vida, adquiridos no mercado foram avaliados sensorialmente. A Análise Descritiva Quantitativa (ADQ) foi utilizada para traçar os perfis sensoriais, avaliando-se doze atributos levantados por 10 julgadores selecionados e treinados. A aceitação dos produtos foi avaliada por 30 potenciais consumidores mediante Teste Afetivo, realizado em laboratório, utilizando-se escala hedônica estruturada mista de 9 pontos. Os resultados da ADQ foram submetidos à Análise de Variância (ANOVA), Teste de Média de Tukey e Análise de Componentes Principais, já os resultados do Teste Afetivo (Aceitação) foram analisados pela ANOVA e pelo Teste de Média de Tukey. Os produtos A e B ficaram mais próximos entre si, o produto C diferiu do produto B (significativamente ao nível de 5%) em todos os atributos, com exceção da doçura e amargor. Os produtos A e C diferiram em todos os atributos, com exceção do residual de edulcorante e viscosidade. No teste afetivo, o produto A obteve as maiores médias e notas dos julgadores, não diferindo do produto B em nenhum dos atributos analisados.
