The increase in the use of bioactive compounds from purple corn in the food and pharmaceutical industries has led to the investigation of nonconventional extraction technologies that allow one to obtain more of these compounds. In this context, nonconventional techniques, known as emerging technologies, use more efficient processes that are safe for the environment, in addition to obtaining products with better functional characteristics as compared to those obtained by conventional technologies. This review aims to provide information on different nonconventional techniques used in the extraction of bioactive compounds from purple corn.

High pressure processing (HPP) is an emerging technology capable of promoting structural changes in food. This work studies the effect of HPP at room temperature (50 MPa/1 or 10 min and 600 MPa/1 min) on the cotyledon structure, starch characteristics, tannins, and phytates of common beans (Phaseolus vulgaris L.). The results show that all process conditions promote a partial disruption of the bean parenchymal cells, minor reduction in birefringence under polarized light microscopy and, for samples processed at 600 MPa for 1 min, a small reduction in the crystallinity intensity is observed. Moreover, the processes are able to reduce up to 40% of the tannin content but cause no loss of phytates. Thus, HPP can be used as a unit operation to improve the nutritional value of common beans and to enhance the exposure of starch granules, which possibly increases bean susceptibility to hydration/dehydration/cooking processes, allowing the production of easy‐to‐cook beans.

The aim of the present study was to evaluate the use of high pressure homogenization (HPH) as an alternative to thermal pasteurization for beer stabilization and to evaluate the effect of processing on colour, haze and redox potential immediately after the process and during the product shelf-life (100 days). The results obtained showed good colour retention, changes in the redox potential and greater values for turbidity, presenting a higher value for the product treated by HPH than for the thermally treated samples reported in literature. The evaluation of the results indicated that the HPH process is a promising process for beer treatment in terms of guaranteeing better colour retention. However to make this product stable, it would be necessary to perform stabilization treatments to minimize the negative effects of processing on the haze of the final product.

O objetivo deste trabalho foi estudar a efi ciência da água ozonizada para a inativação de Escherichia coli O157:H7 e Bacillus subtilis. O sanitizante foi utilizado nas concentrações de 0,6, 0,8 e 1,0 mg.L -1 e tempos de contato de 1, 3 e 5 minutos. Avaliou-se a efi ciência do sanitizante em função de contagens totais em placas para cada micro-organismo alvo. Obtiveram-se reduções decimais de 1,9, 3,9 e 6,6 para E. coli O157:H7 quando aplicado ozônio por 1 minuto nas concentrações de 0,6, 0,8 e 1,0 mg.L -1 , respectivamente. Para os demais tempos de exposição (3 e 5 minutos) e concentração de 1,0 mg.L -1 não foi possível a recuperação de E. coli O157:H7, obtendo-se mais de 8 ciclos de redução decimal. Para o B. subtilis, no tempo de exposição de 1 minuto e com a concentração inicial de 10 8 esporos.mL -1 , as reduções foram de 2,5 e 5,3 ciclos logarítmicos nas concentrações de 0,6 e 1,0 mg.L -1 , respectivamente. Para o tempo de 3 minutos, os esporos foram inativados em até 5,8 ciclos logarítmicos na concentração de 1,0 mg.L -1 . Os resultados demonstraram que a maior atividade do ozônio ocorre em até 1 minuto de contato, porém há atividade residual até 5 minutos, o que permite a utilização de concentrações menores (0,6 mg.L -1 ) para se obter níveis seguros de inativação, desde que associados a maior tempo. O sanitizante mostrou-se efi caz na inativação de E. coli O157:H7 e esporos de B. subtilis.

A soja constitui excelente fonte de proteína para a alimentação humana e animal, porém contém alguns componentes de ação antinutricional, como os inibidores de proteases, lectinas, fitatos e saponinas. Neste trabalho foram avaliados os efeitos do tratamento sob alta pressão isostática, considerado brando em relação ao tratamento térmico, sobre os fatores antinutricionais como teor de fitato e inibidor de tripsina de solução com 5% de isolado proteico de soja, processada na faixa de 200 a 700 MPa. Foram realizadas duas extrações de fitato e inibidor de tripsina de bateladas diferentes, sendo as amostras analisadas em triplicata. Há indícios que o tratamento sob alta pressão isostática seja eficiente para eliminar o fitato presente nas amostras de isolado proteico de soja, mas não se mostrou efetivo para alterar os teores de inibidor de tripsina.
