a b s t r a c tBee pollen, a honeybee product, offers an alternative approach to preventing the oxidative deterioration in meat products. The aim of this study was to evaluate antioxidant properties of lyophilized bee pollen extract (LBP), to determine the phenolic profile by liquid chromatography, and to evaluate the effect of LBP on the oxidative stability of pork meat sausage. The sausages were evaluated for lipid oxidation on the day of their production and every five days during 30 days of storage at 4 C by thiobarbituric acid reactive substances (TBARS). High concentrations of total phenolic compounds with antioxidant activity were detected in LBP (19.69 mg GAE/g: Gallic Acid Equivalent, EC 50 : 0.97 mg/mL respectively). The kaempferol was the majority compound (0.68 mg/g). The TBARS values increased over time with an average of 1.29 at 4.22 mg malonaldehyde/kg meat at the beginning and end of the experiment, respectively. Treatment with LBP showed lower (P < 0.05) TBARS values during any day of storage than the control and sodium erythorbate (SE) treatments. The LBP extract exhibited strong anti-oxidative effects in pork sausage, probably due to high antioxidant activity and the presence of the phenolic compounds in bee pollen; which has potential to be used in pork sausage.
Melipona marginata is an endangered species of stingless bee from Brazil that produces honey with particular physicochemical features and a remarkable exotic flavor. To the best of our knowledge, this is the first report devoted to exploring the medicinal potential of this honey. Thus, the aim of this paper was to investigate the potential anti-inflammatory activity of honey extract from M. marginata on skin inflammation. The honey sample was classified as a monofloral honey of Mimosa scabrella. The presence of 11 phenolic compounds as kaempferol and caffeic acid was detected using the high-performance liquid chromatography-electrospray ionization-tandem mass spectrometry (HPLC-UV-ESI-MS) method. The anti-inflammatory activity was measured using a 12-O-tetradecanoylphorbol-13-acetate-induced ear edema model of inflammation in mice. The topical application of the M. marginata honey extract (1.0 mg/ear) was able to reduce ear edema with an inhibitory effect of 54 ± 5%. This extract decreased the myeloperoxidase activity in 75 ± 3%, which suggests a lower leucocyte infiltration that was confirmed by histological analysis. This extract also provided a reduction of 55 ± 14% in the production of reactive oxygen species. This anti-inflammatory activity could be due to a synergic effect of the phenolic compounds identified in the honey sample. Taken together, these results open up new possibilities for the use of M. marginata honey extract in skin disorders.
The sediments of 10 samples of geopropolis collected from 3 species of Meliponinae in the states of Espírito Santo, Minas Gerais and Sã o Paulo, Brazil, and obtained after chemical treatment, were analysed. Pollen grains, hyphae and spores of fungi, organic material and burned plant fragments were observed in the majority of samples. Sandy or earth materials was present in all geopropolis sediments. Pollen analysis identified the dominant, accessory and isolated plant taxa occurring in the areas of geopropolis sample recovery. The most important pollen types found were Eucalyptus (Myrtaceae) in samples from the state of Sã o Paulo only, Schinus (Anacardiaceae) mainly in samples from the state of Minas Gerais and Myrcia (Myrtaceae) in every state. Two samples were devoid of pollen grains. Only one sample contained plant trichomes and was considered a propolis sample of Apis bees. Compared to propolis samples examined previously, the geopropolis pollen spectra reflect the characteristic regional vegetation and also a higher variability of plant species visited by the Meliponinae. It is established that geopropolis samples can be distinguished from propolis samples by light microscope analysis of sediments. Mineral and soil constituents, as well as the lack of trichomes, are characteristic only of geopropolis.
Nutritional composition and quality of bee pollen collected in Minas Gerais, BrazilAbstract -The objective of this work was to assess the influence of the local floral composition on the quality of apicultural pollen collected in two apiaries, in Minas Gerais State, Brazil. Five hives of Apis mellifera (L.) were installed in each apiary. The polliniferous flora in the proximity of the apiaries was identified. The pollen loads were collected from August to December, 2005. The melissopalinological analysis was carried out following the standard European method. Nutritional analyses of pollen were performed related to percentages of dry, organic and mineral matter; to raw protein; to ether extract; and to total carbohydrates. Spearman correlation was carried out between nutritional components and pollen types. In the UFV apiary, the predominant polliniferous flora presented ornamental species with arboreous habitus, and in the Mesmel apiary, it presented species of abandoned cattle pasture with herbaceous habitus. The nutritional composition of the collected pollen showed no correlation with the diversity of pollen types, however, it showed correlation with the predominance of specific pollen types. Different floral compositions influence the quality of pollen collected by bees; and its collection by bees, in various sources, is important to obtain a more balanced diet.
