RESUMO -O objetivo deste experimento foi avaliar as características de carcaça e da carne de novilhos Hereford (H), 5/8 H 3/8 Nelore (N), 1/2 H 1/2 N e 1/4 H 3/4 N, terminados em confinamento dos 20 aos 24 meses de idade. Vinte quatro novilhos tomados aleatoriamente do mesmo rebanho foram usados. A dieta alimentar continha, na matéria seca, 12,7% de proteína bruta e uma relação de volumoso:concentrado de 57,5:42,5. O volumoso foi composto de silagem de milho + cana-de-açúcar (relação 1:1). O peso de abate e o de carcaça fria foram maiores nos novilhos 1/2 H 1/2 N (443 and 236 kg), seguidos pelos 5/8 H 3/8 N (426 e 225 kg). O rendimento de carcaça aumentou com o acréscimo de sangue N, sendo 48,91; 52,74; 53,37; e 54,23%, respectivamente. Não houve diferença para espessura de gordura subcutânea da carcaça e porcentagem de osso, músculo e gordura na carcaça. Twenty-four steers randomly taken from the same herd were used. The diet contained, in a dry matter basis, 12.7% of crude protein and 57.5:42.5% forage:concentrate ratio. The forage was composed by corn silage + sugar cane (relation 1:1). The slaughter and cold carcass weights were higher for 1/2 H 1/2 N steers (443 and 236 kg) followed by 5/8 H 3/8 N (426 and 225 kg). The cold carcass dressing percentage increased as the proportion of N increased, being 48.91, 52.74, 53.37 and 54.23%, respectively. There was no difference for subcutaneous fat thickness, bone, muscle and fat percentage in the carcass. The meat tenderness decreased with the increase of Nellore proportion in the genotype.
RESUMO -Objetivou-se estudar os aspectos quantitativos e qualitativos da carcaça e da carne de doze animais de duas categorias de bovinos Hereford, novilhos de dois anos de idade e vacas de descarte com idade média de oito anos, tomados ao acaso do mesmo rebanho, os quais foram terminados por 112 dias em confinamento, sendo que na primeira fase de 56 dias a relação volumoso (cana-de-açúcar triturada) : concentrado foi de 69 : 31 e na segunda fase, de 57 : 43. As vacas apresentaram maiores pesos de abate (475,7 vs. 426,7 kg) e porcentagem de costilhar (15,28 vs. 14,20%), porém rendimentos de carcaça fria (46,62 vs. 49,14%) inferiores. Não ocorreu diferença significativa entre as categorias para peso de carcaça fria. Os novilhos apresentaram melhores conformação de carcaça ("boa menos" vs. "regular") e perímetro de braço (34,67 vs. 33,58 cm), com menor comprimento de carcaça (121,9 vs. 131,6 cm) do que as vacas. A área de Longissimus dorsi foi maior nos novilhos (54,52 cm 2 ) do que nas vacas (48,72 cm 2 ), assim como a porcentagem de músculo na carcaça (63,96 vs. 56,28%). As vacas de descarte apresentaram maior percentagem de gordura na carcaça (25,29 vs. 21,08%) e de marmoreio na carne ("pequeno menos" vs. "leve menos"). Os novilhos apresentaram carne mais suculenta (5,45 vs. 4,70 pontos), de melhor palatabilidade (5,60 vs. 4,83 pontos) e mais macia (5,15 vs. 4,12 pontos) do que as vacas, mas não houve diferença significativa na força para cizalhamento das fibras da carne. A carne das vacas mostrou maior quebra ao cozimento (33,94%) do que a carne de novilhos (31,55%). Os resultados deste trabalho mostraram que os novilhos abatidos com dois anos de idade produzem carcaças mais magras e carne de melhor qualidade que vacas de descarte. RESUMO O experimento foi conduzido com o objetivo de verificar o efeito da inclusão de diferentes níveis de casca (CS) de soja em dietas isoenergéticas para suínos em crescimento e terminação. Quarenta suínos híbridos, machos castrados
RESUMO -Este experimento foi realizado para avaliar o desempenho em confinamento, durante a terminação, de novilhos de genótipos 100% Hereford (H), 62% H 38% Nelore (N), 50% H 50% N e 25% H 75% N. Vinte e quatro novilhos, com idade inicial de 20 meses, confinados por 126 dias foram usados. A dieta alimentar continha, na base matéria seca (MS), 12,7% de proteína bruta e foi composta de 57,5% de volumoso e 42,5% de concentrado. O volumoso foi composto de silagem de milho + cana-de-açúcar (relação 1:1). A regressão foi significativa para ganho de peso médio diário ( Ŷ = 0,55958 + 0,01978X -0,00013X 2 ; r 2 =0,8031; P<0,0303), consumo médio diário de MS ( Ŷ = 4,71483 + 0,13172X -0,00100X 2 ; r 2 =0,9559; P<0,0002) e consumo médio de MS por unidade de peso metabólico ( Ŷ = 65,70178 + 0,65807X -0,00510X 2 ; r 2 =0,9088; P<0,0009) e expresso como percentagem do peso vivo ( Ŷ = 1,92170 + 0,01691X -0,00012X 2 ; r 2 =0,6624; P<0,0466), sendo X = a porcentagem de H. O ganho de peso médio diário foi menor nos novilhos 25% H 75% N, que também apresentaram o menor consumo diário de MS. O consumo de MS por peso metabólico foi maior nos 62% H 38% N, seguido dos 50% H 50% N, e inferior nos 100% H e 25% H 75% N. A conversão alimentar não foi influenciada pelo grupo genético. Houve queda acentuada no ganho de peso dos novilhos, quando a proporção de Nelore ultrapassou os 50%. The diet with 12.7% of crude protein, was constituted by 57.5:42.5 forage to concentrate ratio on dry matter (DM) basis. The forage was corn silage + chopped sugar cane (relation 1:1). The regression was significant for the average daily weight gain ( Ŷ = .59910+ .02068X-.00013X 2 ; r 2 = .8890; P<.0041), daily DM intake ( Ŷ =4.76025+ .13037X-.00099X 2 ; r 2 = .9369; P<.0010), DM intake per metabolic weight ( Ŷ =67.64281+ .60047X-.00475X 2 ; r 2 = .7883; P<.0206) and expressed as percentage of live weight ( Ŷ =1.9217 + .0169X -.00012X 2 ; r 2 = .6624; P<.0466), with X as the percentage of H. The average daily gain was lower for 25/75 HN steers which also showed the lowest DM intake. The dry matter intake per metabolic weight was higher for 62/38 HN, followed by the 50/50HN, and lower for 100H and 25/75 HN. The feed:gain ratio was not affected by the genetic groups. There was an expressive decrease in steers daily weight gain, when the proportion of Nellore surpassed 50%.
