A cenoura é uma planta bi-anual, rica em vitaminas e minerais, principalmente cálcio e fósforo. No Brasil, o cultivo da cenoura ocorre principalmente nos Estados de São Paulo e Minas Gerais, sendo as variedades mais cultivadas e populares, a Nantes e a Kuroda. Outro fator importante é que essa raiz pode ser industrializada de diferentes formas e transformada em produtos destinados à alimentação humana, inclusive linhas infantis, tais como conservas apertizadas, picles, congeladas, desidratadas, alimentos para bebês e sucos [13]. Provavelmente, a cenoura seja a matéria-prima mais utilizada para a extração do β-caroteno com gama enorme de aplicações, tanto na indústria farmacêutica como na de alimentos, como corantes na margarina, manteiga, queijos, carnes e macarrão [6].As cenouras são as principais fontes de origem vegetal de α e β-caroteno, que são carotenóides provitamínicos A. Os carotenóides compõem um dos grupos de pigmentos naturais mais extensamente encontrados na natureza, responsáveis pelas colorações do amarelo ao vermelho de flores, folhas, frutas, algumas raízes (cenoura), gema de ovo, lagosta e outros crustá-ceos, peixes, pássaros [9,26].Sabe-se que os carotenos de raízes apresentam grande estabilidade, porque estão localizados em gotas lipídicas ou em cromoplastídeos protegidos por lipoproteínas. Entretanto, um fato que tem preocupado os pesquisadores é a suscetibilidade à oxidação dos carotenóides, durante o emprego dos tradicionais métodos de conservação [3,7].Alimentos de origem vegetal, como as hortaliças e frutas, desempenham um importante papel na alimentação humana devido ao valor nutricional e atributos sensoriais. Contudo, podem ocorrer alterações fisioló-gicas, químicas e enzimáticas que resultam em redução da qualidade nutricional. As alterações pós-colheita em hortaliças e frutas além de comprometerem o valor nutricional podem ser irreversíveis e acelerar a senescência dos vegetais [3,11,17]. EFEITO DE BAIXAS DOSES DE IRRADIAÇÃO NOS CAROTENÓIDES MAJORITÁRIOS EM CENOURAS PRONTAS PARA O CONSUMO RESUMOO presente estudo teve como objetivo avaliar o efeito das baixas doses da radiação γ na concentração de carotenóides totais, α e β-caroteno em cenouras minimamente processadas, durante a vida-útil. As cenouras são as principais fontes de carotenóides provitamí-nicos A (α e β-caroteno) de origem vegetal. De acordo com a Pesquisa de Orçamento Familiar (POF) realizada na região Sudeste do Brasil, no grupo de raízes e tubérculos a cenoura é amplamente consumida. A estabilidade dos carotenóides varia grandemente durante o processamento e o armazenamento, dependendo de sua estrutura, temperatura, oxigênio, luz, umidade, atividade de água e presença de ácidos e metais antioxidantes e pró-oxidantes. As cenouras minimamente processadas neste experimento foram manualmente descascadas, lavadas, cortadas mecanicamente, acondicionadas em embalagens com atmosferas modificadas de 5% O 2 / 10% CO 2 e 21% O 2 (ar sintético), tratadas com radiação ionizante gama, fonte de césio, nas doses de 0,25, 0,50, 0,75 ...
A matéria-prima utilizada nesta pesquisa foi a cenoura (Daucus carota L.) cultivar Nantes. Segundo a PESQUISA DE ORÇAMENTO FAMILIAR [31] realizada na região Sudeste do Brasil, no grupo de raízes e tubér-culos, a cenoura é amplamente consumida. Pertence a família das umbelíferas, que produz raízes aromáticas e comestíveis, caracterizando-se como uma das mais importantes olericulturas, em função do consumo em todo mundo, pela extensão de área plantada e pelo grande envolvimento sócio-econômico dos produtores rurais.É uma das hortaliças mais cultivadas no Brasil, apresentando a maior produção no período de julho a novembro, preferindo climas amenos, conforme a variedade. A variedade Nantes é adaptada ao plantio de inverno, que compreende o período de março a junho, desenvolvendo-se bem nas temperaturas entre 8 a 22°C, com a colheita ocorrendo em 70 a 120 dias. Apresentam folhagem verde-escura, com 25-30 centímetros de altura, raízes axiais tuberosas, do tipo cilíndrica, lisa, média de 16 centímetros de comprimento e 3 centíme-tros de diâmetro, com coloração laranja-avermelhada [30].Métodos convencionais de conservação como tratamentos pelo emprego do calor, do frio e controle de umidade, proporcionam uma completa inativação enzimática e microbiológica, além de prolongarem consideravelmente a vida-útil dos produtos [4,13]. Entretanto, novas tecnologias estão sendo desenvolvidas no processamento dos alimentos devido a nova tendência de consumo da vida moderna, por alimentos mais nutritivos, atrativos, convenientes e prontos para o consumo [28,41]. CENOURAS MINIMAMENTE PROCESSADAS EM EMBALAGENS COM ATMOSFERAS MODIFICADAS E TRATADAS COM RESUMOAs cenouras são as principais fontes de origem vegetal em carotenóides provitamínicos A (α e o β-caroteno) e podem ser transformados em vitamina A dentro do organismo animal. Segundo a Pesquisa de Orçamento Familiar realizada na região Sudeste do Brasil, no grupo de raízes e tubérculos, a cenoura é amplamente consumida. As cenouras minimamente processadas foram acondicionadas em embalagens com atmosferas modificadas de 5% O 2/ 10% CO 2 e 21% O 2 (ar sintético), e tratadas com radiação ionizante gama, fonte de césio, nas doses de 0,25, 0,50, 0,75 e 1,00kGy. Os produtos após o emprego da radiação foram armazenados em refrigeração de 5°C durante 24 dias. Os diferentes tratamentos da cenoura e o grupo controle foram avaliados através das análises de pH, sólidos solúveis totais (SST), acidez total titulável (ATT) e microbiologia. Os resultados de microbiologia evidenciaram que os produtos tratados com as doses de 0,50, 0,75 e 1,0kGy apresentaram redução de 3 a 4 ciclos logarítmicos na contagem total de mesófilos (CTM) logo após a irradiação e uma vidaútil de 20 dias. Não foram detectados coliformes totais e E. coli até o 24 o dia. Os patógenos B. cereus, Salmonella e Estafilococos coagulase positivos em 0,1g do produto, também não foram detectados. Abstract:The Indian clove, Syzygium aromaticum [L] Merr. et Perry, has been popularly used in the treatment of several diseases. A more recent use of this spice in Brazil is a homemade formulation, based on the ethanolic extraction of the dried flower buds of S. aromaticum, which has shown to be efficient as mosquitoes repellent. Here we evaluated, through the development of a GC analytical technique, the concentrations of the main components of the ethanolic extract of Indian cloves (eugenol and eugenyl acetate), and possible responsible for the repellent activity, in this homemade formulation. Our results corroborated the efficiency of this protocol to extract eugenol and eugenyl acetate and established the ideal conditions for extraction.Keywords: Eugenol; quantification; eugenyl acetate; repellent; indian cloves. Uma utilização mais recente dessa especiaria no Brasil é uma formulação caseira, com base na extração de etanol dos botões florais secos de S. aromaticum, que se mostrou eficiente como repelente contra mosquitos. Aqui nós avaliamos por meio do desenvolvimento de uma técnica analítica utilizando CG, as concentrações dos principais componentes do extrato etanólico do cravo (eugenol e acetato de eugenila), possíveis responsáveis pela atividade repelente, nesta formulação caseira.
