Most educational initiatives were not actively oriented toward health promotion, understood as the strengthening of autonomy and self-management of health processes, social engagement, and employment of dialogic teaching approaches. However, some progress has been made moving away from hegemonic models of education in primary health care.
Objective: to construct reflections on the health education device, considering the educational health practices developed in the Primary Health Care and in the nursing training.Method: this is a reflexive essay based on the concept of a device proposed by Deleuze.Results: we unraveled the lines of visibility and enunciation, the lines of force and the lines of subjectivity of the health education device, highlighting the real wills implied in the modes of subjectivation produced in this device. The lines of visibility and enunciation of the health education device are located in visible, discursive, hybrid and contradictory fields, which at times are built from a specific notion of health and education and at different times by another notion. In this device, subject-educator and subject-learner are objects of the lines of force; they recompose and are recomposed by modulations configured in the spheres of power and knowledge. The projects of each subject can predispose lines of fracture and lead to productions of subjectivities that leave the powers and knowledge of a device to reinvent themselves in another device. In order to predispose lines of fracture in the health education device, it is necessary to design training processes that allow nurses to take creative positions in their health education practices.Conclusion: this essay allowed us to expand the conceptual territories involved in educational practices in health and nursing education, opening the way to understand the subjectivation processes in health education. Objective:To investigate the concept understood by Family Healthcare Strategy (ESF) professionals of knowledge, education and subjects participating in learning activities. Method: Qualitative study carried out with the ESF professionals with university degree, members of the healthcare staff who undertook educational health group activities at Basic Healthcare Units (UBS) in Belo Horizonte. The following triangulation techniques were used: participant observation, photos and field notes; interviews with professionals; and document analysis. Results: We identified three interaction patterns that are different from each other. Firstly, the professional questions, listens and provides information to users, trusting in the transmission of knowledge; secondly, the professional questions and listens, trusting that users can learn from each other; thirdly, the professional questions, listens, discusses and produces knowledge with users, both teaching and learning from each other. Conclusion: There are educational practices that include unique methods capable of creating a militant space for citizenship engagement.
Analisar a adequação do binômio tempo e temperatura de preparações quentes e frias prontas para consumo à espera para distribuição em um restaurante universitário. Foram aferidas as temperaturas de preparações frias em seis dias de abril e quentes em seis dias de julho em um Restaurante Universitário. A primeira aferição de cada preparação ocorreu imediatamente após o preparo, e a partir desse momento, realizaram-se aferições a cada hora. Foram avaliadas 35 preparações quentes e 18 preparações frias. A preparação quente com maior adequação ao binômio tempo e temperatura foi o feijão e a com menor adequação foi a opção vegetariana. Todas as saladas de legumes cozidos apresentaram temperaturas inadequadas para consumo. Todas as saladas de folhosos e legumes crus apresentaram temperaturas acima de 21ºC ou não respeitaram o binômio. A maioria das preparações analisadas apresentaram temperaturas inadequadas, indicando a necessidade de adoção de medidas para maior controle do binômio tempo e temperatura, garantindo a segurança dos alimentos oferecidos aos comensais.mentar dos comensais.
RESUMOObjetivo: avaliar o currículo do curso de graduação em nutrição a partir da perspectiva do egresso. Método: coleta de dados, por meio de questionário eletrônico, que abrangeu aspectos gerais do currículo, formação em nutrição, estrutura curricular e habilidades e competências desenvolvidas. Os resultados foram analisados por distribuição de frequência e com base em referenciais da área da educação. Resultados: Mais de 90,0% dos participantes apresentaram uma visão positiva com relação à formação crítica com vistas ao perfil do egresso e relevante para atuar como nutricionista, pesquisador e educador em saúde. As principais habilidades e competências descritas no projeto pedagógico foram desenvolvidas, com exceção do conhecimento do alimento desde a sua produção e da administração de unidades de alimentação e nutrição. Foi predominante a visão negativa em relação à carga horária das disciplinas e à coerência entre as disciplinas básicas e profissionalizantes. Conclusão: o currículo avaliado tem conduzido à formação de profissionais críticos, reflexivos e preparados para atender às demandas exigidas pelo Sistema Único de Saúde, entretanto, apresenta algumas fragilidades que indicam a necessidade de ações que aprimorem a efetivação dos princípios de interdisciplinaridade e flexibilização curricular e que promovam o desenvolvimento de certas habilidades e competências específicas do nutricionista e a revisão da matriz curricular. ABSTRACTObjective: to evaluate the curriculum of the undergraduate nutrition course from the perspective of graduates. Method: data collection took place through an electronic questionnaire covering general aspects of the curriculum, nutrition training, curricular structure and skills and competences developed. The results were analyzed by frequency distribution and supported on educational references. Results: more than 90.0% of the participants presented a positive perspective of the critical training, in the view of the graduates' profile, and relevant to act as nutritionists, researchers and health educators. The main skills and competences described in the pedagogical project were successfully developed with the exception of knowledge on food, including its production, and management of food and nutrition units. A negative view predominated regarding the workload of semester courses and coherence between basic and vocational courses. Conclusion: the evaluated curriculum has led to the training of critical, reflective professionals who are prepared to meet the demands stipulated by the Unified Health System; however, there were some weaknesses that indicate the need for actions to improve the effectiveness of the principles of interdisciplinarity and curricular flexibility, and to promote the development of certain specific skills and competences of the nutritionists and to review the curricular program. O impacto da dieta vegetariana na prevenção da diabetes mellitus tipo 2The impact of vegetarian diet in the prevention of type 2 diabetes mellitus Resumo Artigo de revisão cujo objetivo é investigar os possíveis mecanismos relacionados à dieta vegetariana e diabetes mellitus tipo 2 (DMT2). Para tanto, realizou-se extensa revisão de literatura dos anos 2000 a 2012. Dentre os possíveis mecanismos que relacionam a doença com a dieta vegetariana, destacam-se a forma como o gene humano interage com os nutrientes, mecanismo este explicado pela ciência da nutrigenética, a qual é capaz de prevenir o aumento de doenças crônicas não transmissíveis (DCNT) como a DMT2. Outro mecanismo relacionado é o de proteção dos antioxidantes no metabolismo oxidativo, no sentido de impedir alterações favoráveis ao estresse oxidativo, importante desencadeador de morbidades crônicas. Este estudo possibilita o conhecimento de tais mecanismos, bem como expõe uma comparação entre a dieta dos vegetarianos e dos não vegetarianos (onívoros), podendo ser útil para profissionais da área de nutrição no entendimento de como a dieta vegetariana pode beneficiar a prevenção da DMT2. Palavras-chaves: IntroduçãoA incidência de doenças crônicas não transmissíveis (DCNT) vem crescendo de forma alarmante nos últimos anos em países em desenvolvimento. Tal aumento é atribuído aos hábitos alimentares associados ao sedentarismo. Dentre essas doenças, destaca-se a diabetes mellitus (DM), que é classificada em tipo 1 (DMT1) e tipo 2 (DMT2). 1,2A DMT1 se caracteriza pela falta de secreção de insulina, sendo responsável por cerca de 5,0% de todos os casos de diabetes nos EUA, enquanto que a DMT2 responde por 90,0% dos casos. Nesta, a secreção de insulina acontece normalmente ou até em níveis elevados, mas as células-alvo da insulina são menos sensíveis que o normal a este hormônio. 2,3A doença pode se manifestar em qualquer idade: a DMT1 é mais prevalente em crianças, enquanto que a DMT2 surge mais normalmente na vida adulta, sendo sua incidência associada a fatores externos, nos quais se incluem estilo de vida, e fatores endógenos, como a determinação genética. To do so, we conducted a comprehensive literature review from year 2000 to 2012. Among the possible mechanisms linking the disease with vegetarian diet, we highlight how human genes interact with nutrients, mechanism explained by nutrigenetics science, which is able to prevent the rise of chronic diseases such as type 2 diabetes mellitus. Another related mechanism is the protection of antioxidants in oxidative metabolism, to prevent changes favorable to oxidative stress, an important trigger of chronic morbidities.
