En el presente proyecto de investigación se estudiaron las características fisicoquímicas y morfológicas de polisacáridos de avena, arroz, cebada, mijo y maíz. La composición química se determinó mediante un análisis proximal, donde se encontró que el almidón de arroz contenía 0.49% de cenizas, 2.71% de proteína y 96.79% de carbohidratos. El almidón de cebada presentó 0.76% de cenizas, 2.85% de proteína y 96.38% de carbohidratos. En el almidón de mijo se encontró 0.92% de cenizas, 2.98% de proteínas y 96.09% de carbohidratos. Finalmente el almidón de maíz presentó 0.299% de cenizas, 2.898% de proteínas y 96.803% de carbohidratos. Todos los almidones mostraron el mismo patrón de difracción, tipo A, medido por difracción de Rayos X. El análisis por espectroscopia infrarrojo no mostró modificaciones moleculares entre los almidones. Las propiedades térmicas medidas por DSC, evidenciaron que el almidón de mijo fue el que presentó mayores valores de temperatura inicial, de gelatinización y final. Morfológicamente, los almidones presentaron diferencias, el de arroz mostró una forma poliédrica, en los de avena y arroz se observaron formas lenticulares, el almidón de cebada también mostró formas esféricas, y en mijo y maíz se encontraron formas poliédricas y esféricas.
El color es una de las características morfológicas más importantes, la más obvia, fácil de determinar y relevante en la identificación taxonómica de los suelos. El color de los suelos guarda una estrecha relación con los componentes sólidos (materia orgánica, textura, composición mineralógica, morfología); siendo los metales de transición, principalmente, los que pueden dotar a los suelos esta característica particular. El Sistema de Notación Munsell y CIELab, son dos técnicas que permiten la determinación del color del suelo. El objetivo de este estudio es evaluar las propiedades físicas, químicas y mineralógicas en suelo del cerro de Denganthza, y su relación son la coloración característica que presentan las muestras, usando como métodos de evaluación de color el Sistema de Notación Munsell y el Sistema Espectrofotométrico CIELab. En el Sistema de Notación Munsell los suelos presentan coloraciones desde amarillo pálido a rojizas, para valores de <<hue>> se encuentra entre 2.5Y, 5Y, 2.5YR, 7.5YR y 10YR mostrando coloraciones claras indicando un empobrecimiento de Fe y Mn, llevando a plantear que debido a causas pedogenéticas se ha producido un proceso de podzolización. En CIELab el color de los suelos estudiados se ubican en los cuadrantes +a∗ y +b∗ corresponden al color rojo y amarillo, el color de los suelos en húmedo corresponde a un color amarillo-rojizo, con mayor saturación en amarillo presentándose en los suelos 1, 6 y 13, en el resto se observa una tendencia hacia las tonalidades claras; sin embargo, en los suelos secos se presenta la misma coloración amarillo-rojizo, sin saturaciones con tonalidades claras en todas las muestras.
Se analizó la viabilidad del mosto de malta de cebada para utilizarse como materia prima en la producción de oligosacáridos funcionales mediante el uso de la levadura Saccharomyces boulardii. Se llevaron a cabo las siguientes determinaciones en cebada de cuatro variedades (Esmeralda, Josefa, Pastor Ortiz y Gabyota): un análisis selectivo de acuerdo a la NMX-FF-043-SCFI-2003, análisis proximal, azúcares reductores y totales. También se evaluó el crecimiento de la levadura en el mosto de malta. Los resultados obtenidos del análisis de las maltas de cebada, mostraron que los mayores contenidos de humedad, cenizas, carbohidratos y proteína se encontraron en la variedad Pastor Ortiz, (8.9%), Gabyota (6.8%), Josefa (77.4%) y Gabyota (11.8%), respectivamente. En cuanto a azúcares totales y reductores, las mayores concentraciones se encontraron en la variedad Josefa (216.24 g/L y 17.1 g/L, respectivamente). La cinética de crecimiento demostró que S. boulardii tiene la capacidad de adaptación a un medio no funcional (mosto) y que cuenta con las enzimas capaces de hidrolizar la mezcla de azúcares presentes y convertirlos en carbohidratos más sencillo, posiblemente funcionales con un efecto prebiótico.
La cerveza de especialidad representa un mercado emergente en México, que proporciona a los consumidores nuevas formas de satisfacer su paladar. Actualmente es necesario innovar en el proceso y principalmente en la “receta” de una cerveza, para ofrecer atributos sensoriales que satisfagan al consumidor. Es por ello que este trabajo de investigación se centró en la evaluación de diversas variedades de cebada que permitieran producir una cerveza artesanal. Las variedades Esmeralda, Pastor Ortiz y Doña Josefa se obtuvieron mediante un muestreo aleatorio simple en la región de Apan, Hidalgo. Se analizó su calidad maltera y su capacidad de germinación mediante diferentes métodos de germinación forzada. La variedad Doña Josefa presentó altos porcentajes de germinación (86- 92%). La calidad maltera de las tres variedades de cebada fue aceptable de acuerdo a la norma oficial mexicana (NMX-FF-043-SFCI-2003), con valores mayores a 85% de germinación. Tomando en cuenta estos factores se concluyó que la variedad Doña Josefa presenta mayor viabilidad para elaborar cerveza gourmet. A partir de esta variedad se elaboraron diversas maltas que posteriormente serán evaluadas para la elaboración de cerveza.
Las metilxantinas son compuestos químicos del tipo de los alcaloides y activan el sistema nervioso central, reducen la fatiga y mejoran el rendimiento físico. La principal metilxantina es la cafeína y la podemos ingerir en el café, el té y productos con chocolate, entre otros (Moratalla, 2008). La bebida de café contiene elementos que producen beneficios a la salud, como mejorar la sensibilidad a la insulina y disminuir el riesgo relativo de muerte (Sánchez, 2015; Whayne, 2009). En la actualidad, el costo del café cotizado en la bolsa mexicana de valores va de 35 a 67 pesos mexicanos por kg, sin embargo, las bebidas de café requieren únicamente de 5 a 10 g por preparación y su costo va de los 20 a los 72 pesos cada una. Brasil es el primer país productor de café a nivel mundial y México ocupa el noveno lugar (Infocafé, 2015). El Estado de Hidalgo es el sexto lugar a nivel nacional (Atlas agroalimentario, 2017) y el municipio que produce más café es Huehuetla que pertenece a la zona otomí-tepehua. La orografía de este municipio resulta idónea para la plantación de café, además de que el clima torna las condiciones muy favorables para su desarrollo. Sin embargo, la distribución del café se da principalmente hacia proveedores y la venta es por tonelada (González-Romo, Duana-Ávila, & González-Gómez, 2016). Debido a sus condiciones sociales, la apertura al mercado para la venta de preparaciones de café, comercialización de productos, confitería, etc., es muy limitada. Por tal motivo, el impulso al sector cafetalero resulta una actividad económica muy favorable, por lo que se propone diversificar las cadenas de comercialización o los mismos productos (confitería, granos de café tostados, etc.) en esta región.El consumo de metilxantinas se da en todos los niveles sociales y a cualquier edad, además de que presenta un crecimiento exponencial en las últimas décadas. Los beneficios a la salud que provocan son objeto de estudio en varias disciplinas. Debido a que el crecimiento del sector cafetalero tiende a la alza, se plantea diversificar la comercialización de este preciado producto para detonar económicamente a este sector poblacional y que se vea beneficiado con los resultados.
