En el presente proyecto de investigación se estudiaron las características fisicoquímicas y morfológicas de polisacáridos de avena, arroz, cebada, mijo y maíz. La composición química se determinó mediante un análisis proximal, donde se encontró que el almidón de arroz contenía 0.49% de cenizas, 2.71% de proteína y 96.79% de carbohidratos. El almidón de cebada presentó 0.76% de cenizas, 2.85% de proteína y 96.38% de carbohidratos. En el almidón de mijo se encontró 0.92% de cenizas, 2.98% de proteínas y 96.09% de carbohidratos. Finalmente el almidón de maíz presentó 0.299% de cenizas, 2.898% de proteínas y 96.803% de carbohidratos. Todos los almidones mostraron el mismo patrón de difracción, tipo A, medido por difracción de Rayos X. El análisis por espectroscopia infrarrojo no mostró modificaciones moleculares entre los almidones. Las propiedades térmicas medidas por DSC, evidenciaron que el almidón de mijo fue el que presentó mayores valores de temperatura inicial, de gelatinización y final. Morfológicamente, los almidones presentaron diferencias, el de arroz mostró una forma poliédrica, en los de avena y arroz se observaron formas lenticulares, el almidón de cebada también mostró formas esféricas, y en mijo y maíz se encontraron formas poliédricas y esféricas.
La cerveza de especialidad representa un mercado emergente en México, que proporciona a los consumidores nuevas formas de satisfacer su paladar. Actualmente es necesario innovar en el proceso y principalmente en la “receta” de una cerveza, para ofrecer atributos sensoriales que satisfagan al consumidor. Es por ello que este trabajo de investigación se centró en la evaluación de diversas variedades de cebada que permitieran producir una cerveza artesanal. Las variedades Esmeralda, Pastor Ortiz y Doña Josefa se obtuvieron mediante un muestreo aleatorio simple en la región de Apan, Hidalgo. Se analizó su calidad maltera y su capacidad de germinación mediante diferentes métodos de germinación forzada. La variedad Doña Josefa presentó altos porcentajes de germinación (86- 92%). La calidad maltera de las tres variedades de cebada fue aceptable de acuerdo a la norma oficial mexicana (NMX-FF-043-SFCI-2003), con valores mayores a 85% de germinación. Tomando en cuenta estos factores se concluyó que la variedad Doña Josefa presenta mayor viabilidad para elaborar cerveza gourmet. A partir de esta variedad se elaboraron diversas maltas que posteriormente serán evaluadas para la elaboración de cerveza.
El objetivo de este trabajo fue conocer los principales cambios fisicoquímicos de la harina elaborada con Oxalis tuberosa mediante dos condiciones de secado: liofilización y secado con calor. Se realizaron los siguientes estudios: la microscopía electrónica de barrido mostró formas ovoide y elíptica en los gránulos de almidón. Con difracción de rayos láser el tamaño de partícula al 50% (Dv50) de la harina obtenida por liofilización (HL) fue: 48.5 µm y para la harina obtenida por secado con calor de convección (HS) de 75.92 µm, presentando una distribución bimodal las harinas. Los estudios con difracción de rayos X reportaron diferencias en el porcentaje de cristalinidad obteniéndose valores de 55.97% para HL y de 43.49 % para HS. Los valores de luminosidad (L) fueron de 65.35 y 68.23 para HS y HL respectivamente. Los valores rojo/verde (a*) y amarillo/azul (b*) mostraron la mayor rojez en HL y la mayor amarillez en HS. Las viscosidades pico fueron en HL de 2976 cP y HS de 2776.25 cP.
